These are so yummy. They taste just like a BLT sandwich without the bread. I made these for thanksgiving and they disappeared in less than 10 minutes! They are so yummy and they look great for entertaining!

20 cherry tomatoes
1/2 lb bacon (cooked and crumbled)
1/2 cup mayonnaise
1/3 cup chopped green onion
3 tablespoons parmesan cheese
2 tablespoons fresh parsley (snipped or dried)

Steps:

  • Cut a thin slice off of each tomato top.
  • Scoop out the insides and drain upside-down on a paper towel.
  • In a small bowl combine all other ingredients.
  • Spoon the mixture into the tomatoes.
  • Chill and serve.
  • Oh boy, are they good and pretty too!

1 lb elbow macaroni
1 tablespoon extra virgin olive oil
8 slices bacon, coarsely chopped
2 large leeks, trimmed of roots and dark green tops
coarse black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1/2 teaspoon cayenne pepper
1 teaspoon paprika
3 cups whole milk
1 cup chicken stock or 1 cup broth
3 1/2 cups grated gruyere cheese
1 tablespoon Dijon mustard
1 pint cherry tomatoes
3/4 cup plain breadcrumbs

Steps:

  • Place a pot of water on to boil for the pasta. When the water reaches a boil, add some salt and the pasta, and cook until al dente.
  • While the pasta cooks, heat a large skillet over medium heat. Add extra-virgin olive oil and chopped bacon and cook until crisp.
  • While bacon is cooking, split the trimmed leeks in half lengthwise, lay the leeks cut side down and thinly slice into half-moons. Fill a large bowl with water and mix the leeks into the water.
  • Allow the water to settle and the dirt and the grit to settle to the bottle of the bowl. Using your hands, draw the leeks from the water, taking care not to unsettle the dirt.
  • Drain the cleaned leeks on a kitchen towel, pat dry and, and then add to the pan with the bacon. Season the leeks with salt and pepper. Cook until leeks are tender, about 3 to 4 minutes.
  • To start the cheese sauce, heat a medium sauce pot over medium heat. Add the butter and melt, then add the flour, cayenne, and paprika and whisk together over the heat until the roux bubbles; cook for 1 minute more.
  • Whisk in the milk and stock and raise the heat a little. Bring the sauce to a quick boil and simmer to thicken, about 5 minutes.
  • Remove the sauce from the heat and whisk in 3 cups of the grated cheese and the mustard. Set aside.
  • Add the cherry tomatoes to the leeks and continue to cook for 2 minutes. Remove from the heat and reserve.
  • Preheat the broiler.
  • Drain the pasta and add it back to the pasta pot. Combine the reserved leek mixture and the cheese sauce with the pasta. Season with salt and pepper to taste.
  • Transfer the pasta to a baking dish. Combine the remaining ½ cup of grated cheese with the bread crumbs.
  • Top the pasta with the mixture. Place the dish under the broiler until the cheese melts and the bread crumbs are brown.

2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup KRAFT Real Mayo Mayonnaise
3 slices cooked OSCAR MAYER Bacon, crumbled
2 Tbsp. finely chopped romaine lettuce
3 Tbsp. crushed seasoned croutons

Steps:

  • Cut tops off tomatoes; discard. Scoop out seeds. Drain tomatoes, cut sides down, on paper towels.

