Fast, easy, and very good. Throw the potatoes in the oven, toss the salad. This also works very well on pork chops. Mix the spices early and have on hand. I do not know where I got this mix.

1/2 teaspoon paprika
1/8 teaspoon salt (1 pinch = 1/8 teaspoon)
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1/8 teaspoon onion powder
2 boneless chicken breasts (or your amount)

Steps:

  • Mix the seven spices (will fill a 3-inch salt shaker). Save for future use.
  • Sprinkle over chicken to cover both sides.
  • Heat oil in cast iron skillet for 15 minutes. I do this on low heat and turn up last few minutes.
  • Place chicken in hot pan and cook till dark in color, about 4 minutes per side, till juices are clear.

1 teaspoon ground black pepper
1 teaspoon ground cayenne pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon salt
2 teaspoons paprika
4 boneless skinless chicken breasts (about 1 1/4 lbs)
2 teaspoons vegetable oil
1/2 cup sour cream
1 tablespoon chopped fresh cilantro
salt and pepper

Steps:

  • Mix all dry spices in a medium bowl, large enough to also use to coat the chicken.
  • Dip both sides of the chicken breasts in the mixture of spices, coating well.
  • Heat the vegetable oil in a medium skillet over high heat. Once hot, gently place the chicken breasts in hot oil and cook for about two minutes.
  • Once well blackened (yes, they will be a little black but don't worry), turn the breasts over and continue cooking for another 2 minutes or until chicken is thoroughly cooked. Remove chicken from pan.
  • To serve, cut chicken breasts into 3/4-inch slices on an angle and fan out on plate.
  • For a quick and easy topping, mix sour cream, cilantro, salt and pepper together in a small bowl with a whisk and top each serving with a spoonful.
  • Note: Like beef, chicken should rest for a few minutes before cutting or serving. This allows the juices to redistribute and the meat to relax and become more tender.

1 teaspoon ground cumin
2 cups frozen corn kernels, thawed
12 cherry tomatoes, quartered
1/2 cup jicama, shredded pared
1/2 cup scallion, thinly sliced
2 tablespoons fresh lime juice
1/4 teaspoon salt
16 ounces boneless skinless chicken breasts
1 teaspoon cajun seasoning

Steps:

  • In small nonstick skillet, toast cumin over medium heat, stirring constantly, 2 minutes, until fragrant; transfer to large shallow bowl.
  • Add corn, tomatoes, jicama, scallions, juice and salt to toasted cumin; toss to combine. Set aside.
  • Sprinkle chicken on all sides with Cajun seasoning. Spray large iron skillet with nonstick cooking spray; heat. Add chicken; cook over medium-high heat, turning once, 8 minutes, until browned on all sides and juices run clear when chicken is pierced with fork.
  • Arrange cooked chicken breasts on top of corn mixture.

1 1/2 lbs chicken breasts, boneless, skinless
6 sandwich buns
1 tablespoon vegetable oil
butter or mayonnaise
1/4 cup melted butter
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves

Steps:

  • Freeze chicken and sandwich rolls until ready to serve.
  • Mix spices and store in a covered container; label it "Blackened Chicken Spices".
  • To prepare, thaw rolls and chicken.
  • Coat each piece of chicken with spice mix (adjust to taste of each person, as the mixture is spicy!).
  • Using a pastry brush, baste each piece of chicken with the melted butter. Grill chicken, basting with butter after turning once.
  • Grill about 10 minutes or until no longer pink in the middle, or cook in a large nonstick skillet in hot oil over medium heat for about 10 minutes.

I've found this recipe in a local food magazine, "Food & Home". I liked the look of it, but tweaked the flavours just a little. Ideal for dieters and low-carbers, and it looks so pretty on a plate! I doubt that the tiny amount of sugar, most of which is discarded again, will spoil a diet! NB, March 9, 2009: justcallmetoni found the cucumber dressing still too sweet, so I reduced the sugar. Please taste it, and add more lemon juice or apple cider vinegar, if you like.

4 boneless skinless chicken breasts
4 tablespoons lemon juice
2 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon chili powder, whatever heat you prefer
2 ml ground cloves
1 tablespoon coarse black pepper
salt
1 cucumber, long ("English cucumber")
1 tablespoon superfine sugar
2 tablespoons lemon rind, grated
2 tablespoons lemon juice, freshly squeezed
1 teaspoon dill seeds or 1 teaspoon mustard seeds
salt
1/4 teaspoon white pepper

Steps:

  • Use the first 4 tablespoons lemon juice to rub into the chicken breasts. Shake off and discard extra liquid.
  • Mix all the spices in a plastic or cooking bag. Add the chicken breasts, and shake until coated evenly.
  • Use a non-stick skillet/frying pan, heat well, and dry-fry the chicken breasts until cooked and juice runs clear when pricked with a skewer.
  • Set aside and cover lightly.
  • With a potato peeler, peel long ribbons of cucumber. Even with the soft-seeded English cucumber the going can get tough. You could use 2 cucumbers, peel strips until it won't peel neatly any more and gets wobbly, and save that centre strip to use in another salad.
  • Whisk the sugar, lemon juice, dill or mustard seeds, pepper and salt in a roomy bowl.
  • (Keep the rind you've prepared before squeezing the lemon).
  • Add the cucumber to the marinade, and with clean hands or a spoon mix well with the marinade. Leave for 10 - 14 minutes.
  • On a serving plate, slice the chicken at an angle and arrange in a half-moon shape. Drain the cucumber of liquid and put on platter next to chicken.
  • Sprinkle with the lemon strips or grated rind. Best served at room temperature!
