I never seem to have buttermilk around so I love this recipe that doesn't call for it. I stayed at a B&B in West Virginia years ago and the wife prepared homemade blueberry pancakes and she had walnuts in them. They were out of this world! This tastes like the ones I had.

2 eggs, separated
1 1/2 cups sifted flour
2 1/4 teaspoons baking powder
3 tablespoons sugar
3/4 teaspoon salt
1 cup whole milk
3 tablespoons butter, melted
1/2 cup walnuts, chopped
1 cup fresh blueberries

Steps:

  • In a small bowl, beat egg whites until stiff.
  • In a separate bowl, sift together flour, baking powder, sugar and salt.
  • Beat egg yolks in another bowl. Add milk and melted butter.
  • Stir egg mixture into dry ingredients. Mix until smooth and stir in blueberries and walnuts. Fold in beaten egg whites. Bake on hot, greased griddle.

1 1/2 cups milk
1 cup instant oats
3/4 cup flour
3/4 cup blueberries
1/2 cup walnuts
1/4 cup oat bran
1 tablespoon baking powder
2 tablespoons honey
1 teaspoon salt
2 beaten eggs

Steps:

  • Pour milk over oats. Combine oats, flour, sugar, baking powder, and salt. Lightly stir eggs into oat and milk mixture. Add dry ingredients and honey, stirring until combined. When the batter is thoroughly mixed, stir in the blueberries and walnuts. Ladle batches of the batter onto a preheated greased frying pan.

2 cups Buttermilk
1 Egg, beaten
1 1/2 cups AP FLOUR
1 1/2 teaspoons Baking Powder
1 tablespoon Baking Soda
1 teaspoon Sugar
1/2 teaspoon Salt
3 tablespoons Unsalted Butter, melted
1/2 cup Blueberries, frozen
1/2 cup Walnuts, chopped

Steps:

  • In a medium bowl, mix buttermilk & egg. In a separate large bowl, combine flour, baking powder, baking soda sugar & salt. Add buttermilk to flour mixture, stir to combine. Stir in melted butter. Allow mixture to sit at least 15 minutes or overnight, covered in the refrigerator.
  • Heat 1 Tbls butter, over medium heat in a cast iron pan or griddle. When butter is sizzling, pour about 1/4 C of mixture fpr each pancake onto skillet. Turn heat to low & place 5-6 blueberries & 3-4 walnut pieces on each pancake.Cook until lightly brown, turning once, about 4 minutes per side. Serve with pats of butter & maple syrup.
