PORK CHOPS WITH BLACKBERRY PORT SAUCE
I love pork chops. I love fruit with pork chops. The most common fruit accompaniment for pork is apple, but I wanted to try something a little different. I considered apricots (I love them too), but thought they are too sweet. After reading a number of different recipes, I settled on blackberries. They are tart and, I thought, would pair well with a sweet port to make the sauce.

Steps:
- Season the pork chops on both sides with salt and pepper. Heat 1 teaspoon of olive oil in a skillet over medium-high heat, and pan fry the chops until they are lightly browned and no longer pink in the center, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Set the chops aside.
- Heat 1 more teaspoon of olive oil in the skillet, and cook and stir the shallots and thyme until the shallots start to become translucent, about 1 minute. Pour in the port wine, blackberry juice, chicken broth, and balsamic vinegar. Bring the mixture to a boil, scraping off and dissolving any brown flavor bits from the skillet into the sauce. Cook until reduced by a third, about 5 minutes. Mix cornstarch and water into a paste, and stir into the sauce. Cook until thickened, stirring constantly, about 1 minute. Reduce heat to low, and stir in the blackberries. Simmer until berries are hot.
- Return the chops to the skillet, and turn to coat with sauce. Serve hot, topped with sauce.

- Combine chili powder, cayenne, salt, and pepper; rub onto chops.
- Heat oil in a large saute pan over medium-high heat; add chops and saute 4 minutes on each side.

- 1. Preheat grill. Brush both sides of chops with olive oil, then sprinkle both sides with Montreal Steak Seasoning, to taste. When grill is hot, place chops on grill and lower lid on grill.
- 2. Grill for about 10 minutes, turning about halfway through.

- Directions: Heat a small saucepan over medium-heat and add blackberries, balsamic vinegar, water, and a pinch of sea salt. Stir frequently. Reduce heat to low and let sauce simmer 3-5 minutes. While cooking, place raw pork chops on a plate and sprinkle cinnamon, thyme, sea salt and pepper on both sides of the pork chops. Freezing Directions: Let cool. Place sauce in indicated number of quart freezer bags. Place pork chops in indicated number of gallon freezer bags. Tape bags together, label and freeze flat. To serve: Thaw. Prehat grill. BLACKBERRY PORK CHOPS FOR GRILL OR WHATEVER
I am giving this recipe for the grill method, but it can be easily adapted by browning the pork chops, then adding the rest of the ingredients (with whole blackberries for garnish) to simmer until tender. - Place on grill, and grill 4-5 mns. on each side, until internal temp reaches 160 dg.

Add the pork chops to the pan with the sauce and cook for 5-7 minute (or until cooked thoroughly) flipping every couple of minutes. Plate the pork chops and pour the extra sauce over them. - 2. Mix remaining ingredients except for oil together. Add the pork chops and marinate overnight or at least 4 hours.

- 1. In a small bowl, mix together the salt, pepper and garlic powder, and sprinkle it over each of the pork chops.
- 2. Heat the oil in a large skillet over medium heat. When oil is hot, add the pork chops and let cook until lightly browned on each side (about 3 to 5 minutes each side for thin chops, or 7 minutes or longer each side for thicker chops). Transfer to a plate and cover with foil to keep warm.
- 3. Reduce heat to low. Add jam, butter, balsamic vinegar, water and ground sage to the skillet. Whisk the ingredients, scraping browned bits from the skillet, until ingredients are well blended. Increase heat to medium and let sauce simmer about 6 to 7 minutes or until thickened. Season with salt and pepper, as desired.
- 4. Return chops (and any liquid that accumulated) to skillet, and coat both sides of the chops with the pan sauce and let simmer a minute or two in the sauce (to re-heat the chops).
- 5. To serve: Place chops on individual plates, spoon pan sauce over chops, sprinkle each serving with chopped fresh sage, and serve immediately while still hot.
