BACON AND TOMATO GRILLED CHEESE SANDWICH
My family loves these sandwiches, they are especially great using garden tomatoes, I make them using Pepper Jack cheese but American cheese slices works good also, you can adjust the butter amount to suit taste.

Steps:
- Spread about 1 tablespoon butter into the bottom of a large skillet (or just leave some fat in the pan from the bacon).
- Spread 1 tablespoon (can use more) onto one side of each slice of bread.
- Place the 4 slices of bread butter-side down onto a large skillet or flat grill.
- Top with 1 slice of cheese, 2 slices of tomato and 2 slices cooked bacon, then 1 more slice of cheese.
- Cover with a slice of bread (butter-side facing outside).
- Fry over medium turning once with a spatula until golden brown on both sides.

One of my favorites. I have two rules for this sandwich. Always use Pepperidge Farm Original White Bread and make two per person as one is never enough.

- Pre-heat broiler.
- Place bread on a broiler safe pan. Top each slice of bread with a slice of cheese then a slice of tomato. Depending on how big your tomato slice is you may want to put on two but keep it a single layer of tomato. Cut each slice of bacon into 2 pieces. Then lay 3 of the pieces on each sandwich. Broil until bacon is crisp and cheese melted. Bread and cheese may get a little burnt. That makes it better!
- Note: Originally I put raw bacon on the sandwich and cooked it all the way under the broiler. Now I cut the strips in half and partiality cook in micro-wave and then put on sandwich and broil to finish cooking.

- 1. Get out your blackened seasonings or make your own. Heat up your grill or your frying pan with some butter.
- 2. Season generously both sides of your tomatoes and place them on the grill or in the pan.
- 3. Fried up proscuitto slices or bacon
- 4. Once your tomatoes are done prepare a frying pan to grill your sandwiches. Layer with 2 sliced of cheese, argula or lettuce, tomato, proscuitto or bacon, tomato, argula or lettuce, cheeses and a little mayo. You can serve some sliced apples on the side too.
