1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1-1/2 cups whole milk
3 ounces semisweet chocolate, chopped

CAKE:
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, cubed
3/4 cup Dutch-processed cocoa
1 cup sugar
1 cup packed brown sugar
1 cup buttermilk
1 cup strong brewed coffee
1 teaspoon vanilla extract
2 large eggs
FROSTING:
8 ounces semisweet chocolate, chopped
1/2 cup unsalted butter, cubed
1/3 cup hot water
2 teaspoons light corn syrup
2 teaspoons vanilla extract

Steps:

  • In a small heavy saucepan, mix sugar, cornstarch and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Stir in chocolate until melted. Transfer to a bowl; stir in vanilla. Cool slightly, stirring occasionally. Press plastic wrap onto surface of pudding. Refrigerate, covered, 2 hours or until cold., Preheat oven to 325°. Line bottoms of two greased 8-in. round baking pans with parchment; grease paper. In a small bowl, whisk flour, baking powder, baking soda and salt. In a large saucepan, melt butter over medium heat. Add cocoa; cook and stir until blended. Stir in sugars. Remove from heat; stir in buttermilk, coffee and vanilla. Whisk in eggs, one at a time, until blended. Stir in flour mixture just until combined., Transfer batter to prepared pans. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., For frosting, in the top of a double boiler or a metal bowl over hot water, melt chocolate and butter; stir until smooth. Remove from heat. Whisk in hot water, all at once. Whisk in corn syrup and vanilla. Refrigerate 25-30 minutes or just until spreadable., Using a long serrated knife, cut each cake horizontally in half. Place a cake layer on a serving plate. Spread with half of the pudding. Repeat layers. Top with a third cake layer. Spread frosting over top and sides of cake., Crumble remaining cake layer; sprinkle over top and sides of cake, pressing lightly to adhere. Refrigerate leftovers.

This absurdly rich chocolate cake came to The Times in a 1991 article by Molly O'Neill about Ebinger's, the legendary chain of Brooklyn bakeries that closed its doors in 1972 after 74 years in business. Their wildly popular blackout cake, a three layer devil's food cake filled with dark chocolate pudding, slathered with chocolate frosting and covered with chocolate cake crumbs, had a cult-like following in its day. This recipe isn't authentic (the Ebinger family never shared the original recipe with the public), but Ms. O'Neill claims in her book, "The New York Cookbook: From Pelham Bay to Park Avenue, Firehouses to Four-Star Restaurants," that this version got the thumbs-up from "a panel of twelve Ebingerites." That's enough for us.

Steps:

  • Heat the oven to 375 degrees.
  • To make the cake, place the cocoa in a small bowl and whisk in the boiling water to form a paste. Combine the chocolate and milk in a saucepan over medium heat. Stir frequently as the mixture warms and the chocolate melts, about 3 minutes. Remove from heat. Whisk a small amount of the heated chocolate milk into the cocoa paste and then whisk the cocoa mixture into the milk mixture. Return to heat, stir for one minute, remove and cool until tepid.
  • In the bowl of a mixer, cream the sugar and butter together. Beat in the egg yolks one at a time and add the vanilla. Slowly stir in the chocolate mixture.
  • Combine the flour, baking powder, salt and baking soda. Using a spatula or a wooden spoon, slowly add the flour mixture to the chocolate mixture. In another bowl, whip the egg whites to form soft peaks and, using a rubber spatula, gently fold the egg whites into the batter.
  • Butter and lightly flour two 8-inch round cake pans and divide the batter between the two pans. Bake for 45 minutes and cool on a rack for 15 minutes. Gently remove the cakes from the pans and continue to cool.
  • While the cake is baking, make the filling. Put the cocoa into a saucepan and pour in the boiling water and place over low heat. Add the sugar and chocolate. Dissolve the cornstarch in the cold water to make a smooth paste. Whisk the cornstarch into the water and chocolate, add the salt and bring it to a boil, stirring constantly. Boil for one minute.
  • Remove the pan from the heat, whisk in the vanilla and the butter, and transfer the mixture to a bowl and refrigerate until cool.
  • Make the frosting. In a double boiler, melt the chocolate. Remove from heat and whisk in the butter, one tablespoon at a time, returning to heat if necessary to melt the butter.
  • Whisk in the hot water all at once and stir until smooth. Whisk in the corn syrup and the vanilla. Refrigerate for 20 to 30 minutes before using.
  • Assemble the cake. Use a sharp knife to slice each cake into two disks to form four layers. Set one layer aside. Place one layer on a cake round or plate. Generously swath the layer with filling. Add the second layer and repeat. Add the third layer. Quickly apply a layer of frosting to the top and the sides of the cake and refrigerate for 10 minutes. Meanwhile, crumble the remaining cake layer. Apply a second layer of frosting to the cake, press cake crumbs into the top and sides of the cake, and serve within 24 hours. Store in a cool place.

