Sautéed Chicken in Creamy Red Pepper Sauce is so incredibly flavorful but simple. Serve it over noodles, zoodles, spaghetti squash or with roasted veggies!

2 tbsp olive oil or avocado oil
2 lbs chicken breasts
1 red bell pepper (thinly sliced, cored)
2 1/2 oz fresh baby spinach
salt & pepper to taste
16 oz jarred roasted red peppers (drained)
1/2 cup chicken stock or broth
1/4 cup olive oil (extra virgin)
8 fresh basil leaves
1 tsp garlic (minced)
1/2 tsp onion powder
1/2 tsp salt

Steps:

  • Add 1 tbsp of oil to hot skillet on medium high heat. Add thinly sliced red peppers. Sauté until tender with some browning. Remove red peppers from the skillet and set aside.
  • Slice the chicken breasts horizontally. This will give you very thin cutlets so they'll cook faster and more evenly.
  • Add other 1 tbsp of oil to pan. Add chicken to the hot pan. Liberally salt and pepper the side facing up. Sauté until each side has some browning and chicken is cooked through or mostly cooked through, about 3 to 4 minutes per side.
  • Remove chicken from the skillet and set aside on a plate. Lower heat to medium.
  • Add all Creamy Red Pepper Sauce ingredients to a blender. Blend until smooth.
  • Pour sauce into skillet. Add the red peppers, chicken, and spinach to your sauce. Cover. Let simmer on medium to medium low for 5 minutes or until chicken is cooked through and sauce is warmed.

3 medium sweet red peppers, cut in half lengthwise and seeded
1 large whole garlic bulb
1 teaspoon plus 1 tablespoon olive oil, divided
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1/2 cup sliced leek (white portion only)
1/2 cup reduced-sodium chicken broth
Hot cooked pasta, optional
1/4 cup shredded Parmesan cheese

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 15 minutes. Immediately place peppers in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Coarsely chop peppers; transfer to a food processor., Remove papery outer skin from garlic (do not peel or separate cloves); cut top off of garlic bulb. Brush with 1 teaspoon oil. Wrap bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into the food processor with peppers; cover and process until almost smooth. Set aside., Sprinkle both sides of chicken with 1/4 teaspoon salt and 1/8 teaspoon pepper. In a large nonstick skillet, cook chicken in remaining oil over medium heat for 3-4 minutes on each side or until lightly browned. Remove and keep warm., In the same skillet, cook leek for 2 minutes or until leek is lightly browned. Add broth, stirring to loosen any browned bits from pan. Add red pepper mixture, chicken and remaining salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 3 minutes until the chicken juices run clear. Uncover; pepper sauce over pasta if desired. Sprinkle with Parmesan cheese.

6 chicken breast fillets, flattened to 1/4-inch-thick
3 tablespoons olive oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon Italian seasoning
2 tablespoons salted butter
1 tablespoon olive oil
1/2 large onion, finely diced
3 cloves garlic, minced
1 jar (15.5 ounces) roasted red peppers, drained and roughly chopped
1 to 2 cups vegetable or chicken broth
1/2 teaspoon kosher salt, more to taste
Freshly ground black pepper
1/2 cup heavy cream (or more to taste)
One 4-ounce chunk Parmesan, to shave
2 tablespoons finely minced parsley

Steps:

  • For the chicken: Put the chicken in a resealable bag. Add the olive oil, salt, pepper and Italian seasoning to the bag and smush everything together. Seal and refrigerate.
  • For the red pepper sauce: Melt the butter and add the olive oil in a large skillet over medium-high heat. Add the onion and garlic and saute for 2 to 3 minutes or until starting to soften. Add the red peppers and cook for 2 to 3 minutes, until hot.
  • Add the broth (if you like a thicker sauce only add 1 cup broth, for a thinner sauce add 2 cups broth), salt and pepper and stir until heated. Splash in the cream.
  • Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers). You can serve the sauce right away or cool it and bag it up.
  • When ready to cook, heat a grill pan over medium-high heat and grill the chicken until cooked through, about 4 minutes a side.
  • Heat up the red pepper sauce in a pan. Serve everyone a piece of chicken, spoon some sauce over each piece, and garnish with Parmesan shavings and a sprinkling of parsley. Serve with roasted vegetables alongside.

