One .25-ounce packet active dry yeast
2 teaspoons sugar
1 cup all-purpose flour, plus more for flouring the work surface
1 cup whole-wheat flour
1 teaspoon kosher salt
2 tablespoons olive oil, plus more for coating the bowl
4 slices prosciutto
8 fresh figs, cut in half
3 to 4 ounces blue cheese, crumbled

Steps:

  • For the dough: In a small bowl, combine the yeast with the sugar and 3/4 cup warm water. Let sit for 10 minutes until it begins to foam.
  • In a large bowl, combine the all-purpose flour, whole-wheat flour and salt and make a well in the center. Add the yeast mixture and the olive oil. Using a fork, incorporate the wet ingredients with the dry ingredients until a dough forms. On a lightly floured surface, continue to work and then knead the dough until it is smooth and elastic, about 8 minutes.
  • Lightly coat a clean bowl with additional olive oil and add the dough, turning once to coat the dough in oil. Cover and set in a warm place until doubled in size, about 1 hour.
  • Heat a grill pan over medium-high heat and preheat the oven to 400 degrees F.
  • Punch down the dough and divide it into 2 pieces, using 1 piece for the pizza. Wrap the remaining dough in plastic wrap and refrigerate or freeze for another pizza.
  • For the pizza: Stretch the dough into a 12-inch circle that will fit on the grill pan. Add the dough to the hot grill pan and cook until stiff and bubbles start to form, 1 to 2 minutes. Flip and cook on the other side until grill marks form and the dough is completely cooked through, 1 to 2 more minutes.
  • Transfer the crust to a baking sheet. Lay the prosciutto slices over the crust, then top with the figs and blue cheese. Bake until the cheese melts, about 7 minutes. Serve immediately.

I got this recipe from a Pampered chef cookbook, and my husband and I made it for a Christmas-eve party. It was an absolute hit. Very tasty, and refreshing.

1 (8 ounce) package refrigerated crescent dinner rolls
2 ripe avocados, peeled and mashed (about 1 cup)
2 tablespoons onions, finely chopped
1 tablespoon lemon juice
1/4 cup sour cream
1/2 teaspoon salt
4 ounces monterey jack cheese, shredded (1 cup)
4 ounces imitation crabmeat, chopped
2 plum tomatoes, seeded and chopped
2 tablespoons fresh cilantro

Steps:

  • Preheat oven to 350°F.
  • Unroll crescent dough; separate into 8 triangles.
  • On a round baking stone arrange triangles in a circles with points in the center and wide ends toward the outside.
  • Using lightly floured rolling pin roll out dough to a 12-inch circle, pressing seams together to seal.
  • Bake 12-15 minutes, or until light golden brown.
  • Remove from oven; cool completely.
  • Mix together avocado, lemon juice, salt, onion and sour cream; mix well.
  • Spread mixture evenly over crust.
  • Shred cheese over avocado mixture.
  • Sprinkle chopped crabmeat and tomato over cheese.
  • Snip cilantro and sprinkle over top.
  • Cut into squares.

1 (13 7/8 ounce) can refrigerated pizza crusts
1/3 cup cream cheese (from 8-oz container or package)
1/4 cup crumbled blue cheese (1 oz)
1 cup shredded mozzarella cheese (4 oz)
4 slices prosciutto, cut into thin strips (about 2 oz)
1/3 cup apricot preserves

Steps:

  • Heat oven to 400°F Lightly spray large cookie sheet with cooking Spray.
  • Unroll pizza crust dough on cookie sheet; press dough into 15x12-inch rectangle. Bake 8 to 10 minutes or until light golden brown.
  • In small microwavable bowl, microwave cream cheese and blue cheese uncovered on High about 30 seconds or until melted. Stir until well mixed. Spread mixture over partially baked crust. Sprinkle with mozzarella cheese; top with prosciutto.
  • In small microwavable bowl, microwave preserves uncovered on High about 30 seconds. Stir until smooth; drizzle over pizza.
  • Bake 8 to 12 minutes longer or until crust is golden brown and preserves in center of pizza start to bubble.
