1 pint fresh blueberries
1 ¼ cups milk
⅔ cup white sugar
½ cup all-purpose flour
3 large eggs
1 tablespoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Generously butter a 2 1/2-quart baking dish.
  • Pour blueberries into prepared baking dish.
  • Blend milk, sugar, flour, eggs, vanilla extract, and salt in a blender until batter is smooth. Pour batter over blueberries and gently shake to remove any air bubbles.
  • Bake in the preheated oven until puffed and center is set, 25 to 30 minutes. Cool until clafoutis deflates and is just warm.

2 teaspoons butter
16 ounces fresh or frozen unsweetened blueberries
3 large eggs
3/4 cup all-purpose flour
3/4 cup whole milk
1/3 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400°. Place butter in a 12-in. cast-iron or other ovenproof skillet. Place skillet in oven until butter is melted, 1-2 minutes. Carefully tilt pan to coat bottom and sides with butter. Spread blueberries in bottom of pan. In a large bowl, whisk eggs, flour, milk, sugar, vanilla and cinnamon. Pour egg mixture over blueberries., Bake until center is puffed and edges are browned, 30-35 minutes. Sprinkle with additional cinnamon if desired. Let stand 15 minutes before cutting.

1 1/2 pt blueberries, washed and drained
4 medium eggs
1 c sugar
1 c milk
1 Tbsp freshly squeezed lemon juice
2 Tbsp lemon zest
3/4 c all-purpose flour
pinch of salt
powdered sugar (for garnish)

Steps:

  • 1. Preheat the oven to 350° and place the blueberries in the bottom of a small glass pan (8" x 10" for rectangular pans, 9" for round pans).
  • 2. In a medium bowl add the eggs and whisk lightly. Next, add the sugar and mix until the mixture becomes pale yellow. Add the milk and whisk together, followed by the lemon juice and lemon zest. Finally, add the flour and pinch of salt and whisk until completely combined.
  • 3. Pour the mixture over the berries. Place in the center of the oven rack and bake about 45 minutes, or until the center has puffed up and bounces back when lightly pressed. Allow the clafoutis to cool for about 5-7 minutes & slice. Dust with powdered sugar, garnish with blueberries & lemon zest.