⅔ cup chopped roasted red peppers ((see note))
2 teaspoons Italian seasoning (divided)
4 tablespoons oil
1 tablespoon minced garlic
½ teaspoon salt
¼ teaspoon black pepper
1 cup heavy cream
2 tablespoons crumbled feta cheese ((optional))
thinly sliced fresh basil (optional)

Steps:

  • Combine roasted red peppers, 1 teaspoon Italian seasoning, oil, garlic, salt, and pepper in a food processor or blender Pulse til smooth.
  • Grease a large skillet. Season chicken with remaining 1 teaspoon Italian seasoning. Cook chicken in your greased skillet over medium heat for 6-8 minutes on each side until cooked through and lightly browned on the outside. Transfer to a plate and cover to keep warm.
  • Transfer red pepper mixture to the pan and stir over medium heat 2-3 minutes until hot throughout. Add heavy cream and stir until mixture is thick and creamy.
  • Add chicken and toss in the sauce to coat. Garnish with crumbled feta cheese and fresh basil and serve.

9 tablespoons olive oil
3/4 cup chopped shallots
1 tablespoon chopped fresh thyme or 1 teaspoon dried
2 tablespoons all purpose flour
3 1/2 cups chicken stock or canned low-salt chicken broth
1 3/4 cups beef stock or canned beef broth
2 1/2 tablespoons balsamic vinegar
1/2 teaspoon ground black pepper
2 pounds large red potatoes (about 6), each cut lengthwise into 1-inch wedges
1 1/2 tablespoons chopped garlic
1 tablespoon chopped fresh rosemary
1 5- to 5 1/4-pound fryer chicken, halved lengthwise, backbone removed

Steps:

  • Heat 2 tablespoons oil in heavy large saucepan over medium-high heat. Add shallots and thyme and sauté until shallots begin to brown, about 4 minutes. Add flour and stir 1 minute. Gradually whisk in both stocks. Boil until liquid is reduced to 1 1/2 cups, stirring occasionally, about 20 minutes. Add vinegar and pepper. (Sauce can be prepared 1 day ahead. Cover and refrigerate.)
  • Position 1 rack in top third of oven and another in bottom third; preheat to 375°F. Toss potatoes, 1 tablespoon oil, garlic and rosemary in large bowl. Arrange potato wedges, rounded side down, on large baking sheet. Sprinkle with salt and pepper. Set aside.
  • Season chicken lightly with salt and pepper. Heat remaining 6 tablespoons oil in heavy large ovenproof skillet over medium-high heat. Add chicken halves, skin side down; cook until very brown, about 15 minutes. Using tongs, turn chicken over; cook 5 minutes longer.
  • Place potatoes on top oven rack and transfer skillet with chicken to bottom rack. Roast potatoes and chicken until cooked through, about 45 minutes. Rewarm sauce. Cut each chicken half into 2 pieces. Arrange chicken and potatoes on platter. Serve with sauce.

BLACK PEPPER ROASTED CHICKEN



Black Pepper Roasted Chicken image

The is a copycat of the popular 5-star grilled chicken found throughout Bangkok. This Thai-style roast chicken is deeply flavorful, with lots of black pepper.

Number Of Ingredients 11

2 tsp. salt
2 Tbsp. oyster sauce
2 Tbsp. Thai thin soy sauce or Golden Mountain seasoning sauce
2 Tbsp. honey or light or dark brown sugar
1 whole chicken, preferably free-range, between 2½ and 3½ pounds
6 large cloves garlic
¼ cup finely chopped cilantro roots or stems
1½ Tbsp. black peppercorns
2 Tbsp. vegetable oil
Thai sweet chile sauce, for serving
Warm steamed glutinous rice, for serving

Steps:

  • In a large bowl, combine the salt, oyster sauce, soy sauce, and honey and mix well to make a marinade. Pat the chicken dry with paper towels and put it in the marinade bowl. Rub the marinade on the chicken, going into every nook and cranny, inside and outside, and over and under the skin. Transfer the chicken to a gallon-size resealable plastic bag. Scrape every bit of the marinade into the bag, too. Seal the bag, and place it in the back of the refrigerator, where it is coldest, for 12 to 24 hours, flipping the bag a few times to make sure the marinade gets to every part of the bird.
  • When you are about to roast the chicken, take it out of the refrigerator and let it come to room temperature. Position an oven rack at the very bottom of the oven, then preheat the oven to 400°F.
  • In a mortar or small chopper, grind together the garlic, cilantro roots, and peppercorns to a smooth paste. Rub the paste all over the chicken the same way you did the marinade. Tuck the wings behind the bird's back and tie the legs together at the ankles with kitchen string. Rub the outside of the chicken with the oil. Place the chicken on its side in a shallow baking pan (preferably fitted with a rack).
  • Roast the chicken for 30 minutes. Turn down the temperature to 375°F, turn the chicken onto its other side, and continue to roast until the juices run clear when you pierce the inside of a thigh with the tip of a knife, 20 to 30 minutes longer. (If some parts of the chicken brown too soon during the baking, you can cover it loosely with an aluminum-foil tent.)
  • Let the chicken rest in the pan for 30 minutes (no less than that) before separating into bone-in breast quarters, thighs, and drumsticks. Serve with sweet chile sauce and rice.
