1 cup melted butter
2 cups white sugar (I cut to 1/3 cups, didn't miss the rest at all)
2 T vanilla
1/2 T salt
1 1/2 tsp baking soda
2 large eggs, beaten
2 1/2 cup flour (I used half whole wheat, half white)
1 cup dried sweetened blueberries
2 cups ground oatmeal (grind in blender or food processor)

Steps:

  • Melt butter, add sugar, then vanilla, salt, baking soda; eggs, flour, dried blueberries, and ground oatmeal. From into balls, flatten on cookie sheet. I often bake only one tray at a time, freeze the rest (already formed into cookies) to have easy, quick, and always fresh from the oven cookies. Bake at 350 F for 10-12 minutes.

Yield Makes 15 servings, 2 cookies each.

1/2 cup (1 stick) butter, softened
1-1/2 cups firmly packed brown sugar
1 egg
1 tsp. grated orange zest
1 cup flour
1 tsp. baking powder
2 cups whole grain cereal flakes with blueberries

Steps:

  • Preheat oven to 350°F. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg and orange zest; beat until well blended. Add flour and baking powder; mix well. Gently stir in cereal.
  • Drop level tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
  • Bake 10 to 12 min. or until lightly browned. Cool on baking sheet 2 min. before removing to wire racks to cool completely. Store in tightly covered container at room temperature.
