This is an easy way to make cordial and it's good for gifts! Other berries such as raspberries, strawberries or blueberries may be used in place of blackberries, and rum or brandy may be used in place of the vodka.

1 cup sugar
1 quart blackberries
1 quart vodka

Steps:

  • Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
  • Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.

Try this easy-to-make blackberry vodka liqueur in a cocktail. Drinkable for up to a year, it's a great way to use a pile of freshly picked berries

Number Of Ingredients 5

300g blackberries (fresh or frozen)
1 cinnamon stick
1 bay leaf
150g golden caster sugar
700ml vodka

Steps:

  • Tip the blackberries, cinnamon stick, bay leaf and sugar into a large sterilised jar. Pour over the vodka, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week.
  • After two to three weeks, strain the vodka through a fine mesh sieve (see tip, below) and decant into bottles, then label. It will keep its colour for a few months, and will be drinkable for up to a year. Use the infused blackberries in bakes or meringue-based desserts.

1 quart fresh blackberries or 4 cups frozen blackberries thawed
1 quart vodka
1 1/2 cups sugar

Steps:

  • 1. Put the blackberries in the bottom of a large widemouth jar.pour the vodka and sugar over the blackberries,tighten the lid,and shake gently to blend.store for at least 2 months in cool,dry place before using.to decant,pour the liquid through a cheesecloth lined strainer into a bowl,then funnel the cordial into a decanter.
