BLOODY MARY SHRIMP COCKTAIL "CEVICHE"



Bloody Mary Shrimp Cocktail

1 pound frozen peeled cooked shrimp (16- to 20-count), defrosted, tails removed, cut into 1/4-inch pieces
3/4 cup bloody Mary mix
1 1/2 teaspoons celery salt
Juice of 1 lime
4 cups frozen white rice
2 tablespoons minced fresh cilantro
2 tablespoons minced red onion
1 avocado, diced
Hot sauce, as desired, optional
Kosher salt and freshly ground black pepper
Plantain chips, for serving

Steps:

  • In a ziptop bag, combine the shrimp with the bloody Mary mix, 1 teaspoon of the celery salt and half of the lime juice. Cover and refrigerate for 3 to 4 hours.
  • Cook the frozen rice according to the package instructions. Cool to room temperature.
  • Drain the shrimp and reserve 2 tablespoons of the liquid. Transfer the shrimp and the reserved liquid to a medium bowl. Add the cilantro, red onion, avocado, remaining 1/2 teaspoon celery salt, remaining lime juice, a few dashes of hot sauce if desired and salt and pepper to taste. Serve in bowls over the rice with plantain chips.

SHRIMP WITH SPICY BLOODY MARY SAUCE

This is no ordinary shrimp dip. the sauce is a zesty blend of diced tomatoes, worcestershire sauce, paprika and garlic, spiked with a touch of vodka. This recipe was created with the popular Bloody Mary drink in mind. Taking the ingredients I like in the drink, adding some consistency to the blend with the canned diced tomatoes and bottled chili sauce. Although the seasoning and tapatio lend a bit of heat, it doesn't overpower the other flavors. Serve in mini martini shot glasses gives your guests a personal and unique appetizer. Great for entertaining Shrimp and sauce can be made 1 day ahead. Cook time does not include chill time.

2 cups water
3/4 cup white wine
2 tablespoons white wine vinegar
2 1/2 tablespoons lemon juice (Fresh squeezed)
1 teaspoon salt
1 lb shelled deveined uncooked medium-large shrimp
1 teaspoon kosher salt
1 teaspoon red pepper flakes
1 (14 1/2 ounce) can diced tomatoes and green chilies, well-drained
1 cup chili sauce
2 garlic cloves, minced
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
1 teaspoon sugar
1 tablespoon light olive oil
1/4 teaspoon Old Bay Seasoning
1/8 teaspoon jalapeno seasoning salt
1/4 teaspoon smoked paprika
1/2 teaspoon regular paprika
1/4 teaspoon fresh ground pepper
1/4 teaspoon tapatio hot pepper sauce
1/2 teaspoon celery seed
1/8 teaspoon kosher salt
4 tablespoons peppar vodka, if desired (can use regular)

Steps:

  • Freeze a stainless steel bowl while preparing the shrimp and sauce.
  • In medium saucepan, combine water, wine, vinegar, lemon juice, red pepper flakes and salt; bring to a gentle simmer over medium heat. Add shrimp; cook 3 to 4 minutes or until shrimp turn pink. Strain; place shrimp in ice chilled bowl to cool. Cover and refrigerate until ready to serve.
  • Place all sauce ingredients except vodka in food processor or blender; process until sauce is almost smooth. Stir in vodka. Refrigerate at least 30 minutes. (Shrimp and sauce can be prepared up to 1 day ahead.) Serve shrimp with sauce.

1 (32 ounce) can tomato juice
4 tablespoons Bloody Mary dry spice mix (such as Lucille's®), divided
2 tablespoons olive oil
1 (8 ounce) can sliced water chestnuts, drained
3 scallions, cut into 1-inch pieces, or more to taste
1 jalapeno pepper, seeded and minced
3 cloves garlic, slivered
32 colossal shrimp, shelled and deveined with tail on

Steps:

  • Combine tomato juice and 2 tablespoons Bloody Mary spice mix in a large jar with a lid and shake vigorously for 15 seconds. Set aside.
  • Heat oil lin a large pan over medium heat. Add water chestnuts, scallions, jalapeno pepper, garlic, and about 2/3 the Bloody Mary-tomato juice mixture. Cook 2 minutes.
  • Place shrimp in a bowl and sprinkle with remaining Bloody Mary spice mix. Add them to the pan with the tomato juice mixture. Cook and stir until shrimp are opaque and curl slightly, 2 to 3 minutes.

For shrimp
1 pound medium shrimp in shell, peeled and deveined
1 1/2 cups thinly sliced celery (3 to 4 ribs)
1 cup thinly sliced scallions (about 6)
For sauce
1/2 cup ketchup
1/4 cup vodka (preferably Absolut Peppar)
1/4 cup fresh lemon juice
2 tablespoons bottled horseradish (not drained), or to taste
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco
Equipment: Chinese soupspoons
Garnish: diced avocado (optional)

Steps:

  • Prepare shrimp:
  • Bring a large saucepan of salted water (2 tablespoons salt for 2 quarts water) to a boil. Add shrimp, then remove from heat and let stand in water until cooked through, about 5 minutes. Drain in a colander and cool to room temperature, about 30 minutes. Cut shrimp into thirds and transfer to a large bowl with celery and scallions.
  • Make sauce:
  • Whisk together all sauce ingredients, 1/4 teaspoon pepper, and 3/4 teaspoon salt, or to taste.
  • Just before serving, stir sauce into shrimp mixture. Spoon 2 shrimp pieces with vegetables and sauce into each soupspoon and arrange spoons on a platter.

8 ounces mascarpone, at room temperature
3/4 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, such as Tabasco
2 tablespoons tomato paste
1 tablespoon ketchup
1 tablespoon prepared horseradish, liquid squeezed out
Zest of 1 lemon plus 1 teaspoon juice
1/4 teaspoon kosher salt
1/8 teaspoon celery seeds
1 head celery, cut into 4-inch sticks

Steps:

  • Put the mascarpone in the bowl of a food processor fitted with a metal blade and pulse until smooth. Scrape down the sides of the bowl with a rubber spatula and add the Worcestershire sauce, hot sauce, tomato paste, ketchup, horseradish, lemon zest and juice, salt and celery seeds. Process, scraping down the sides of the bowl as needed, until the dip is smooth, about 1 minute.
  • Transfer the dip to a serving bowl and serve with celery sticks for dipping.

14 ounces (400 grams) tomato passata
1 tablespoon extra-virgin olive oil
1 tablespoon tomato paste
1 tablespoon balsamic vinegar
1 tablespoon vegan Worcestershire sauce (no anchovies)
1/2 teaspoon celery salt
2 ounces vodka, optional
Dash of hot sauce, such as Tabasco, to taste
20 small pimento-stuffed green olives
3 sticks celery, strings peeled away and cut into 1/2-inch pieces
6 ounces good-quality store-bought focaccia, cut into 1/2-inch cubes

Steps:

  • For the dip: Put the tomato passata, oil, tomato paste, vinegar, Worcestershire, celery salt, vodka if using and hot sauce into a medium sauté pan or saucepan over medium heat and simmer until warmed through, about 5 minutes.
  • For the focaccia skewers: Meanwhile, thread an olive, piece of celery and cube of focaccia onto each cocktail skewer.
  • Pour the dip into a serving bowl, place on a board and arrange the dipping skewers next to it. The dip can be served warm or at room temperature.
