I made meat loaf with wing sauce for my guy, who prefers food with big flavors. He went crazy for it, and now likes it even more than traditional Buffalo wings! -Latesha Harris, Beaverton, Oregon

Number Of Ingredients 10

1 large egg, lightly beaten
1 small onion, finely chopped
1/4 cup panko bread crumbs
1/4 cup Buffalo wing sauce
1 teaspoon dried oregano
1/2 teaspoon pepper
1 pound ground beef
TOPPING:
1/4 cup Buffalo wing sauce
1/4 cup crumbled blue cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first six ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in a greased 11x7-in. baking dish., Bake 20 minutes. Spread wing sauce over top; sprinkle with cheese. Bake until a thermometer reads 160°, 20-30 minutes longer. Let stand 5 minutes before slicing.

My family loves blue cheese - my husband will even eat it right from the container! One night, I was looking for a new way to use ground beef and this is what I came up with. It's now our favorite winter comfort food. We like to serve it with Parmesan Cous Cous.

1 cup breadcrumbs
1/4 cup crumbled blue cheese
1 lb ground beef
1 egg (slightly beaten)
2 tablespoons chopped onions
1/2 teaspoon salt
1 dash pepper
blue cheese dressing

Steps:

  • Combine 1 cup bread crumbs and 1/4 cup crumbled blue cheese.
  • Add ground beef, egg, onion, salt and pepper.
  • Blend thoroughly.
  • Shape into a round loaf.
  • With a spoon, make a crater-like depression in top of loaf.
  • Fill depression with Blue Cheese Dressing.
  • If desired, sprinkle more crumbled blue cheese on top.
  • Bake at 350 for 1 hour.

1 3/4 lbs ground beef
3 -4 ounces blue cheese (or more)
1 cup oatmeal
3/4 cup sour cream
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg (lightly beaten)
1 diced onion (yellow or white)
1 (4 1/2 ounce) can mushrooms
crumbled bacon (optional)

Steps:

  • Saute onion and mushrooms in olive oil until translucent.
  • Mix all ingredients in large bowl.
  • Shape into loaf pan and bake at 350 degrees for 1 hour and 15 minutes -- (not less).

Grilled Bone-In Rib-Eye Steaks With Blue Cheese image

The usual formula for cooking an amazing slab of steak is as simple as they come: salt plus pepper plus a short stint over a hot fire. But there are times when you want an extra shot of flavor. Some good crumbled blue cheese sprinkled on the hot steak so it melts over the top does just that, especially when you spike it with hot sauce and butter. I like to use a combination of direct and indirect heat when grilling a bone-in piece of meat; it allows a crust to form but not burn while keeping the meat juicy inside. But you know your grill best, so let your instinct guide you as to where to move the steaks and when you think they are done. And if blue cheese isn't your thing, follow the grilling directions here but leave your meat bare except for the salt and pepper. If you start with good meat, you will never go wrong.

2 (1 1/2-inch-thick) bone-in rib-eye steaks, about 1 1/4 pounds each
2 teaspoons coarse kosher salt
Black pepper, as needed
Extra-virgin olive oil, as needed
2 ounces creamy blue cheese, such as Jasper Hill Bayley Hazen Blue
1 tablespoon unsalted butter
2 teaspoons finely chopped chives
Hot sauce, as needed

Steps:

  • Season steaks with salt and pepper at least 30 minutes and up to 1 hour before you plan to cook them. Cover loosely with plastic wrap and let stand at room temperature.
  • Heat grill to high. If using a charcoal grill, mound coals to one side, allowing for an area of indirect heat. If using a gas grill, turn on only a few of the burners and leave the rest off for indirect heat.
  • Lightly oil steaks. Place on the hottest part of the grill. Cook, covered, until they develop a golden-brown crust, 2 to 3 minutes per side. Move steaks to indirect heat and crumble cheese over the top; cover and continue cooking 2 to 5 minutes longer, depending on desired doneness. (Pull the meat at 125 degrees for rare.)
  • Transfer steaks to a cutting board to rest, loosely covered with foil, for 10 minutes. While steaks rest, stir together butter, chives and hot sauce. Pour over steak before serving.