2 1/2 cups all-purpose flour, plus more for the pans
4 ounces semisweet chocolate, chopped
1 1/2 cups whole milk
1/2 cup unsweetened cocoa powder (not Dutch-process)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
1 1/2 cups packed dark brown sugar
1/2 cup granulated sugar
1 tablespoon pure vanilla extract
4 large eggs
For the frosting:
24 ounces semisweet chocolate, roughly chopped
1/3 cup light corn syrup
2 1/2 sticks (20 tablespoons) unsalted butter, cut into pieces, at room temperature
2 1/2 cups confectioners' sugar

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter two 8-by-2-inch-round cake pans and dust with flour, tapping out the excess. Combine the chocolate, milk and 1/2 cup water in a microwave-safe bowl. Microwave in 30-second intervals, stirring, until the chocolate is melted; whisk until smooth, then let cool. Meanwhile, sift the flour, cocoa powder, baking powder, baking soda and salt into a large bowl; set aside.
  • Beat the butter in a large bowl with a mixer on medium speed until creamy, about 4 minutes. Add the vegetable oil, brown sugar, granulated sugar and vanilla; beat until fluffy, about 4 more minutes. Add the eggs, one at a time, beating until incorporated. Reduce the mixer speed to low and add the flour mixture in three batches, alternating with the melted chocolate mixture; beat until just incorporated.
  • Divide the batter between the prepared pans and smooth the tops. Bake until a toothpick inserted into the centers comes out clean, 45 to 50 minutes. Let cool 20 minutes in the pans, then run a knife around the edges and invert onto a rack to cool completely.
  • Reheat the oven to 350 degrees F. Line a rimmed baking sheet with foil. Using a long serrated knife, cut each cake in half crosswise to make 4 layers. Crumble one of the layers into small pieces on the baking sheet. Bake until dry, about 20 minutes; let cool completely. Cover with parchment paper and crush with the bottom of a saucepan to make coarse crumbs; set aside.
  • Make the frosting: Combine the chocolate, corn syrup and 1/2 cup hot water in a large heatproof bowl set over a pot of simmering water; stir until melted, about 5 minutes. Remove the bowl from the pot and let cool 10 minutes. Transfer to a stand mixer fitted with the whisk attachment and start beating on high speed; beat in the vanilla, then the butter, 1 tablespoon at a time, until fluffy. Gradually add the confectioners' sugar and beat until creamy. Refrigerate, stirring occasionally, until thick enough to spread, about 10 minutes. (If the frosting is too thick, microwave in 10-second intervals for up to 30 seconds to soften.)
  • Put one cake layer on a platter; spread 1 heaping cup frosting on top. Add another cake layer, more frosting and the last cake layer. Cover the top and sides with the remaining frosting. Press the reserved cake crumbs all over the cake.

8 tablespoons (1 stick) butter, softened at room temperature
1/4 cup vegetable shortening
2 cups sugar
3 eggs
2 teaspoons pure vanilla extract
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups cake flour
1 cup whole, 2 percent fat, or 1 percent fat milk
Custard, recipe follows
3 cups water
2 1/2 cups sugar
1 tablespoon corn syrup
1 1/2 cups unsweetened cocoa powder
Scant 2/3 cup cornstarch
6 tablespoons (3/4 stick) unsalted butter, cut into pieces
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees.
  • Butter and flour 2 (9-inch) cake pans. Cut 2 circles of parchment paper or waxed paper to fit the bottoms of the pans, then press them in. In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter and shortening together. Add the sugar and mix until light and fluffy. One by one, add the eggs, mixing after each addition. With the mixer running at low speed, add the vanilla, cocoa, baking powder, baking soda, and salt and mix. With the mixer still running at low speed, add about 1/3 of the cake flour, then about 1/3 of the milk, and mix. Repeat with the remaining cake flour and milk and mix. Pour into the prepared pans and bake until dry and springy to the touch and a tester inserted into the center comes out clean (a few crumbs are okay), 30 to 35 minutes. Let cool in the pan for 15 minutes, then turn out onto wire racks and let cool completely, to room temperature. Using a long serrated knife, cut the cake layers in half horizontally. Reserving 3 halves for the cake, put the remaining half in a food processor, breaking it up with your hands. Pulse into fine crumbs.
  • To finish the cake, place a cake layer on a cake plate or serving platter (reserving the most even layer for the top) and spread with cooled custard. Top with another layer of cake, then custard, then the final layer of cake. Cover the top and sides of the cake with the remaining custard. Coat the cake with the cake crumbs. Chill until ready to serve, at least 2 hours. Serve the same day.
  • Pour 2 1/2 cups of the water, the sugar, corn syrup and cocoa powder into a large non-reactive saucepan and bring to a boil over medium-high heat, whisking occasionally. Meanwhile, in a small bowl, whisk the remaining 1/2 cup of water and the cornstarch. Whisk into the cocoa mixture in the saucepan and return the mixture to a boil, whisking constantly. Cook, whisking constantly, until very thick, 3 to 4 minutes. Remove from the heat and stir in the butter and vanilla. Pour into a bowl. Cover with plastic wrap, lightly pressing the plastic against the surface to prevent a skin from forming. Chill until firm, about 45 minutes.

The Blackout Cake was the creation of Ebinger's, a famous New York-based neighborhood bakery chain. An indecently rich, dark tower of chocolate, this cake has become something of a Holy Grail for many bakers. Cult-like fans went through Blackout withdrawal when the bakeries closed down and The Cake disappeared. Many have tried to rec-reate this cake; I feel this version comes close. It is a multi-stepped process (remember, this was a bakery specialty) but it can easily be broken down into components.

