APPLE OR CHERRY OR BLUEBERRY PIE QUESADILLA

Apple or Cherry or Blueberry Pie Quesadilla image

A quick and easy dessert that is quite tasty. You can change the fruit filling and cheeses to suit your mood or use fresh fruit in season. If using fresh fruit, you may have to cook atop the stove for a few minutes to help break down the fruit. Add 1/4 C sugar for each 2 C fruit. You may end up with extra fruit, so make 2 Quesadillas. Use cream cheese with cherry and top with sugar. Use provolone with blueberry or blue cheese with blueberry. Very inexpensive, too.

CHERRY/BLUEBERRY CREAM CHEESE PIE

Cherry/Blueberry Cream Cheese Pie image

This is so popular when the family gets together that my sister doubles the recipe and makes it in a 9x13 inch dish instead of one pie crust. We serve it plain with the cherry and blueberry pie filling on the side. Oh boy...

Provided by Debbie Quimby

Categories     Other Desserts

Number Of Ingredients 9

1 pkg cream cheese, softened (8 oz)
1 can(s) sweetened condensed milk (14 oz)
1/3 c lemon juice
1 tsp vanilla extract
1 can(s) cherry or blueberry pie filling (21 oz)
CRUST:
1 pkg graham crackers, crushed (1-1/3 cup)
1/4 c sugar
1 1/3 c butter, melted

Steps:

  • 1. Beat cream cheese and sweetened condensed milk; stir in lemon juice and vanilla.
  • 2. Pour into graham cracker crust and chill. Top with pie filling.
  • 3. For pie crust: combine ingredients and blend with a fork. Press into 9" pie plate and either a) bake at 375 degrees for 8 minutes, then cool; or b) chill in refrigerator for 30 minutes for using.
  • 4. You can use a prepared graham cracker crust but nothing tastes as good as making the crust yourself, especially if you're doubling the recipe and making it in a 9x13" dish.

CIN'S "EASY CHERRY-BLUEBERRY PIE"

Cin's

I wanted to make a pie for 'drop-in' company and didn't have enough ingredients with out running to the store...didn't want to do that. So as I checked the pantry and freezer I found a can of cherry pie filling and some bluebrries I cleaned and frozen a couple months earlier. Had to brainstorm quickly...so this is what I came up...

MAKE ENOUGH PASTRY DOUGH FOR A DOUBLE CRUST PIE (OR USE PRE-MADE)
1 can(s) (20 oz) of cherry pie filling
1 c fresh frozen blueberries
3/4 tsp rum
3/4 tsp lemon juice concentrate
2 Tbsp liquid 100% egg whites (to brush on crusts top)

Steps:

  • 1. I made enough pastry for a double crust pie (recipe link below). Warmed the canned cherry pie filling in a sauce pan on the stove, with the rum and lemon juice. Pour 1/2 of it into the pastry-crust you've put in bottom of pie plate. Sprinkled a layer of ''fresh frozen'' blueberries on top of cherry filling, then pour the other half of the cherry pie filling on top of the blueberries. Covered with a the other pastry crust, seal edges and crimp. Brush the liquid egg white over the top of crust and edges. Then I made some slits (also an ''S'' for my last name) on top crust and sprinkled sugar crystals on top. I used red & clear crystals. Baked pie at 425 dF for 30 minutes. Don't let edges get too dark or burn, cover edges if needed. OPTION: Serve hot or warm with vanilla ice cream. Easy as pie =;D & delish!!!