8 strips applewood-smoked bacon
2 tablespoons canola oil
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper
3/4 cup mayonnaise
2 tablespoons prepared horseradish, drained
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1 teaspoon fresh lemon juice
1/4 cup finely diced celery
2 tablespoons finely chopped parsley
Hot sauce, optional
Kosher salt and freshly ground black pepper
4 plum tomatoes, sliced into thick rounds
1 cup buttermilk
2 large eggs
1 cup stone-ground yellow cornmeal
1/2 cup all-purpose flour
1/4 cup grated pecorino Romano
1 teaspoon garlic powder
1/4 teaspoon cayenne
1/4 teaspoon onion powder
1 cup canola oil
1/2 cup finely chopped fresh parsley
4 thick slices pan de mie, toasted
Butter lettuce leaves, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Lay the bacon on a baking sheet. Bake until the fat has rendered and the bacon is crisp, about 20 minutes. Drain on paper towels, then the strips cut in half crosswise.
  • For the shrimp remoulade: Heat the canola oil in a medium skillet over medium heat. Sprinkle the shrimp with salt and pepper, and add to the pan in a single layer. Cook until just cooked through, about 2 minutes per side. Spread the shrimp, with their juices, on a plate and chill until cooled. Once cool, chop coarsely.
  • Whisk together the mayonnaise, horseradish, Dijon mustard, whole-grain mustard, lemon juice, celery, parsley and some hot sauce if using. Season with salt and pepper. Set aside 1/3 cup of the remoulade for spreading on bread. Fold the chopped shrimp and their juices into the remaining remoulade and mix until combined. Chill while you make the tomatoes.
  • For the fried red tomatoes: Line a wire baking rack with several layers of paper towels and place over a baking sheet. Salt the tomato slices lightly on both sides and let sit on the paper towels for 30 minutes, turning halfway through, to drain of excess liquid.
  • Whisk together the buttermilk and eggs in a small shallow dish and sprinkle with salt and pepper. Whisk together the cornmeal, flour, pecorino, garlic powder, cayenne and onion powder in a medium shallow dish and sprinkle with salt and pepper.
  • Heat the oil in a high-sided medium skillet over medium heat until almost smoking; add a few bits of cornmeal to test the temperature. Season the tomatoes with pepper and dip them in the buttermilk mixture, allowing the excess to drain off; then dredge them in the flour mixture, tapping off the excess. Fry the tomatoes until golden brown and crisp, turning once, 3 to 4 minutes total. Discard the paper towels from the rack and set the fried tomatoes on the rack to drain. Sprinkle with salt and parsley.
  • To assemble the BLT: Spread some of the reserved remoulade on each piece of toast. Top with some lettuce, a generous amount of shrimp remoulade, some bacon and a few slices of fried tomato. Serve immediately, with knives and forks.

36 cherry tomatoes or 36 yellow cherry tomatoes, stems removed (or both)
2 cups chopped butter lettuce
1/2 cup chopped cooked bacon (about 8 slices)
3 -4 tablespoons mayonnaise
salt and pepper

Steps:

  • Lightly slice tops from cherry tomatoes and scrape out and throw away pulp and seeds.
  • Then slice just enough off the bottom of each tomato to form a flat base so the tomato will sit up.
  • Place tomatoes upside down on paper towels and set aside to drain.
  • In small bowl combine lettuce, bacon and just enough mayonnaise to hold stuffing together.
  • Season with salt and pepper.
  • Just before serving fill tomato shells with lettuce-and-bacon stuffing and arrange on platter.

1/2 lb sliced bacon
4 ounces wedge iceberg lettuce (about 1/4 of head)
1/4 cup shredded cheddar cheese

1 dash liquid hot pepper sauce

  • With a serrated steak knife, slice tops off tomatoes and reserve tops.

1 pound skinless pork belly, thinly sliced
1 cup milk
2 eggs, beaten
1 ½ cups all-purpose flour
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons steak seasoning blend
2 large red tomatoes, thickly sliced
3 tablespoons butter
3 tablespoons olive oil
2 ripe avocados from Mexico, peeled, pitted and sliced
4 leaves green leaf lettuce
8 slices crusty artisan bread, toasted
1 tablespoon mayonnaise

Steps:

  • Combine soy sauce, mirin, salt and white pepper in a bowl. Add pork slices and mix to coat with marinade. Cover and refrigerate 30 minutes or overnight.
  • Remove pork from refrigerator. Drain slices; discard marinade. Heat a grill pan and brush or spray with vegetable oil. Place pork slices on grill and cook until well seared, turning every 3 to 4 minutes. Drain on paper towels.
  • Pour milk into shallow bowl. Mix flour, salt, pepper and seasoned salt together in a shallow dish for dredging. Beat eggs in a third bowl. Dip tomato slices into milk, then flour mixture, then eggs. Coat well with flour mixture again.
