1/2 cup butter, softened
4 ounces crumbled blue cheese
2 tablespoons grated Parmesan cheese
1 tablespoon minced chives
1 teaspoon garlic powder
1 loaf (1 pound) unsliced French bread

Steps:

  • In a small bowl, combine the first 5 ingredients. Cut into bread to make 1-in.-thick slices, but don't cut all the way through, leaving slices attached at the bottom. Spread cheese mixture between slices. , Wrap loaf in a large piece of heavy-duty foil (about 28x18 in.). Fold foil around bread and seal tightly. Bake at 350° until heated through, about 20 minutes. Serve warm.

1 cup blue cheese, crumbled
1/2 cup mayonnaise
1 loaf Italian bread

Steps:

  • Blend margarine, bleu cheese and mayonnaise in a mixer or by hand until creamy and thoroughly incorporated.
  • Heat oven to 450 degrees.
  • Slice bread into 3/4" slices and spread each slice with cheese mixture.
  • Place on greased baking sheet and bake about 5-10 minutes or until top is bubbly and lightly browned.

2 tablespoons bleu cheese crumbles (recommended: Treasure Cove)
1/4 cup plain bread crumbs
2 teaspoons fines herbs (recommended: Spice Islands)
1/2 teaspoon olive oil, plus 1 tablespoon
4 (6-ounce) filet mignon steaks
Salt and freshly ground black pepper, for seasoning, plus 1/2 teaspoon black pepper
1/2 cup cognac
1 cup organic beef stock (recommended: Swanson)
1 teaspoon crushed garlic (recommended: Christopher)
1/4 cup frozen chopped onion (recommended: Ore-Ida)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil; set aside.
  • In a small mixing bowl, combine bleu cheese, bread crumbs, herbs, and 1/2 teaspoon of olive oil; set aside.
  • Add 1 tablespoon olive oil to a large saute pan and heat over medium-high heat. Season steaks with salt and pepper and to add pan, but do not crowd. Sear 1 to 2 minutes per side just to brown. Remove pan from heat and transfer steaks onto prepared baking sheet.
  • Top each steak with 1/4 of blue cheese mixture. Finish cooking steaks in preheated oven for 4 minutes for medium-rare, 6 minutes for medium, and 8 minutes for well done.
  • Return pan to stove and deglaze with cognac by scraping bits from bottom of pan. Add remaining ingredients and bring to a boil over high heat. Reduce liquid by half.
  • Serve steaks hot with sauce.

This easy skillet bread gets lightly crusty on the outside, but stays soft and fluffy inside. The dough is shaped into a log, then blue cheese is pressed into the dough before it's rolled into a spiral. The finished loaf smells amazing, and looks like it took way more effort than it did. Serve alongside soups or stews, or all on its own as a tasty snack.

1 cup/235 milliliters whole milk
4 tablespoons/55 grams unsalted butter (1/2 stick), plus more for greasing
1/2 cup/120 milliliters cool water
4 cups/510 grams all-purpose flour
2 1/4 teaspoons instant yeast
1 teaspoon kosher salt
7 ounces/200 grams creamy or firm blue cheese, crumbled
Heavy cream, for brushing

Steps:

  • In a medium saucepan, heat the milk and butter over medium until the butter is melted. Add the cool water and stir to combine. The mixture should feel just warm to the touch (about 95 degrees). If needed, let cool before using.
  • In the bowl of an electric mixer fitted with the dough hook attachment, combine the flour, yeast, salt and milk mixture on low speed, 3 minutes. Increase the speed to medium and continue to mix until smooth, another 3 minutes.
  • Transfer the dough to a lightly greased medium bowl and cover the bowl with plastic wrap. Let rise for 1 hour in a warm place. Generously grease a 10-inch cast-iron or oven-safe skillet with about 1 1/2 tablespoons unsalted butter.
  • On a lightly floured surface, roll the dough into a log about 22 inches long and 1 1/4 inches in diameter. Press the crumbled blue cheese into the log in a long stripe down the middle.
  • Starting at one end, roll the log into a spiral (the blue cheese should mostly be folded inside the spiral). Place the dough into the prepared skillet. Cover with plastic wrap and let rise in a warm place until noticeably puffy, 35 to 45 minutes.
  • Position a rack in the middle of the oven and one below. Heat the oven to 375 degrees. Uncover the dough, and brush the surface with heavy cream.
  • Place a baking sheet on the lower rack of the oven to catch any cheese that may bubble over. Bake the bread on the middle rack until the bread is golden-brown, 30 to 35 minutes. (It should have an internal temperature of 195 degrees in the thickest part of the loaf.)
  • Let cool for at least 15 minutes before serving. Serve warm or at room temperature.

1 cup (2 sticks) unsalted butter, room temperature
2 French bread baguettes or 4 sourdough flutes (2 pounds total), halved lengthwise
Chopped celery tops

Steps:

  • Blend cheese and butter in processor until smooth. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to room temperature before using.)
  • Preheat broiler. Broil bread crust side up until crisp. Turn and broil cut side until light brown. Spread cheese mixture over cut side of bread. Sprinkle liberally with pepper. Broil until cheese bubbles and begins to brown. Remove from broiler and sprinkle bread with celery. Cut crosswise into 1-inch pieces.
