LEMON-BLUEBERRY CRUNCH DESSERT

Lemon and blueberry add a delightful flavor to this crunchy granola dessert that's made using Bisquick® mix - ready in 30 minutes.

2 1/3 cups Original Bisquick™ mix
3 tablespoons sugar
1/2 cup milk
3 tablespoons butter or margarine, melted
2 teaspoons grated lemon peel
2 tablespoons lemon juice
6 containers (6 oz each) lemon yogurt
3 cups blueberries
3/4 cup crushed granola cereal

Steps:

  • Heat oven to 425°F. Spray 13x9-inch pan with cooking spray. In medium bowl, stir Bisquick mix, sugar, milk, butter, lemon peel and lemon juice until soft dough forms. Spread in pan.
  • Bake about 15 minutes or until golden brown; cool.
  • Cut shortcake into 2-inch squares. For each serving, in tall parfait glass or dessert dish, layer shortcake, 1/2 container yogurt, 1/4 cup blueberries and 1 tablespoon granola; repeat layers.

20 ounces crushed pineapple, do not drain
3 cups blueberries (fresh or frozen)
3/4 cup sugar
18 1/4 ounces yellow cake mix
1/2 cup butter stick butter, melted
1/4 cup sugar
1 cup pecans, chopped

Steps:

  • Butter a 9x13-inch baking dish. Put pineapple, blueberries in pan; sprinkle with 3/4 cup sugar. Pour dry cake mix over blueberry mixture then drizzle melted butter over the dry mix. Sprinkle with 1/4 cup sugar and chopped pecans. Do not stir. Bake at 350° about 45 minutes.

I had an old recipe laying around. I used to make a different version for years. I thought I would put a twist on it with peaches. I also altered the recipe slightly. This is really yummy. Top with vanilla ice cream for a real treat. enjoy!!

1/2 cup(s) plus 2 tablespoons butter divided
1 1/2 cup(s) fresh blueberries
1 1/2 cup(s) fresh chopped in small pieces. peeled and pit removed peaches
3/4 cup(s) plus 1 tablespoon granulated sugar divided
1/4 cup(s) light brown sugar
1 1/2 cup(s) chopped pecans
1 box(es) yellow cake mix
20 ounce(s) can of crushed pineapple

Steps:

  • heat oven to 350 degree's Butter the bottom and inside walls of a 9x13 inch pan. Pour Crushed pineapple on bottom of pan. Do not drain juice from it. Spread evenly.
  • Mix the blueberries with the chopped peaches. Toss peaches,and berries in 1 tablespoon of butter.coat well. Add a 1/4 cup of brown sugar,and 1/2 cup of granulated sugar to berries,and peaches. mix to coat.
  • pour berry peach mixture over the pineapple evenly. Mix 1/2 cup of pecans in with the yellow cake mix. Sprinkle the dry cake mix with pecans over the peach berry mixture in pan.
  • Melt 1/2 cup of butter,and drizzle over the dry cake mix in pan. Mix 1 cup of chopped pecans with 1 tablespoon melted butter. Mix together with 1/4 cup of granulated sugar. Sprinkle on top of cake mix. Press down slightly with back of spoon. Place in oven and bake at 350 for 1 hour.
  • cool completely. Scoop and serve. optional: May serve with vanilla ice cream. Note: These are best served cold.

1 stick butter, melted
1/4 C. sugar
1 C. pecans, chopped

  • Butter a 9 x 13 baking dish. Put pineapple, blueberries in pan; sprinkle with 3/4 C. sugar. Pour dry cake mix over blueberry mixture and the butter over the dry mix. Sprinkle with 1/4 C sugar and chopped pecans. Do not stir. Bake at 350 degrees about 45 min.
