3 Pitas (cut in half)
2 tablespoons olive oil
3 Skinless bone chicken breast
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon cumin
1/4 teaspoon oregano
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup Greek yogurt
2 tablespoons mayonnaise
1/4 cup shredded cucumber
1 tablespoon fresh dill
1 clove garlic (minced)
1 medium tomato
1 small head of romaine lettuce

Steps:

  • Combine the cumin, oregano, garlic and onion powder, salt, and pepper together.
  • In a cast-iron skillet heat 2 tablespoons of olive oil over medium heat.
  • Rub the seasoning over both sides of the chicken breast. Place the chicken in the skillet that has the olive oil.
  • Brown both sides of the chicken. Once the chicken is browned turn down the heat a bit and continue to cook until the chicken is no longer pink inside and the temperature has reached 165 degrees F,
  • While the chicken is cooking make the cucumber sauce.
  • Shred the cucumber with a box grater. Make sure to squeeze the liquid out of the cucumber and set aside. Chop the dill and mince the garlic.
  • Mix the Greek yogurt and the mayonnaise together.
  • Add the cucumber, dill, and garlic mix until well combined.

1/2 cup balsamic vinaigrette
1 pound boneless skinless chicken breast halves
CUCUMBER SAUCE:
1 cup plain Greek yogurt
1/2 cup finely chopped cucumber
1/4 cup finely chopped red onion
1 tablespoon minced fresh parsley
1 tablespoon lime juice
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
PITAS:
8 pita pocket halves
1/2 cup sliced cucumber
1/2 cup grape tomatoes, chopped
1/2 cup sliced red onion
1/2 cup crumbled feta cheese

Steps:

  • Marinate chicken in vinaigrette, covered, in refrigerator for at least 4 hours or overnight. In a small bowl, combine the sauce ingredients; chill until serving., Drain and discard marinade. If grilling the chicken, lightly oil the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat until a thermometer reads 170°, 4-7 minutes on each side., Cut chicken into strips. Fill each pita half with chicken, cucumber, tomatoes, onion and cheese; drizzle with sauce.

1 boneless skinless chicken breast (8 ounces)
1 teaspoon blackened seasoning
3/4 cup plain yogurt
1-1/2 teaspoons grated lime zest
2 tablespoons lime juice
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup finely chopped peeled mango
1/3 cup finely chopped red onion
4 flour tortillas (8 inches)
1/2 cup crumbled blue cheese
2 tablespoons minced fresh cilantro

Steps:

  • Sprinkle chicken with blackened seasoning. On a lightly oiled rack, grill chicken, covered, over medium heat 6-8 minutes on each side or until a thermometer reads 165°., Meanwhile, in a small bowl, mix yogurt, lime zest, lime juice, salt and pepper. Cool chicken slightly; finely chop and transfer to a small bowl. Stir in mango and onion., Grill tortillas, uncovered, over medium heat 2-3 minutes or until puffed. I made this up to get rid of some aging bleu cheese dressing, but it turned out absolutely delicious and it was so easy to make! You can use more or less bleu cheese dressing depending on how oily a dish you want this to be; I made it the first time with an entire bottle but that was a bit excessive.

1/2 cup bleu cheese salad dressing
1 cup Italian style breadcrumbs
4 chicken breast halves or 6 chicken thighs

Steps:

  • Preheat oven to 400°F
  • Skin and debone chicken if necessary.
  • Place bleu cheese dressing and breadcrumbs in separate, shallow containers.
  • Dip chicken pieces in bleu cheese; then dredge in bread crumbs until thickly coated.
  • Place in greased glass baking pan; pour any remaining bleu cheese dressing and bread crumbs over top.
  • Bake at 400°F for 20 minutes.
