8 Tablespoons Unsalted Butter ((softened) - 115 grams)
2 Eggs ((large))
3 Bananas ((ripe & large sized) - 345 grams - Roughly 1 1/2 cups of mashed bananas)
2 Cups Flour ((all purpose flour) - 240 grams)
1 Cup White Granulated Sugar (- 200 grams)
1 Cup Chopped Walnuts (- 115 grams - 3/4 cup for inside the batter and 1/4 cup sprinkled on top of the batter)
1 Teaspoon Vanilla Extract (- 5 milliliters)
1 Teaspoon Baking Soda (- 5 milliliters)
1 Teaspoon Baking Powder ((aluminum free) - 5 milliliters)
1/2 Teaspoon Salt (- 2.5 milliliters)

Steps:

  • Preheat oven to 325 degrees F.
  • Mash bananas with a fork.
  • Soften butter in a microwave.
  • Stir eggs, bananas and butter together.
  • Mix in remaining ingredients (except the chopped walnuts). Stir until the batter is fully mixed.
  • Add 3/4 cup of chopped walnuts to the batter (and save the remaining 1/4 cup of chopped walnuts for later). Make sure the chopped walnuts are evenly spread throughout the batter.
  • Pour finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Sprinkle the remaining 1/4 cup of chopped walnuts on top of the batter before placing into the oven.
  • Bake in the oven for 65-70 minutes.
  • Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

Pinch of nutmeg
Pinch of cinnamon
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups mashed banana ((about 3 large or 4 medium very ripe bananas))
6 tablespoons salted butter, melted and slightly cooled
¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°F. Grease an 8½ x 4½-inch loaf pan and set aside.
  • In a medium bowl, sift or whisk together flour, nutmeg, cinnamon, baking soda and salt. Set aside.
  • In a separate large bowl, whisk together mashed banana, melted butter, sugar, egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts.
  • Pour batter into prepared loaf pan. Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, about 50-60 minutes. Do not overbake.
  • Remove from the oven, unmold from the pan, and cool completely on a wire rack before slicing and serving.

I purchased 2 pounds of over ripen Bananas for 80 cents and made dessert to feed two families, mine and my neighbor. This recipe is simple and can be made in just a few minutes. It bakes in less than an hour, and is great plain as is or with some softened butter spread on each slice. You can make it with or without the black walnuts or even use the nuts of your choice. I used 5 bananas in this recipe to give it the extra push in banana flavor, as well as a banana flavoring to enhance the flavor even more. Hope you try it. Add the extra nuts on top before baking for extra nutty flavor.

4 cup(s) self rising flour (i used white lily)
1 cup(s) black walnuts, or other nuts of your choice
4 large eggs

Steps:

  • Preheat oven to 350 degrees F. Spray 2 loaf pans with non stick cooking spray and set aside till needed. Peel bananas and smash into large chunky pieces, and set aside till needed.
  • Coat the walnuts with 1 tablespoon flour and set aside. Coating the nuts with flour allows them to remain evenly distributed throughout the batter during baking.
  • Add the olive oil and sugar to a large bowl, and beat until completely blended together.
  • Add the eggs one at a time and beat well after each is added.
  • Add in the nuts and bananas & beat to blend into batter.
  • Add the baking soda to the flour, and stir to mix. Then add in about half of the flour, and beat till blended.Then repeat and beat again until throughly mixed.
  • Now add in the Banana flavoring and stir until blended.
  • Pour batter into the 2 prepared loaf pans, and top with extra nuts if desired. The toasted nut flavor is amazing after baking. Bake in preheated 350 degree F. oven for 40 to 45 minutes or until toothpick inserted into center comes out clean.
  • Cool then serve, if you can wait that long, or serve warm with softened butter on top. Enjoy!

1 c butter (2 sticks) room temp
2 c brown sugar, firmly packed
1 1/4 c milk
1 Tbsp lemon juice
2 tsp vanilla
4 eggs, beaten
2 c banana's, smashed (approx 6)
3 medium apples, peeled, seeded and cubed
1-2 c walnuts, chopped
5 c all purpose flour, sifted
3 tsp baking powder
2 tsp baking soda
1 tsp salt

Steps:

  • 1. In a large mixing bowl place room temp butter and smashed bananas. Start mixing on low. Add sugar, milk, lemon juice, vanilla, eggs, apple and walnuts. Mix till well combined.
  • 2. In separate bowl sift flour, baking soda, baking powder and salt.
  • 3. Add dry ingredients to cream mixture a little at a time till all is added and mix just until combined.
  • 4. Spoon into three (3) 9x5 loaf pans, fill sprayed with non stick spray, fill about halfway up. Bake on middle rack for 50-60 min. or till a knife is inserted in the middle and comes out clean.

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces

Steps:

  • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
  • With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. 100g softened butter, plus a little extra for greasing
140g caster sugar
1 beaten egg
225g plain flour
2 tsp baking powder
4 very ripe bananas
85g chopped walnuts
50ml milk

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 2lb loaf tin with some butter and line the base with baking parchment, then grease this as well.
  • In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.
  • Pour your mixture into the tin and bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin. The loaf can now be wrapped tightly in cling film and kept for up to 2 days, or frozen for up to 1 month. Defrost and warm through before serving. Serve in thick slices topped with vanilla ice cream and drizzled with a little Easy chocolate sauce (see recipe, below).

250g caster sugar
2 eggs
140g softened butter
250g plain flour
2 tsp baking powder
100g walnut piece
100g chocolate chip

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.