1/4 teaspoon kosher salt
2 tablespoons cocoa (preferably Dutch processed)
1 tablespoon plus 1 teaspoon cornstarch
1 egg
1 egg yolk
4 ounces semi-sweet chocolate, finely chopped
1 1/2 tablespoons butter, at room temperature
1 1/2 cups plus 1 1/2 tablespoons all-purpose flour
3/4 cup cocoa (preferable Dutch processed)
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
2 eggs
2 cups sugar
1/2 cup vegetable oil
1 cup buttermilk
1 cup brewed coffee, at room temperature
1 teaspoon vanilla extract
8 ounces semi sweet chocolate
2 1/2 tablespoons butter
1/4 cup hot brewed coffee
2 teaspoons corn syrup
1/2 teaspoon vanilla extract
3 dozen chocolate wafer cookies

Steps:

  • To make the Chocolate Pudding: Combine 1 cup milk with 2 tablespoons sugar in a small saucepan and bring to just under a boil.
  • In a mixing bowl, combine remaining sugar with salt, cocoa, and cornstarch. Whisk in remaining 1/2 cup unheated milk. Gradually whisk in hot milk and place entire mixture back into the saucepan. Heat, over medium heat, stirring, until mixture thickens and just starts to bubble.
  • Whisk in egg and egg yolk and cook, stirring, for 30 seconds. Remove from the heat and whisk in chopped chocolate and butter. When both are melted, strain pudding through a fine-mesh strainer, and cool. Cover with plastic and reserve in refrigerator.
  • To make the Cake: Preheat oven to 350 degrees F. Lightly butter 2 (8-inch) cake pans and line with parchment. Butter the parchment and flour pans, shaking out the excess.
  • Sift together flour, cocoa, baking soda, baking powder, and salt. Reserve.
  • In a mixer with a whip attachment, beat eggs and sugar until thick and lemon-colored. Beat in vegetable oil. Alternately add dry ingredients with buttermilk, scraping the bowl once or twice. Add the coffee and vanilla to form a thin batter. Divide between prepared cake pans.
  • Bake until a toothpick inserted in the center of a cake comes out clean, about 40 to 45 minutes. Cool in pan for 15 minutes. Invert onto cooling racks, peel off paper and cool completely.
  • When cool, split each cake in half with a serrated slicing knife. Reserve 1 layer for another use. Spread bottom layer with half of the reserved Chocolate Pudding. Place second layer on top and spread with remaining pudding. Top with last cake layer.
  • To make the Icing: Over a double boiler, melt chocolate with butter. Remove from heat, whisk in brewed coffee, corn syrup, and vanilla. Place icing over an ice bath and chill, whisking often until the mixture is of soft but a spreadable consistency. Working quickly, ice the sides and top of cake.
  • In a food processor, pulse the cookies into crumbs. Press the crumbs onto sides and top of cake.
  • Serve cake at room temperature. If holding for more than 2 hours, store in refrigerator for up to 48 hours, but bring to room temperature before serving.

1 cup milk
4 ounces butter, unsalted,at room temperature
1/4 cup vegetable shortening

1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups milk
3 ounces unsweetened chocolate, chopped
1 teaspoon vanilla extract
4 ounces unsweetened chocolate, chopped
4 ounces butter
1/8 teaspoon vanilla extract
3 eggs
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour 2-9" cake pans.
  • Make the cake:.
  • Stir the cocoa with with some of the milk to form a paste.
  • Stir in the rest of the milk and beat with a whisk until the mixture is smooth.
  • Set aside.
  • In the bowl of an electric mixture, combine the butter, shortening, sugar, eggs, vanilla.
  • Beat for one minute, or until the mixture is fluffy.
  • Sift together the flour, baking powder, baking powder and salt.
  • Add the mixture, alternating with the chocolate mixture, to the contents of the bowl, beating between additions, beginning and ending with flour.
  • Beat only until the dry ingredients are absorbed.
  • Divide the batter between the 2 cake pans, and smooth with a spatula.
  • Bake for 35-40 minutes until the cake shrinks from the sides of the pans, and the top springs back when gently pressed with a fingertip.
  • Do not overbake!
  • Cool on wire racks for 10 minutes, then carefully invert onto racks.
  • Turn right-side up and let cool completely.
  • Make the pudding:.
  • Combine sugar, cornstarch and salt in a small, heavy saucepan.
  • Gradually add the milk, mixing thoroughly with a whisk.
  • Add the chocolate.
  • Place over moderate heat and cook, stirring constantly, until the mixture thickens and bubbles; about 3 minutes.
  • Remove from heat and stir in the vanilla.
  • Pour into a small bowl, and put plastic wrap or wax paper directly on the surface of the pudding to prevent a skin from forming.
  • Cool.
  • Make the frosting:.
  • Melt the chocolate in the top of a double boiler.
  • Remove from heat and cool slightly.
  • In a medium bowl beat the butter, vanilla and eggs until well blended.
  • The mixture will not blend completely- Don't worry!
  • Gradually beat in the sugar, about 2 T at a time, beating well after each addition.
  • Beat in the melted chocolately.
  • Chill the frosting while assmebling the rest of the cake, about 15 minutes.
  • Assembly:.
  • Using a serrated knife, cut each cake layer in half horizontally.
  • Place one of the layers in the bowl of a food processor and pulse to make crumbs.
  • Set Aside.
  • Sandwich the remaining 3 layers with the chocolate pudding filling.
  • I work on a cardboard cake circle, or the bottom of a springform pan.
  • Frost the top and sides of the cake with the chocolate frosting.
  • Working over a baking sheet, hold the cake in the palm of your hand.
  • Using your other hand, press the cake crumbs all over the top and sides of the cake.
  • Pick up any crumbs that drop, and press them back on.

