SPICY BLOODY MARYS

3 large celery stalks, plus additional stalks for serving
3 teaspoons prepared horseradish
2 teaspoons grated yellow onion
1/2 cup freshly squeezed lemon juice (2 lemons)
1 teaspoon Worcestershire sauce
1 teaspoon celery salt
1/2 teaspoon kosher salt
1/2 teaspoon Tabasco, or to taste
1 (46 ounce) can Sacramento tomato juice
2 cups vodka

Steps:

  • Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Add the horseradish, onion, lemon juice, Worcestershire sauce, celery salt, kosher salt, and Tabasco and puree it again. Pour the tomato juice into a 2 1/2-quart container, stir in the celery and seasonings mixture, then add the vodka and chill. Place a few ice cubes in each glass, pour in the Bloody Mary mixture, and garnish with a celery stick.

If you like your Bloody Mary spicy and decadent then you will love this recipe! I like my Bloody Mary to be thick with small bits so I tried this recipe without straining it and just loved it (I used a food processor)! It was also very good strained for those that do not like them thick. The Kahlua adds a nice richness and a slight sweetness that tones down the peppers. This IS a Spicy Bloody Mary and it IS wonderful! For a Bloody Mary that is not as spicy you can use regular V8 instead of the spicy blend. This recipe was created for RSC #10.

1/2 cup premium vodka
2 tablespoons finely chopped red onions
1 lemon, juice of
1/2 fresh jalapeno, seeded and coarsely chopped
1 teaspoon Dijon mustard
1 teaspoon capers
1 1/4 cups spicy hot V8 (use regular V8 to tone down the delicious heat)
1 teaspoon prepared horseradish
1/2 teaspoon celery salt
1/4 teaspoon fresh ground black pepper
1/2 teaspoon Worcestershire sauce
kosher salt (optional)
1 teaspoon Kahlua (optional)
1 dash Tabasco sauce, to taste
celery rib
lemon wedge (optional)

Steps:

  • In a blender or food processor combine vodka, red onions, lemon juice, jalapeño, Dijon mustard and capers and puree until smooth.
  • Add V8, horseradish, celery salt, ground pepper, Worcestershire, and salt and blend.
  • IF you like your Bloody Mary on the slightly thick side then pour into a tall glass filled with ice. Add Kahlua and Tabasco and stir.
  • IF you like your Bloody Marys on the thin side, then strain into tall glass filled with ice. Add Kahlua and Tabasco and stir.
  • Serve with lemon wedge and celery rib.

1 teaspoon sea salt
1 cup ice cubes
1 (1.5 fluid ounce) jigger vodka
¾ cup spicy tomato-vegetable juice cocktail (e.g., V-8)
2 dashes Worcestershire sauce
1 dash hot pepper sauce (e.g. Tabasco™)
salt and pepper to taste
1 stalk celery
2 stuffed green olives

Steps:

  • Salt the rim of a tall glass. To do so, pour salt onto a small plate, moisten the rim of the glass on a damp towel and press into the salt. Fill the glass with ice cubes.
  • In a cocktail mixer full of ice, combine the vodka, vegetable juice, Worcestershire sauce, hot pepper sauce, salt and pepper. Shake vigorously and strain into the glass. Garnish with a stalk of celery and olives stuck onto a toothpick.

We've made hundreds of thousands of bloody Marys over the decades at Prune, with 11 variations, and this classic base mix has been the stalwart, gleaming engine of them all. The lemon juice is what makes it so bright and zingy, and the Sacramento brand tomato juice is clean, with perfect body, never muddy or thick. Prepared horseradish keeps its bite and moisture just about forever, whereas fresh grated horseradish loses its potency almost immediately, leaving dead bits of pencil shavings in the glass instead - so resist the urge to "improve" the recipe. Worcestershire sauce adds greater depth to the umami already inherent in tomato, and the Tabasco brand hot-pepper sauce brings vibrancy with its high acidity but very manageable heat. This bloody Mary is as refreshing as a virgin affair as it is when spiked and garnished.

Steps:

  • Whisk together all the bloody Mary mix ingredients, transfer to a bottle and shake well just before using.
  • Fill tall glasses with ice; pour the bloody Mary mix on top.
  • If using the vodka, mix 1/4 cup vodka with 1/2 cup bloody Mary mix in a shaker over ice; shake for 10 hard strokes, strain and pour into each ice-filled glass.
  • Garnish with a leafy interior rib of celery, a wooden skewer of olives and a lemon wedge.

3 -5 serrano chilies, stemmed & coarsely chopped
1/2 cup fresh cilantro, stemmed & chopped
46 ounces tomato juice
8 ounces tequila or 8 ounces vodka
1 dash salt
1 dash ground pepper
celery rib

Steps:

  • In blender, mix lime juice, chiles, and cilantro, reserving several sprigs of cilantro for garnish. Add tomato juice and tequila, blend again. Strain into a tall pitcher.
  • Serve over ice, garnished with cilantro & celery.
