Steps:
- For immediate cooking: Preheat oven to 350º.
- Place all ingredients into a prepared baking dish, turn chicken to coat. Bake until chicken juices run clear - about 45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts.
- For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
- To cook from the freezer: Thaw in the refrigerator.
- Preheat the oven to 350º.
- Empty the contents of the bag into a large baking dish and bake until the juices run clear *See above cooking times.

- Place chicken in a zip lock bag. Gently flatten to 1/4-inch thickness. Season both sides with salt and pepper.
- Heat oil in a large nonstick skillet over medium-high heat. Cook chicken until no longer pink in the middle, about 6 minute per side. Remove from heat, cover and keep warm.
- Add remaining ingredients to skillet. Cook over medium heat until warmed through, about 4 minute.
- Spoon sauce over chicken. Serve with green beans, if desired.

Every time I make this, my husband swears it smells and tastes like Thanksgiving dinner. I suppose it could be made with Turkey cutletts to be even closer, but I've always used chicken.

- TO MAKE IN A PAN:
- Place the chicken breasts (still frozen) on the bottom of the pan.
- Layer the apples, sweet potatoes, and onion on top.
- Sprinkle on the nuts and craisins.
- Place one pat of butter on each breast.
- Mix the maple syrup and poultry seasoning together and drizzle on top.
- TO MAKE IN A BAG:
- Put everything except the maple syrup, poultry seasoning, and butter into a ziplock bag.
- Melt the butter and combine with poultry seasoning and maple syrup.
- Put these in a little bowl and freeze separately (in the bag).
- When ready to cook, dump the bag out and then pour the (thawed) syrup butter mix on top.
- To cook: Thaw. Cook covered in a 350 oven for 30-45 minutes. I confess I normally skip the thaw step and put it in the oven.
GRILLED CHICKEN THIGHS WITH BLACKBERRY BBQ SAUCE

- In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
- Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
- Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
- Remove the chicken from the grill. Serve with the remaining sauce on the side.
- In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.
DUMP COKE/BBQ CHICKEN (OAMC)
This has been part of my OAMC rotation for a long time. Very easy to assemble. Easily doubled or tripled.

- Mix barbecue sauce, garlic powder, onion powder, coke, salt and pepper in large freezer bag.
- Add chicken.
- Freeze.
- When ready to serve thaw in fridge.
- Cook in oven or grill.
- In oven, place in pan sprayed with Pam.
- Cook at 350 for about 30 minutes.
- Baste with marinade during cooking.

- Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add onion and saute till translucent.
- Sprinkle salt, pepper, and thyme over the top of the chicken. Add chicken to skillet and saute 6 minutes on each side or until done. Remove chicken from skillet and keep warm. Reduce heat to medium low. Add preserves, vinegar, and salt and pepper, stirring constantly until the preserves melt. Spoon the sauce over chicken to serve.

This was on the back of the Good Seasons package. We use it for freezer meals, and as it thaws it marinades. Its called "dump" because you dump everything into a bag, super easy!