1 cup whole milk
1/3 cup sugar

1 teaspoon vanilla extract
1 large egg
2 ounces semisweet chocolate, finely chopped

Basic Chocolate Cake, recipe follows, baked and cooled
Cooking spray
1 cup unsweetened cocoa powder (natural or Dutch process)
2 1/2 cups all-purpose flour
2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 large eggs, at room temperature
3/4 cup vegetable oil
1/2 cup sour cream
2 teaspoons vanilla extract

Steps:

  • Make the filling: Bring the milk to a simmer in a medium saucepan over medium heat. Whisk the sugar, cornstarch, vanilla and egg in a medium heatproof bowl until smooth. Gradually whisk half of the hot milk into the sugar mixture, then return to the pan with the remaining milk. Reduce the heat to medium low and cook, whisking constantly, until the mixture boils and thickens, 2 to 3 minutes. Transfer to a bowl (strain through a fine-mesh sieve if it looks lumpy), then stir in the chocolate until melted. Press plastic wrap directly onto the surface and refrigerate until cold, at least 1 hour.
  • Meanwhile, make the ganache: Put the chocolate and salt in a large heatproof bowl. Bring 1 1/2 cups heavy cream to a simmer in a saucepan over medium heat; pour over the chocolate and let sit 5 minutes, then whisk until smooth. Pour 3/4 cup of the ganache into a liquid measuring cup and set aside at room temperature. Refrigerate the remaining ganache in the bowl until thick but not set, about 1 hour.
  • Assemble the cake: Put 1 cake layer on a platter; spread the filling on top, stopping about 1/2 inch from the edge. Top with the second cake layer and press down gently.
  • Add the remaining 2 tablespoons heavy cream to the chilled ganache and beat with a mixer on medium speed until just fluffy, about 1 minute (do not overbeat). Frost the whole cake with the whipped ganache. Pour the room-temperature ganache on top, letting it drip down the sides. Let set before slicing, about 30 minutes.
  • Preheat the oven to 350 degrees F. Coat two 9-inch-round cake pans with cooking spray and line the bottoms with parchment paper.
  • Whisk the cocoa powder and 1 1/2 cups boiling water in a medium bowl until smooth; set aside. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl until combined. Add the eggs, vegetable oil, sour cream and vanilla and beat with a mixer on medium speed until smooth, about 1 minute. Reduce the mixer speed to low; beat in the cocoa mixture in a steady stream until just combined, then finish mixing with a rubber spatula. (The batter will be thin.)
  • Divide the batter between the prepared pans and tap the pans against the counter to help the batter settle. Bake until a toothpick inserted into the middle comes out clean, 30 to 40 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.

140g unsalted butter , plus extra for greasing
100ml vegetable oil
140g buttermilk
100ml coffee , made with 1 tsp espresso powder
2 large eggs , at room temperature
1 tsp vanilla extract
250g light muscovado sugar
250g plain flour
1 tsp bicarbonate of soda
2 tsp baking powder
50g cocoa powder
250g golden caster sugar
500ml full-fat milk
140g chocolate , 85% cocoa solids, broken into cubes
50g cornflour
2 tsp espresso powder
2 tsp vanilla extract

Steps:

  • Make the custard first as it needs to chill. Put all the ingredients, except the vanilla, in a large pan and bring gently to the boil, whisking all the time, until the chocolate has melted and you have a silky, thick custard. It will take 5-7 mins from cold. Stir in the vanilla and a generous pinch of salt, then scrape the custard into a wide, shallow bowl. Cover the surface with cling film, cool, then chill for at least 3 hrs or until cold and set.
  • Heat oven to 180C/160C fan/gas 4. Grease then line the bases of 2 x 20cm sandwich tins. Melt the butter in a pan, then remove from the heat and beat in the oil, buttermilk, coffee and eggs. In a large bowl, whisk the dry ingredients togetherplus 1/4 tsp salt (saves sifting) and squish any resistant lumps of sugar with your fingers. Tip in the wet ingredients and whisk until smooth.
  • Divide the batter between the prepared tins and bake for 25-30 mins until risen and a skewer inserted into the middle of the cakes comes out clean. Cool for 10 mins, then transfer to a rack to cool completely, parchment-side down.
  • Remove the parchment linings from the cakes. If the cakes are domed, trim them flat. Now cut each cake across the middle using a large serrated knife. Put your least successful layer and any trimmings into a processor and pulse it to crumbs. Tip into a large bowl.
  • Sit one layer on a cake plate and spread it with a quarter of the custard. Sandwich the next layer on top, add another quarter of the custard, then top with the final layer of cake. Spoon the remaining custard on top of the cake, then spread it around the top and down the sides until smooth. Chill for 15 mins to firm up the custard again.
  • Hold the cake over the bowl containing the crumbs, then sprinkle and gently press a layer of crumbs all over the cake. Brush any excess from the plate. You'll have some crumbs left. Chill for 2 hrs, or longer, before serving, and eat it cold. Can be made up to 2 days ahead. The cake gets fudgier and more enticing the longer you leave it.

