1 ½ cups all-purpose flour
¾ cup butter
1 cup chopped pecans
2 (8 ounce) packages cream cheese
3 cups confectioners' sugar
½ teaspoon vanilla extract
2 (1.3 ounce) envelopes whipped topping mix
1 cup milk
1 (21 ounce) can blueberry pie filling

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large mixing bowl, combine flour, butter, and pecans. Press mixture into a 9x13-inch pan.
  • Bake for 30 minutes. Allow to cool.
  • In a large bowl, combine cream cheese, confectioners sugar, vanilla, whipped topping mix and milk. Beat at high speed using an electric mixer until smooth. Pour over baked crust. Chill in refrigerator. Before serving, top with blueberry pie filling.

1/2 cup confectioners' sugar
1 can (14 ounces) sweetened condensed milk
1 package (3.4 ounces) instant vanilla pudding mix
1 carton (12 ounces) frozen whipped topping, thawed, divided
1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes
1 quart fresh or frozen blueberries, thawed
Additional blueberries, optional

Steps:

  • In a large bowl, beat cream cheese and confectioners' sugar until smooth. Beat in milk and dry pudding mix. Fold in 1-1/2 cups of whipped topping. , Place half of the cake cubes in a 3-qt. glass bowl. Layer with half of the berries and pudding mixture. Cover with remaining cake cubes. Layer with remaining berries and pudding mixture. , Spread remaining whipped topping over top. Garnish with additional berries if desired. Store leftovers in the refrigerator.

1 (15 ounce) can blueberry pie filling (or your favorite flavor) or 2 cups fresh fruit

Steps:

  • mix together in 8"x8" pan the flour, margarine, and nuts.
  • bake this for 25 min @ 350 degrees F.
  • in a mixing bowl cream together the cream cheese, powdered sugar, and whipped topping.
  • when the crust is cool to the touch scoop the cream cheese mixture onto the crust.
  • top with the pie filling or fresh fruit.
  • cool in refrigerator for about 1 hour or freezer for about 30 minutes to set.

5 ounces pecan halves (about 1 1/2 cups)
1 cup all-purpose flour
2 tablespoons granulated sugar
Pinch of fine sea salt
6 tablespoons unsalted butter, melted
1 cup confectioners' sugar
2 envelopes unflavored gelatin
1 cup heavy cream
Two 8-ounce containers cream cheese, at room temperature
1 teaspoon vanilla extract
2 pints blueberries
1/4 cup granulated sugar, or to taste
2 tablespoons cornstarch
Juice of 1/2 lemon

Steps:

  • For the pecan crust: Preheat the oven to 350 degrees F.
  • Place the pecans in the bowl of a food processor fitted with the blade attachment. Pulse until finely ground. Add the flour, granulated sugar and salt and pulse to combine. Add the butter and process until combined. Transfer the mixture to a 9-by-13-inch rectangular baking dish; press flat. Transfer to the refrigerator to chill until firm, about 20 minutes.
  • Bake until golden brown, 10 to 12 minutes. Remove to a rack to cool.
  • For the cheesecake filling: Meanwhile, place the confectioners' sugar and gelatin in a medium bowl. Add 1/4 cup cold water and stir to combine. Bring the heavy cream to just a simmer in a small pot over medium-high heat. Add the hot cream to the gelatin mixture and stir to combine and dissolve. Set aside.
  • Wipe out the food processor bowl to clean away most of the crumbs. Beat the cream cheese and vanilla in the bowl of the food processor until smooth. Add the heavy cream-gelatin mixture and process until smooth, scraping the sides of the bowl as needed. Pour into the cooled nut crust. Refrigerate until firm, at least 1 hour.
  • For the blueberry topping: Meanwhile, combine the blueberries, granulated sugar and cornstarch in a small saucepan. Stir to combine so that the blueberries are coated with the dry ingredients. Add the lemon juice and stir to combine. Bring to a simmer over medium heat and cook, stirring, until the cornstarch and sugar have melted, about 2 minutes. Set aside to cool at least 30 minutes before pouring over the chilled cheesecake filling. Chill until the topping is set, about 15 minutes, before serving.

