CHICKEN MANGO QUESADILLAS

1 lb. Chicken Breast (cut into bite size pieces)
Oil or Cooking Spray
1/4 cup Honey
1 Tablespoon Fresh Lime Juice
1 teaspoon Salt
1 teaspoon Pepper
2 Mangoes (diced)
1 Red Pepper (diced)
1/4 cup Cilantro (chopped)
1/2 Jalapeno (diced)
2-3 cups Pepper Jack Cheese (Monterey Jack or Mexican Blend Cheese)
4 Flour Tortillas
Butter (for pan)
4- ounce Cream Cheese (softened)
1/2 Jalapeno (finely diced)

Steps:

  • In a large skillet, saute chicken until cooked through and lightly golden brown -- about 5-6 minutes. Add honey, lime juice and salt and pepper and coat. Cook for another 1-2 minutes. Set aside.
  • To make salsa -- add all ingredients in small bowl and stir together. If mangoes aren't ripe enough, may add a drizzle of honey.
  • To make optional jalapeno cream cheese -- mix softened cream cheese and jalapenos in a small bowl.
  • To assemble chicken mango quesadillas -- spread jalapeno cream cheese over half of the tortilla. Top with honey lime chicken and pepper jack cheese.
  • Heat skillet over medium heat. Add butter to the pan. Place tortilla on top of butter. Cook until cheese starts to melt. Watch it carefully and lower temperature if the outside is getting too done and the cheese isn't melting yet. Open and add mango salsa. Cook for 1 minute longer.
  • Cut into slices and serve warm. Great for leftovers too!

1 pound skinless, boneless chicken breast, diced
1 (1.27 ounce) packet fajita seasoning
1 tablespoon vegetable oil
2 green bell peppers, chopped
2 red bell peppers, chopped
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat the broiler. Grease a baking sheet.
  • Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
  • Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack. Fold the tortillas in half and Place onto a baking sheet.
  • Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.

Use punchy Cajun spices to flavour this salmon dish. The fresh avocado and mango salsa and the zingy lime juice cuts through the spicy flavours of the salmon

2 tbsp smoked paprika
1 tsp dried oregano
½ tsp cayenne pepper (or just a pinch if you want less heat)
1 tbsp soft light brown sugar
2 limes , zested, 1 juiced and 1 cut into wedges
1 garlic clove , crushed
3 tbsp olive or rapeseed oil
3 peppers , cut into chunks
2 red onions , peeled and cut into wedges
2 x 400g cans black beans , drained
850g side of salmon , pin-boned and scaled
3 small or 2 large ripe avocados
1 small, firm ripe mango
1 red chilli , finely chopped
small bunch coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the paprika, oregano, cayenne, sugar, lime zest, garlic and oil in a bowl with a good pinch of salt. Toss the peppers, onions and beans with half of the spice paste in a large roasting tin, then cook in the oven for 25 mins.
  • Remove from the oven and give the veg and beans a good mix. Lay the salmon on top, skin-side down, then brush over the remaining spice paste. Bake for a further 25 mins, until the salmon is cooked through.
  • Meanwhile, for the salsa, halve, stone and finely chop the avocados and mango. Mix with the lime juice, chilli, coriander and some salt. Serve the salmon, veg and beans with the salsa and lime wedges for squeezing over.

1/3 cup red onion
4 garlic cloves
1 lime
1/4 cup cilantro
1 -2 tablespoon olive oil

  • Dice mango, peppers, onion, and cilantro.

1/2 cup creole blackening seasoning
4 boneless skinless chicken breasts
2 tablespoons peanut oil
1 large onion, thinly sliced
3 tablespoons vegetable oil
1 teaspoon chopped fresh basil
2 tablespoons honey
1 cup chicken broth
8 (8 inch) flour tortillas
1 1/2 cups monterey jack pepper cheese
1 cup cranberries
2 tablespoons light brown sugar
1/4 cup granulated sugar
1/4 cup water
1 medium mango
2 kiwi fruits
1/4 cup red onion, diced
2 tablespoons cilantro, chopped
1 1/2 tablespoons fresh lime juice
1 serrano chili, seeded and diced
1 garlic clove, minced
1 1/2 teaspoons honey
salt and pepper

Steps:

  • For the Salsa (yields about 3 cups):.
  • Toss the cranberries with the brown sugar then chop coarsley in a food processor, transfer to a heat resistant bowl and set aside.
  • In a saucepan, combine granulated sugar and water over medium-high heat; bring to a boil while stirring; once boiling, stop stirring and allow to cook for 3 minutes, then immediately pour syrup over cranberries and allow to cool completely.
  • Meanwhile, peel and dice kiwi and mango.
  • Combine mango, kiwi, red onion,cilantro, lime juice, serrano chile, garlic and honey; mix well and add to cranberry mixture.
  • Season with salt and pepper and refrigerate for at least 2 hours to allow flavors to blend.
  • For the Quesadillas:.
  • Place blackening seasoning in a shallow dish.
  • Between two sheets of plastic wrap, flatten chicken breasts with a meat mallet or heavy skillet to a flat even thickness; rub each breast with a few drops of oil and dredge in the blackening seasoning to coat.
  • Heat 1 tbl of peanut oil in a heavy skillet over high heat; add chicken and cook until blackened on both sides and cooked through- set aside to rest.
  • In a separate skillet, heat vegetable oil over medium heat, add onions and saute until just translucent; turn heat to low and cook for 15 minutes until onions are soft but not browned.
  • Stir in basil and honey and cook for 5 more minutes.
  • Add chicken broth and turn up heat high enough for broth to simmer; cook until almost all of the broth has evaporated; remove from heat and set aside.
  • Slice chicken into small pieces and mix with onions.
  • To assemble: Sprinkle 1/4 cup cheese on one tortilla, then spoon on 1/4 of the chicken mixture; sprinkle with 2 tbl more cheese and place another tortilla on top.
  • Lightly brush a skillet with peanut oil and heat over medium high heat; slide the quesadilla into the skillet and heat until cheese begins to melt; brush upper tortilla with peanut oil and flip quesadilla in skillet.
  • When cheese is melted, remove from skillet, cut into quarters and serve with cranberry-mango salsa.
  • Note: quesadillas (top brushed with oil) can also be cooked on a parchment lined sheet pan in a 350 degree oven until cheese melts.

4 boneless chicken breasts, flattened to about 1/2 inch thick
1 cup butter, melted
1 1/2 tablespoons salt
1 1/2 teaspoons garlic powder
1 1/2 teaspoons black pepper
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon sugar (If you want to jazz up the butter a bit, add a dash or two of tabasco!=0)

Steps:

  • Let the chicken come to room temperature before using.
  • Cover chicken with butter until well coated.
  • Heat a cast iron skillet over high heat until very hot.
  • Roll each chicken breast into about 1/2 tsp. seasoning mix (I use my hands).
  • Immediately place the chicken pieces skin side down in the skillet to sear.
  • Pour about 1 teaspoon of the butter on top.
  • Cook about 2+ minutes, until a crust forms on the underside.
  • Turn and pour another 1 teaspoon of the butter on each of the chicken pieces.
  • Cook until just cooked through.

8 large skinless chicken pieces, about 200 g each
4 tablespoons vegetable oil
salad leaves (to garnish)
2 teaspoons salt
2 teaspoons oregano
2 teaspoons dried thyme

Steps:

  • Preheat the oven to 200C/400 degrees F.
  • In a large bowl, mix together all the blackening spices.

  • Heat a large heavy based frying pan over high heat until very hot.
  • Add the oil and fry chicken fillets on each side.
  • You want the chicken to fry quite fast so that you sear and roast the spices very well.
  • Don't be tempted to add too many pieces to the pan at once or you will not get the desired effect.

4 ripe tomatoes
1 peeled onion
2 -3 jalapeno peppers
6 tomatillos, husks removed
5 garlic cloves
1 teaspoon cumin
1 dash kosher salt
3 canned chipotle chiles

Steps:

  • On a grill or dry pan put on the tomatoes, jalapenos, tomatillios and onions.
  • Keep turning until all sides are blackened.
  • Chop off the ends of the garlic, wrap in foil and bake in oven at 350 until soft or put on grill until soft.
  • Remove tomatoes, jalapenos, onions and tomatillos when black and let cool.
  • Remove garlic when soft.
  • In a food processor combine tomatoes (make sure stems of tomatoes and jalapenos are removed) jalapenos, onions and tomatillos.
  • Squeeze the roasted garlic into the processor.
  • Puree until smooth.
  • add salt, chiplote peppers and cumin.
  • Puree again.
  • Serve cold.