Not sure if it's the same one, but I have never come across another recipe for Blackout cake, so if this isn't it, it must be awfully close! A great, sinfully rich cake! 1 1/4 cups softened butter
3 cups sugar
3 eggs
2 teaspoons vanilla extract
4 ounces unsweetened chocolate, melted
3 cups flour
3 teaspoons baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1 1/3 cups boiling water
3/4-1 cup roasted slivered almonds
18 ounces semi-sweet chocolate chips
1 1/2 cups heavy cream
2 tablespoons butter, cut up
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour 2 9-inch cake pans.
  • Tap out excess flour.
  • In a large bowl beat together butter and sugar until light and fluffy, about 1-2 minutes.
  • Add eggs and vanilla extract; beat till well blended.
  • Add melted chocolate and beat 1-2 minutes.
  • Mix together flour and baking soda and salt.
  • Add to chocolate mixture in 2 additions alternately with the buttermilk.
  • Beat till well blended.
  • On low speed, add boiling water and beat till smooth.
  • (Batter will be thin.) Pour into prepared pans.
  • Bake for 35-40 minutes or until tester inserted in center comes out clean.
  • Let cool in pans for 10 to 15 minutes.
  • Turn out onto wire racks and cool completely.
  • For Ganache:Melt chocolate chips and cream together and stir until smooth.
  • Stir in butter and vanilla.
  • Cover and refrigerate for 1 to 1 1/2 hours until ganache holds its shape and is thick enough to spread on cake layers.
  • Cover one layer with a little more than 1/3 of the ganache.
  • Top with second layer; frost top and sides with remaining ganache.
  • Press almond slivers into sides of cake.
  • Refrigerate 3 to 4 hours for ganache to firm back up for easier slicing.

1 1/2 cups all-purpose flour
1/2 cup Dutch-processed cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups soymilk
1/2 cup canola oil
1 (10 ounce) jar raspberry preserves (reserve 1/2 cup for the batter)
2 teaspoons vanilla extract
1 1/4 cups sugar
3/4 cup coffee creamer (if soy creamer is unavailable, soy milk will do)
6 tablespoons non-hydrogenated margarine
10 ounces semi-sweet chocolate chips (1 cup and 2 tablespoons)
fresh raspberry, for decorating and yumminess

Steps:

  • In a saucepan over medium heat, bring the soy creamer to a low boil. Add the margarine and melt, turn off the heat, and stir in chocolate chips until smooth. Let sit for at least one hour. It should have a pourable consistency at this point. If you want a spreadable consistency then refrigerate for an hour.
  • Preheat oven to 350. Spray two 8-inch round springform cake pans with cooking spray. If you don't have springform, then use parchment paper rounds on the bottom of two ordinary 8-inch round cake pans to prevent sticking.
  • Sift together the four, cocoa powder, baking power, baking soda, and salt. Combine the rice milk, oil, 1/2 cup of the preserves, the vanilla, and the sugar in a large bowl and mix with hand mixer or strong fork. The jam should be mostly dissolved with the rest of the ingredients; some small clumps are okay. Add the dry ingredients to the wet in batches and mix until everything is incorporated. Divide the batter between the prepared pans and bake at 350F for 40-45 minutes, or until a tooth pick or knife comes out clean. Remove from oven and let cook in pans.
  • When the cakes have cooled fully, spread one layer of cake with a thin layer of the reserved raspberry preserves (give the preserves a quick mix with a strong fork to get a spreadable consistency); spread a layer of chocolate frosting on top of the preserves. Place the other layer of cake on top and spread its top with preserves. Carefully spread the chocolate frosting over the top, then ice the sides. I like to put a circle of fresh raspberries around the circumference of the top.

1 1/2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk, room temperature
1/2 cup hot coffee
2 cups heavy cream
1/2 pound bittersweet chocolate, finely chopped (recommended: Valrhona)
1/2 pound semisweet chocolate, finely chopped (recommended: Callebaut)
1/2 cup toffee bits
6 egg yolks
3/4 cup sugar
1/2 cup light corn syrup
2 cups (1 pound) unsalted butter, at room temperature, cut into small pieces
1 tablespoon vanilla extract
1/2 cup sweetened coconut milk (recommended: Coco Lopez)
2 pounds thick flaked unsweetened coconut (can be found at health food stores)

Steps:

  • Set a rack in the middle of the oven and preheat to 350 degrees. F. Lightly grease 2 (9-inch) cake pans and line the bottoms with disks of parchment paper. Sift the flour, cocoa, ancho chile powder, baking soda, baking powder, and salt onto a sheet of waxed paper. Sift again.
  • Place butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and beat at high speed until smooth and fluffy. Add the eggs, 1 at a time, beating until each is incorporated. Continue beating, scraping down the sides of the bowl if necessary, until light and fluffy, about 5 more minutes. With the mixer on low speed, beat in 1/3 of the flour mixture. Beat in the vanilla, half of the buttermilk and half of the coffee, then another 1/3 of the flour mixture. Beat in the remaining buttermilk and coffee, then the remaining flour mixture.
  • Spread the batter evenly in prepared pans. Bake for 30 minutes, or until the centers spring back when lightly pressed. Cool the cakes in the pan on a wire rack.
  • Bring heavy cream to a simmer in a small saucepan. Place chocolate in a large bowl, pour heavy cream over and let sit for 1 minute. Gently whisk until combined.
  • Place the ganache over a bowl filled with ice water to chill slightly, whisking occasionally. Remove ganache from the ice and whip with a whisk until light and fluffy. Fold in the toffee bits.
  • In the bowl of a stand mixer fitted with a wire whip attachment, beat the egg yolks at medium-high speed until creamy and pale yellow, about 5 minutes.
  • In a nonstick saucepan, combine the sugar and corn syrup. Place over medium-high heat and bring to a full rolling boil without stirring and cook until it reaches soft-ball stage (238 to 242 degrees F) on a candy thermometer. Immediately pour the mixture into a buttered heat proof measuring cup to halt the cooking.
  • Add a small amount of the syrup to the beaten egg yolks, turn on the mixer to high speed, and beat for about 5 seconds. Continue stopping the mixer, adding syrup, and beating in the same manner until all of the syrup is incorporated and the mixture is cooled completely.
  • Add the butter, 1 piece at a time, and beat until incorporated before adding the next piece. When all of the butter has been blended in, add the vanilla and coconut milk and continue beating until combined.
  • Slice each cake in half horizontally to make 4 layers total. Place the first layer down and spread with a thin layer of the Ganache. Repeat with the remaining cake layers and ganache, ending with a cake layer.
  • Spread a thin layer of the buttercream over the entire cake. This is called a crumb coat. Chill the cake for about 30 minutes. Frost entire cake with the remaining buttercream. Press coconut into the sides of the cake.