CREAM CHEESE FILLING:
1 (8-ounce) pkg cream cheese, room temperture
1 c confectioner's sugar
1 egg, room temperture
3 Tbsp unsalted butter, melted
1 Tbsp fresh lemon juice, (juice from 1/2 of a large lemon
1 tsp lemon extract
1/2 tsp vanilla
zest of 1/2 of a large lemon
CAKE BATTER
2/3 c all purpose flour
1/3 c sugar
2 tsp baking powder
1/2 tsp kosher salt
1/2 c unsalted butter, melted and slightly cooled
2 eggs, room temperture
2 Tbsp fresh lemon juice, (juice from 1 large lemon)
1/2 tsp vanilla
lemon zest, from 1 1/2 large lemons
1 c frozen blueberries, or fresh
confectioners' sugar (optional for dusting cake)
BLUEBERRY SAUCE
1 Tbsp cornstarch
1/4 c sugar
2 c frozen blueberries, or fresh
1 Tbsp fresh lemon juice (juice of 1/2 large lemon)
zest of 1 small lemon
1/2 tsp vanilla extract
pinch of salt
WHIPPED CREAM TOPPING
1 c very cold heavy whipping cream
1/4 c powdered sugar
1/2 tsp lemon extract

Steps:

  • 1. First; set out butter, cream cheese and eggs about an hour prior to baking and let them come to room temperture.
  • 2. Preheat oven to 325 degrees. Prepare 10-spring from pan with cooking spray. I used "Joy Baking Spray". Go ahead and zest and juice your lemons; set aside. 1 1/2 large lemons for cake batter and 1/2 lemon for filling. And, if you are making the blueberry sauce you will need to zest and juice 1/2 large lemon.
  • 3. CREAM CHEESE FILLING: In the bowl of stand mixer, beat cream cheese on medium-high speed until smooth about 5 minutes, scraping bowl as needed. Add confectioners' sugar and beat another 2 to 3 minutes. Add egg; beat until completely combined, about 1 minute. Add butter, lemon juice, lemon and vanilla extract and zest; beat 1 minute; set aside.
  • 4. CAKE BATTER: In a batter bowl (or large bowl) combine flour, sugar, baking powder and salt; whisk together. Whisk in melted butter, eggs, lemon juice and vanilla; don't over beat. Gently fold in blueberries.
  • 5. Pour batter into 10-inch prepared spring-form pan. Gently pour cream cheese filling into center of cake batter; spread gently to within 1/2 of sides of pan (the filling should cover all of the cake batter except for 1/2-inch of the outter edge of the cake batter, 1/2-inch of the batter should be visable).
  • 6. Bake at 350 degrees for 35 to 40 minutes or until until toothpick inserted near the edge of cake comes out clean. Remove from oven and cool on wire rack for 10 minutes. Carefully remove sides from spring-form pan and allow cake to cool for 1 hour.
  • 7. BLUEBERRY SAUCE: In a small saucepan, add the cornstarch and sugar. Whisk together. Stir in 1 cup of the blueberries, the lemon juice, zest, vanilla and salt. Cook the mixture over medium heat for 4-5 minutes, until thickened. Stir in the remaining blueberries and cook for 2 minutes. Cool and store in the refrigerator for up to a week.
  • 8. WHIPPED CREAM TOPPPING: Pour cold whipping cream into a cold bowl. Beat on high speed of hand mixer until it starts to thicken; add sugar and lemon extract; continue beating until it forms a peak. Refrigerate until ready to serve.
  • 9. When cake is completely cool; spinkle with powered sugar; slice and serve as is.
  • 10. Or, add whipped cream and blueberry sauce! Keep any remaining cake refrigerated. ENJOY!

