CREAMY BLUEBERRY GELATIN SALAD

- In a large bowl, dissolve gelatin in boiling water. Cool for 10 minutes. Stir in pie filling and pineapple until blended. Transfer to a 13x9-in. dish. Cover and refrigerate until partially set, about 1 hour. , For topping, in a small bowl, combine the cream cheese, sour cream, sugar and vanilla. Carefully spread over gelatin; sprinkle with walnuts. Cover and refrigerate until firm.

BLUEBERRY SALAD
This is a dessert 'salad' with raspberry Jell-O and crushed pineapple. You can also change it around to your specified taste.

- Combine hot water and gelatin; stir until dissolved. Stir in pineapple and blueberry pie filling. Pour into a 9x13 inch dish and chill in refrigerator until firm.
- Cream together cream cheese and sugar. Beat in sour cream and vanilla. Spread over firm gelatin. Chill until serving.

BLUEBERRY JELLO SALAD
Steps:
- Bring 4 cups of water to a roaring boil in a saucepan.
- Remove from heat and quickly whisk in the jello and pudding mixes. Add 1/2 cup cold water.
- Pour jello into a glass dish (the larger it is, the thinner the jello layer).
- Add the blueberries throughout the jello.
- Cover with plastic wrap and refrigerate for 4-5 hours.
- After 4-5 hours, beat together softened cream cheese and Cool Whip or whipped cream.
- Spread on top of the jello and sprinkle with the mixed nuts.
BLUEBERRY GELATIN SALAD
This is a recipe I discovered about 25 years ago when grape gelatin was hard to find! It's a terrific side dish or a delicious dessert. It's very rich in flavor and can be made ahead of time. Also good with cherry gelatin and cherry pie filling.

- In a large bowl, mix together gelatin powder, boiling water, pineapple and pie filling. Pour into a mold, or glass baking dish, and refrigerate until set, at least 2 hours.
- In a medium bowl, mix together the cream cheese, sour cream, sugar and vanilla until smooth. Spread over the top of the gelatin. If using a mold, unmold the gelatin before applying topping.

Steps:
- Dissolve jello with boiling water (use 1 3/4 cup water for firmer jello).
- Mix in pie filling and pineapple with juices.
- Put in fridge to set for 4-6 hours or longer if needed.
- Mix all remaining ingredients for the topping.
- Beat until smooth and spread onto set jello.
- OPTIONAL: Sprinkle with fresh blueberries, raspberries and or nuts.

- In a medium bowl, dissolve 2 packages of the raspberry gelatin in 3 1/4 cups boiling water. Pour into a 9 by 13 inch pan and refrigerate until firm.
- In a medium saucepan, whisk together unflavored gelatin and 1/2 cup cold water. Whisk in the half and half, sugar and vanilla and cook over medium heat until hot but not boiling. Remove from heat and stir in the softened cream cheese. Spread over the raspberry gelatin layer.
- In a medium bowl, dissolve the remaining package of raspberry gelatin in 1 cup boiling water. Stir in the blueberry pie filling and pour over the cream cheese layer. Chill until serving.

BLUEBERRY GELATIN SALAD
This is a delicious salad or dessert that requires little effort but looks and tastes heavenly. I used raspberry gelatin in place of cherry because it's what I had. I also threw in some raspberries with the blueberries. Don't make your cream cheese mixture too soon or you'll sample a little too much before the jello is ready...cooks beware! I used frozen fruit, but I'd love to try it when fresh fruit is in season. I found the recipe in Taste of Home Parties, Potlucks, and Barbecues from Mildred Livingston in Phoenix, Arizona. Cook time excludes chilling time.