Steps:

  • For the Pudding: Melt chocolate and butter in bowl over simmering water.
  • In medium bowl, whisk cornstarch, cocoa, and 1/4 cup of the sugar into 1/2 cup of the milk.
  • Then whisk in eggs and yolks.
  • In saucepan bring 2 cups of milk and 1/4 cup of sugar just to a simmer.
  • Temper with egg mixture, return all to pan and whisk constantly until bubbles boil up for 3 seconds.
  • Remove from heat and strain.
  • Thoroughly mix in melted chocolate.
  • Cover surface with plastic.
  • Cool for 1 hour then refrigerate.
  • For the Cake: Preheat oven to 350.
  • Spray and line with parchment 1 8-inch cake pan.
  • Tripple sift together: flour, cocoa, baking soda, baking powder and salt.
  • Cream butter and sugar.
  • Add eggs one at a time until incorporated.
  • Beat until light and fluffy- 6 minutes Mix liquid ingredients together.
  • Alternately beat in wet and dry ingredients.
  • Pour into cake pan.
  • Bake until tests done.
  • About 30-40 minutes.
  • Cool.
  • Make ganache.
  • Let sit until spreadable.
  • Turn cake out of pan.
  • Trim top to flatten (save scraps) and slice into 3 layers.
  • Toast scraps on sheetpan for 5 minutes, cool and process coarsley in food processor.
  • Spread pudding between layers, frost with ganache and coat sides with crumbs.

1/4 cup cornstarch
1/2 teaspoon table salt
2 cups half-and-half
1 cup whole milk
6 ounces unsweetened chocolate, chopped

1/2 teaspoon baking soda

8 tablespoons unsalted butter

1 cup white sugar
1 cup light brown sugar, packed
2 eggs
1 teaspoon vanilla extract

Steps:

  • Combine sugar, cornstarch, salt, half-and-half and milk in a saucepan. Whisk over medium heat. Add chocolate and whisk 2-4 minutes until chocolate melts and edges begin to bubble.
  • Remove from heat and whisk in vanilla extract. Scrape into a bowl. Press a layer of parchment paper or plastic wrap right against the surface of the pudding to prevent a skin from forming. Refrigerate at least 4 hours until cold.
  • Preheat oven to 325°F Butter and flour two 9" cake pans.
  • In a large bowl, whisk together flour, baking powder, baking soda and salt.
  • Melt butter over medium heat. Add cocoa powder and stir well. Cook 1 minute. Remove from heat and whisk in coffee and buttermilk. Add white sugar and brown sugar and whisk until sugar is dissolved. Add eggs and vanilla and whisk well. Whisk in dry mixture, a little at a time, until fully incorporated; do not overmix.
  • Divide batter evenly between the prepared cake pans. Bake in preheated oven until a toothpick comes out bearing just a couple of crumbs, 30-35 minutes. Cool in pans 15 minutes, then invert onto cooling racks and allow to cool completely.
  • Divide each layer in half horizontally, making 4 equal layers. Take the "ugliest" looking layer, and crumble into a bowl, making fairly large crumbs.
  • Using an offset spatula, spread 1 cup pudding over bottom layer. Top with next layer, then another 1 cup of pudding, then the last layer. Frost top and sides of cake with remaining pudding. Be sure to push pudding in between layers when frosting sides. Sprinkle top and sides with cake crumbs.

Steps:

  • Preheat oven to 350.
  • For the crust: Grease two 9" round cake pans and dust with cocoa.
  • Crush oreos and combine with butter.
  • Pat into one of the pans.
  • Bake 5 minutes.
  • Set both pans aside.
  • For the cake: Combine Oreo crumbs, flour, baking powder, and baking soda.
  • Set aside Cream butter and sugar.
  • Add egg yolks, sour cream, melted chocolate and vanilla.
  • Add the water and stir till blended.
  • Beat at medium speed for one minute.
  • Whip egg whites to soft peak.
  • Fold into batter by hand.

  • For the filling: Combine all ingredients and beat until of spreading consistency Place the cake layer with the cookie crust on a plate.
  • Spread filling, reserving some for garnish.
  • Top with the other cake.
  • For the frosting: Beat the frosting ingredients together until of spreading consistency Frost the cake.
  • For the garnish: Press additional crushed oreos on sides of cake.

Steps:

  • Preheat the oven to 375 degrees.
  • Butter and flour 2 (9-inch) cake pans. Cut 2 circles of parchment paper or waxed paper to fit the bottoms of the pans, then press them inches In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter and shortening together. Add the sugar and mix until light and fluffy. One by one, add the eggs, mixing after each addition.   • Custard: Pour 2 1/2 cups of the water, the sugar, corn syrup and cocoa powder into a large non-reactive saucepan and bring to a boil over medium-high heat, whisking occasionally. Meanwhile, in a small bowl, whisk the remaining 1/2 cup of water and the cornstarch. Whisk into the cocoa mixture in the saucepan and return the mixture to a boil, whisking constantly. Cook, whisking constantly, until very thick, 3 to 4 minutes. Remove from the heat and stir in the butter and vanilla. Pour into a bowl. Cover with plastic wrap, lightly pressing the plastic against the surface to prevent a skin from forming. Chill until firm, about 45 minutes.
  • To finish the cake, place a cake layer on a cake plate or serving platter (reserving the most even layer for the top) and spread with cooled custard. Top with another layer of cake, then custard, then the final layer of cake. Cover the top and sides of the cake with the remaining custard. Coat the cake with the cake crumbs. This chocolate blackout cake is a chocolate lover's dream! It's made with soft, incredibly moist cake layers that are filled with chocolate pudding, then filled and frosted with milk chocolate ganache.

