BLUEBERRY BREAD AND RICE PUDDING WITH ORANGE CARAMEL SAUCE



Blueberry Bread and Rice Pudding with Orange Caramel Sauce image

This pudding combo uses both rice and sweet Hawaiian bread (with a blast of blueberries, orange zest and juice) for texture and flavor, with evaporated milk for richness without the fat. You'd never know it was fewer than 300 calories per serving!

12 ounces sweet Hawaiian bread, cut into 1/2-inch pieces (about 10 cups)
1 1/4 cups fat-free evaporated milk
1 cup 2-percent milk
1/2 cup plus 2 tablespoons sugar
1 1/2 teaspoons pure vanilla extract
Large pinch freshly grated nutmeg
Kosher salt
2 large eggs
3/4 cup cooked wild rice
1 cup blueberries
Nonstick cooking spray
1 tablespoon toasted, sliced almonds
1/4 teaspoon finely grated orange zest
1 tablespoon orange juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the bread cubes out on a baking sheet and bake until toasted and golden, tossing halfway through, about 15 minutes. Let cool.
  • Whisk together 1 cup of the evaporated milk with the 2-percent milk, 1/2 cup sugar, 1 teaspoon vanilla, nutmeg, a pinch of salt and eggs in a large bowl. Add the cooled bread cubes and wild rice. Toss to combine and set aside until the bread soaks up most of the liquid, about 30 minutes.
  • Stir the blueberries into the mixture and transfer to a lightly oiled 2-quart baking dish. Top with the almonds and bake until the bread pudding is set and golden, 30 to 40 minutes. Remove and let rest for a few minutes.
  • Meanwhile, add the remaining 2 tablespoons sugar to a small saucepan. Swirl over medium-low heat until the sugar dissolves and turns amber, about 7 minutes. Stir in the remaining 1/4 cup evaporated milk, 1/2 teaspoon vanilla, orange zest, orange juice and a pinch of salt. Bring to a simmer and cook until slightly thickened, about 2 minutes. Drizzle the caramel sauce over bread pudding. Serve warm or at room temperature.

This is a low fat version that is made with skim milk and Egg Beaters. This is one of the best bread puddings I have ever had. I make this at Easter every year and get rave reviews.

2 cups skim milk
1 cup egg substitute or 4 eggs
2/3 cup sugar
1 teaspoon vanilla
1/4 teaspoon grd cinnamon
4 1/2 cups sourdough bread, cubed
1 cup blueberries (fresh or frozen)
1/4 cup skim milk
14 caramels

Steps:

  • In a large bowl, blend together milk, egg, sugar, vanilla and cinnamon. Set aside. dump the bread cubes in the bowl and let soak for a few minutes. Place this mixture into a greased 8x8x2-inch baking dish; sprinkle with blueberries.
  • Bake at 350°F for 1 hour or until set. Serve warm with caramel sauce.
  • To make caramel sauce; heat milk and caramels until caramels are melted, stirring frequently.

Ingredients
2 cups fresh blueberries
5 tbsps water
3/4 cup sugar
1 tbsp. fresh lemon juice
1 sea salt

Steps:

  • Combine blueberries, 1 tablespoon water and a pinch of sea salt in a saucepan over low heat. Stir and mash until blueberries become a sauce-like consistency, about 5 minutes. Set aside. In another saucepan combine water, 1/2 tablespoon lemon juice and sugar. Stir over low heat until sugar dissolves, then increase heat and boil without stirring until syrup is golden. Occasionally swirl pan, cooking for about 7-8 minutes. Remove from heat, stir in blueberry sauce and let stand 5 minutes. Stir in remaining lemon juice and let cool to room temperature.

2 cups fresh blueberries
5 tablespoons water, divided
Pinch of coarse kosher salt
1 1/2 cups sugar
2 teaspoons plus 1 tablespoon fresh lemon juice

Steps:

  • Combine berries, 1 tablespoon water, and coarse salt in medium saucepan. Stir and mash over medium-low heat until reduced to sauce consistency, about 4 minutes. Set aside.
  • Combine sugar, 4 tablespoons water, and 2 teaspoons lemon juice in large saucepan. Stir over medium-low heat until sugar dissolves. Increase heat and boil without stirring until syrup is golden amber, occasionally brushing down sides of pan with wet pastry brush and swirling pan, 9 minutes. Remove from heat. Stir in blueberry sauce; let stand 5 minutes.
  • Cool sauce to room temperature. Stir in remaining 1 tablespoon lemon juice.