Lately I have been spending way too much time at our local farm market buying strawberries from California and fresh NJ blueberries. This easy dessert was inspired by Silent Cricket 's Recipe #38492. *NOTE: Cooking time is freezing time, so plan ahead. :D

1 cup Cool Whip

4 teaspoons almonds (ground)

Steps:

  • Add strawberries, blueberries, 1 cup of cool whip and sugar substitute in blender until desired consistency about 1-3 minutes. (I like mine smooth with no fruit lumps).
  • Place in a plastic container with a tight fitting lid, and freeze for 24 hours.
  • After completely frozen scoop out and divide frozen mixture into 4 dishes.
  • Top each frozen mixture with chocolate syrup, remaining cool whip and almonds.

additional ground pecans (optional)

Steps:

  • 1. Preheat oven to 300 degrees. Mix butter, 1 cup pecans, and flour until well blended. Press mixture into a greased 8 1/2"x 10" baking dish. Bake 20 minutes, remove and cool crust completely.
  • 2. Meanwhile, in medium bowl, combine cream cheese, 1 cup of the whipped topping and powdered sugar, Whisk with an electric hand mixer until cream cheese mixture is light and fluffy. Spread cream cheese mixture over the cooled crust.

I've been making this dessert for years and its very good. I have no idea where I first got this recipe , it been to many years.

1-1/2 c graham cracker crumbs
1/4 c melted butter
1/4 c sugar
8 oz. pkg of cream cheese ; softened
1/2 c sugar
1 tsp vanilla extract
2 large eggs
21 oz. can(s) blueberry pie filling
1 c whipping cream ; whipped

Steps:

  • 1. COMBINE: GRAHAM CRACKER CRUMBS , BUTTER AND 1/4 CUP SUGAR IN BOWL ; MIX WELL . PRESS MIXTURE INTO A 9x11" BAKING PAN. BEAT CREAM CHEESE , 1/2 CUP SUGAR , VANILLA AND EGGS IN A MIXING BOWL UNTIL LIGHT AND FLUFFY . SPREAD IN PREPARED PAN. BAKE @ 350° FOR 15 MIN. COOL ; SPREAD BLUEBERRY FILLING EVENLY OVER CREAM CHEESE LAYER ; TOP WITH WHIPPED CREAM CHILL FOR 8-12 HR. BEFORE SERVING

can(s) 1 can of blueberry pie toping
c 2cups of white powered sugar
oz 8 ounce bar of cream cheese
c 1 cup of chopped pecans
c 1cup of plain flour
stick i stick of butter
large i container of cool whip

Steps:

  • 1. MIX FLOUR MELTED BUTTER PECANS TOGETHER,IT SHOULD BE A LITTLE LUMMPY PUT IN A DISH TO MAKE A CRUST IN BOTTOM OF GLASS PAN BAKE AT 425 UNTIL BROWN TAKE OUT AND COOL
  • 2. MIX POWERED SUGAR AND SOFT CREAM CHESSE TOGETHER THAN ADD KOOL WHIP AND MIX ALL TOGETHER
  • 3. POUR OVER CRUST AND TOP WITH BLUEBERRIES LET REG.FOR AROUND 1 HOUR AND EAT.

Number Of Ingredients 9

1 package graham crackers, 1 individual package; 9 full crackers
1/2 cup chopped pecans
1/4 cup sugar
10 tablespoons butter, melted
1 package 8-oz cream cheese, softened
2 tablespoons milk or half-and-half
1 cup confectioners' sugar
2 cans 21-oz cans blueberry pie filling
2 package 8-oz containers frozen whipped topping, thawed

Steps:

  • Pulse graham crackers and pecans in a food processor until finely ground.
  • Pour into a large bowl and add melted butter and 1/4 cup sugar. Stir to mix.
  • Press into a 9x13-inch pan and bake at 350 degrees for 8 minutes. Let cool.
  • Using an electric mixer, beat cream cheese, milk, and confectioners' sugar until smooth. Fold in 1 cup of whipped topping. (Save remaining whipped topping for the final layer.)
  • Spread cream cheese mixture on top of crust.
  • Spread blueberry pie filling on top of cream cheese layer.
  • Top with remaining whipped topping.
  • Chill thoroughly before serving.