Nonstick baking spray
2 1/2 cups (500 grams) sugar
2 sticks (1 cup / 226 grams) unsalted butter, at room temperature
4 large eggs, at room temperature
1 cup (237 grams) hot water
1 cup (240 grams) buttermilk, at room temperature
1 cup (100 grams) black cocoa
3 cups (360 grams) self-rising cake flour
5 cups (750 grams / about two 12-ounce bags) milk chocolate chips
1 cup plus 1 tablespoon (250 grams) heavy cream, at room temperature
One 3.9-ounce (110-gram) package instant chocolate pudding
1 1/2 cups (367 grams) cold whole milk

Steps:

  • For the chocolate cake layers: Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line three 8-inch round cake pans with parchment and spray with nonstick spray.
  • Combine the sugar and butter in the bowl of a stand mixer fitted with the whisk attachment and mix on high speed until light in color, about 1 minute.
  • Add the eggs, 2 at a time. Mix on medium-high speed after each addition until fully incorporated.
  • In a medium bowl, combine the hot water and buttermilk. Add the black cocoa and whisk until smooth.
  • Add 1 cup of the cake flour to the mixture in the stand mixer and mix on low speed, scraping down the sides of the bowl with a rubber spatula as necessary, until the flour is fully incorporated.
  • Pour in half of the buttermilk-cocoa mixture, and gently pulse the mixture to incorporate the liquid (or you'll end up splattering it all over your kitchen!). Repeat with 1 more cup of the cake flour and the remaining cocoa mixture. Add the remaining 1 cup cake flour and mix on low speed just until incorporated.
  • Pour an equal amount of the batter between the prepared cake pans. (I weigh the pans on a kitchen scale to ensure each one has exactly the same amount.)
  • Bake 2 pans on the upper rack and 1 on the lower rack, switching and rotating the pans halfway through, until a toothpick inserted in the center comes out clean, 31 to 33 minutes.
  • Let the cakes cool in the pans for about 10 minutes, then run an offset spatula around the edge of each pan to help release the cake.
  • Place the pans in the freezer for about 45 minutes to speed up the cooling. Once the cakes are fully cooled, carefully invert each cake onto a plate and remove the parchment.
  • Use a serrated knife to level the top of each cake and place the trimmings in a small bowl. Break up the trimmings into small crumbs with a fork, cover with plastic wrap and reserve to decorate the cake.
  • For the chocolate ganache frosting: While the cake layers bake and cool, place the chocolate chips in a medium heatproof bowl and set aside.
  • Heat the cream in a small saucepan over medium-high heat just until it begins to bubble. Pour over the chocolate, making sure all the chocolate is submerged. Let sit for about 2 minutes, letting the heat from the cream melt the chocolate.
  • Carefully stir the mixture with a rubber spatula until the ganache is silky smooth and all the chocolate is melted. (If any bits of chocolate still aren't melted, microwave the ganache for 30 seconds at a time, until the cream and chocolate are fully incorporated. Cover with plastic wrap and set aside.
  • For the chocolate pudding filling: Combine the instant pudding mix and cold milk in a medium bowl. Whisk until the mixture thickens, about 1 minute. Cover with plastic wrap and set aside.
  • To assemble the chocolate blackout cake: Add a dab of ganache to a greaseproof cake board to help the first cake layer to adhere. Top with 1 cake layer. Spread an even layer of ganache over the top with an offset spatula. Using a rubber spatula, spread 1/4 of the chocolate pudding over the ganache. Top with the second cake layer and repeat spreading the ganache and pudding. Finally, top with the third cake layer. Reserve the remaining pudding for decorating the cake.
  • Cover the top and sides of the cake in a thin coating of ganache, then smooth with a bench scraper. Refrigerate the cake for 10 minutes or freeze for 5 minutes, until the ganache is firm to the touch.
  • Cover the cake in a second, thicker coating of ganache, then smooth again with a bench scraper. If desired, use an icing comb to create ridges around the sides of the cake.
  • Decorate the cake, as desired. I cover the top of the cake with some of the reserved cake crumbs and pudding then place some more crumbs around the base. I also add a ganache drip around the top for fun!

