Yield 6 to 8 stuffed tomatoes

4 ounces bacon, chopped
3 tablespoons panko breadcrumbs
1 tablespoon freshly grated Parmesan
1 teaspoon mayonnaise
1/2 teaspoon lemon juice
Pinch kosher salt
1/2 heart of romaine lettuce, shredded
6 to 8 cocktail or Campari tomatoes

Steps:

  • Place the bacon in a small skillet; heat over medium heat until beginning to sizzle. Reduce the heat to medium low; cook until crisp and golden brown, about 8 minutes. With a slotted spoon, remove the bacon to a paper towel-lined plate, leaving the fat in the pan.
  • Add the breadcrumbs to the hot bacon fat; cook, stirring often, until lightly toasted and crunchy, about 3 minutes. Remove the breadcrumbs to a separate paper towel-lined plate, spread evenly, and then sprinkle with the Parmesan to melt slightly.
  • With a rubber spatula, mix together the mayonnaise, lemon juice and salt in a bowl. Add the shredded romaine; toss well to coat.
  • Cut a small amount off the bottom of each tomato to create a flat surface to sit on. Then cut off the tops as well. Run a small knife around the inside of the tomatoes to loosen the flesh. Using a 1/2-teaspoon measuring spoon, scoop out and discard the insides of each tomato.
  • Divide the bacon among the tomatoes, pushing it down slightly. Top with some of the romaine, followed by the bacon-parmesan breadcrumbs. Serve at room temperature.

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

2 oz. KRAFT 2% Milk Cheddar Cheese, cut into 8 slices
16 woven wheat crackers
4 slices OSCAR MAYER Fully Cooked Bacon, each cut into 4 pieces
4 cherry tomatoes, each cut into 4 slices
1/4 cup shredded lettuce

Steps:

  • Cut each cheese slice in half. Top crackers with cheese, bacon and tomatoes.
  • Place 8 topped crackers on microwaveable plate. Microwave on HIGH 20 to 25 sec. or until cheese is melted. Repeat with remaining crackers.
  • Top with lettuce.

Six 1-inch-thick slices good-quality ciabatta bread
2 tablespoons extra-virgin olive oil
6 slices thick-cut bacon, cooked
1 head butter lettuce
24 small cherry or grape tomatoes
Green Goddess Dip, for serving, recipe follows
3/4 cup buttermilk
1/3 cup plain Greek yogurt
1/4 cup fresh basil leaves
1/4 cup fresh dill
1/4 cup fresh flat-leaf parsley leaves
1/4 cup fresh tarragon leaves
1 1/2 tablespoons Dijon mustard
1 tablespoon champagne vinegar
1/4 cup plus 2 tablespoons neutral oil
1/4 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Brush both sides of the bread with the olive oil. Place on a baking sheet fitted with a rack. Bake until lightly toasted, 4 to 5 minutes. Let cool, then cut each slice into bite-size pieces.
  • Cut each slice of bacon into 4 pieces. Remove 12 nice leaves from the head of lettuce. Cut each lettuce leaf into 2 pieces. Skewer a piece of bread onto each of twenty-four 4-inch skewers. Carefully roll up the lettuce pieces and place one on each skewer, followed by a piece of bacon and a tomato. Serve with Green Goddess Dip.
  • Combine the buttermilk, yogurt, basil, dill, parsley, tarragon, mustard and vinegar in a blender and blend for about 15 seconds. With the blender running, slowly drizzle in the neutral oil and extra-virgin olive oil until the mixture is emulsified. Season with salt and black pepper. Serve chilled.

Eight 3/4-inch-thick slices heirloom tomato
1 teaspoon fleur de sel sea salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
12 slices Applewood smoked bacon, cut 1/4-inch thick from slab bacon
1/2 cup julienne strips red onion
2 tablespoons mayonnaise
Four 1/2-inch-thick slices country bread, toasted
1 avocado, cut into 1/4-inch-thick slices
2 cups butter lettuce leaves
2 tablespoons tarragon leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the tomato slices on a tray or large plate. Sprinkle with fleur de sel and black pepper. Drizzle the vinegar and oil over the tomatoes. Allow to sit for 15 minutes.
  • Lay the bacon on a baking sheet, and season with a generous amount of black pepper. Brush some of the juices from the seasoned tomatoes onto the bacon and top with the red onions. Roast the bacon until it is golden brown and the fat has rendered, about 20 minutes.
  • Spread 1 1/2 teaspoons mayonnaise on each slice of country toast. Top each with 3 slices of bacon and the onions. Reserve the bacon drippings. Season the avocado with salt and pepper, and place on top of the bacon. Follow with 2 marinated tomato slices on each sandwich.
  • In a separate bowl, lightly toss the lettuce and tarragon with a small amount of the drippings from the bacon and season as needed with salt and pepper. Top the sandwiches with the salad and serve warm.

Steps:

  • Heat the grill to high. Put the bacon on a foil-lined baking sheet and drizzle with the maple syrup. Grill for 7-10 mins until crisp. Mix the mayo with the sundried tomato paste, then spread over two of the sourdough slices. Top with the bacon, sundried tomatoes and Little Gem. Season with black pepper, top with the remaining bread and halve.

The success of a BLT hangs in its balance of salt, acid, lusciousness and crunch. This version is perfect, with a generous swipe of mayonnaise on each slice of toast, followed by a drizzle of olive oil, tomatoes marinated in red wine vinegar and salt, butter lettuce leaves and thick-cut bacon. Squash this closed and eat while the bacon is still warm. BLTs are often associated with summer, but the vinegar here coaxes flavor and brings brightness to hothouse tomatoes, turning it into a sandwich for all seasons.

8 slices thick-cut, smoked or unsmoked bacon, or 16 slices thin-cut bacon
2 heirloom tomatoes (in summer season, in winter use smaller vine tomatoes)
2 teaspoons red wine vinegar
1 1/2 tablespoons extra-virgin olive oil
Flaky sea salt
Freshly ground black pepper
4 slices good white bread (medium thickness, boule is preferable), heavily toasted
1/4 cup mayonnaise
6 butter lettuce leaves

Steps:

  • Working in batches if necessary, fry bacon in a large skillet over high heat until golden brown, about 4 minutes. Transfer to a large cutting board.
  • While bacon cooks, slice tomato crosswise into thin rounds. Transfer to a plate and marinate with red wine vinegar, 1 tablespoon olive oil, salt and pepper.
  • Spread toast generously with mayonnaise on one side, follow with remaining 1/2 tablespoon olive oil.
  • Divide the tomatoes with some of their vinegar marinade among 2 slices of toast. Top with the lettuce.
  • Lay the bacon on the remaining slices of toast. Form sandwiches by piling the bacon-topped slices on top of the remaining toasts. Squeeze to close, cut in half and serve immediately.