2 1/4 cups cake flour plus more for dusting
1/4 cup solid vegetable shortening
2 cups sugar
3 large eggs
2 tsp vanilla extract
3/4 cup unsweetened (not Dutch Processed) Cocoa powder
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup milk
Filling:
3 cups water
2 1/2 cups sugar
1 tbsp light corn syrup
1 1/2 cups cocoa powder (see above)
2/3 cup cornstarch
6 tbsp unsalted butter, cut into cubes
1/2 tsp pure vanilla extract
Pinch of salt

Steps:

  • Cake: Preheat oven to 375 Butter two 9 in round cake pans and coat lightly with flour Line bottom with parchment In a standing mixer fitted with the whisk, beat the 1 stick of butter with the shortening until creamy. Add the sugar and beat at medium speed until fluffily about 3 minutes. Add the eggs, one at a time, beating well between additions. Add the vanilla. At very low speed, beat in the cocoa powder, baking soda, baking powder and salt. Add the 2 1/4 cups of cake flour and the milk in 3 separate additions. Divide the cake batter between pans and bake in center of oven for 30 min. Let cakes cool. Filling: In a large sauce pan, combine 2 1/2cups of the water with the sugar, corn syrup and cocoa powder and bring to boil, whisking constantly. In a bowl, whisk the cornstarch with the remaining 1/2 cup of water until smooth, whisk into the cocoa mixture. Cook over moderate heat, whisking until very thick, 3 min. Off the heat, whisk in the butter, vanilla and salt. Place a sheet of plastic onto the surface and let cool, and refrigerate, 45 min. Half each cake layer. Break up less attractive top cake layer and transfer to a food processor, and pulse to crumbs. Set one cake bottom on cake plate and spread with 1 1/2 cups filling. Add another layer and repeat. Add final layer and cover entire cake with remaining filling. Pat the crumbs all over the cake. Refrigerate 1 hour.

1/8 teaspoon salt
2 tablespoons sugar

1 large egg, at room temperature
1 cup heavy cream
2 cups sugar
2 cups king arthur unbleached all-purpose flour
2 tablespoons cake enhancer instant Clear Jel or 2 tablespoons cornstarch
3/4 cup double dutch dark cocoa or 3/4 cup Dutch-processed cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon espresso powder, for enhanced chocolate flavor (optional)
4 large eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
1 1/4 cups water
1 1/2 cups chocolate chips or 1 1/2 cups chopped semisweet chocolate
3/4 cup heavy cream

Steps:

  • To make the filling: Place the chocolate chips, salt, sugar, and espresso powder in a blender or food processor and pulse until finely ground.
  • Add the egg and pulse just until the mixture is smooth.
  • Heat the cream to just below a boil, with small bubbles forming around the edge of the saucepan (or microwave-safe bowl).
  • Turn on the blender or processor, and slowly add the cream. Scrape down the sides of the container if necessary. Add the flavoring of your choice and pulse to blend.
  • Pour the pudding into a shallow bowl, and refrigerate it until chilled and thickened, 2 hours to overnight.
  • Preheat the oven to 350°F Lightly grease two 8" x 2" round cake pans. Line them with 8" parchment circles, if desired, and grease the parchment; this step will ensure your cake's crumble-free turnout from the pan.
  • To make the cake: Whisk together the dry ingredients.
  • Add the eggs, oil, and vanilla; beat on medium speed for 2 minutes, scraping the bottom and sides of the bowl.
  • Stir in the water; the batter will be thin.
  • Pour the batter into the two prepared pans.
  • Bake the cakes for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cakes from the oven. Cool them for 15 minutes, then turn them out of the pans to cool completely on a rack.
  • To make the icing: Combine the cream and chocolate in a microwave-safe bowl or in a saucepan. Heat until the cream is steaming and showing small bubbles around the edge.
  • Remove the chocolate/cream from the microwave or burner, and stir until the chocolate is melted and the mixture becomes completely smooth, with no lighter areas remaining visible.
  • Refrigerate the icing for 30 minutes. Beat the chilled icing briefly, until it thickens a bit and becomes spreadable.
  • To assemble the cake: Cut the domed tops off both cake layers; these will become your crumb coating.
  • Place one layer on a serving plate. For best presentation, lay strips of parchment around the edge of the plate before laying the cake on top; these will catch the inevitable icing drips, and can be removed once you're done icing the cake.
  • Top the cake with the filling, spreading it evenly to the edges.
  • Center the second layer of cake atop the filling.
  • Spread the icing over the top and onto the sides of the cake.
  • Crumble the reserved cake, and gently press it onto the top and sides of the assembled cake.
  • Serve immediately, or within a couple of hours. For longer storage, refrigerate. This cake is best served the same day it's made, or within 24 hours. Freeze, well-wrapped, for longer storage. You may also choose to freeze individual slices - for those times when you HAVE to have a piece of chocolate cake!

3 egg yolks (reserve whites)
2/3 cup sour cream
2 1/2 ounces semi sweet choc, melted

3 egg whites beaten to soft peaks
Filling:
5 Tablespoons softened butter
2 1/2 cups powdered sugar
3/4 teaspoon vanilla
1/4 cup milk (approx)
Frosting:
5 Tablespoons softened butter
2 1/3 cups powdered sugar
1/4 cup dutch dark cocoa
1/2 teaspoon vanilla
1/4 cup milk (approx)

Steps:

  • Grease 2 9-in. cake pans and line with parchment or waxed paper Crust: Crush Oreos and combine crumbs with melted butter. Pat into the bottom of ONE OF THE PANS ONLY bake at 350* 5 minutes ~ set aside (this will be the bottom layer of the cake) Cake: Combine coarsely crushed Oreos, flour, baking powder and baking soda ~ set aside Cream butter & sugar until fluffy ~ beat in egg yolks, sour cream, melted chocolate & vanilla Add water all at once and stir to combine. Fold in dry ingredients ~ beat at medium speed for 1 minute (don't add dry ingredients to water and allow it to sit, the liquid will decompose the oreos) Fold in beaten egg whites by hand Divide batter between the two pans ~ one with cookie crust, one without Bake at 350* for 15 to 25 minutes. The layer with crust will take about 5 minutes longer to bake. Better to underbake than overbake. Done when it just starts to spring back. Cool completely before adding filling and icing.
