Recipe for the famous "Rodney's Sauce."

2 Cups Distilled White Vinegar
1/2 Lemon, thinly sliced
1 1/2 Teaspoons Black Pepper, freshly ground
1 Teaspoon Cayenne Pepper
1/2 Teaspoon Crushed Red Pepper Flakes
1/4 Cup Sugar

Steps:

  • Pour the vinegar into a small saucepan and warm it over medium-high heat.
  • When the vinegar reaches 150° on an instant-read thermometer (about 5 minutes), add the lemon slices, and continue to cook until the lemons are slightly translucent, about 10 minutes more.
  • Whisk in the black pepper, cayenne, red pepper, and sugar.
  • Continue to cook over medium-high heat until the sugar is completely dissolved and the sauce reaches 190°, about 10 minutes.
  • Remove from the heat and allow it to completely cool before using. The sauce keeps in the refrigerator for one month.

1 tablespoon black peppercorns
3/4 cup cider vinegar
3/4 cup white vinegar
1/2 cup light brown sugar
1/2 teaspoon red pepper flakes
1/2 teaspoon kosher salt
2 cloves garlic, smashed

Steps:

  • Pulse the black peppercorns in a spice grinder until most of the blend is fine but there are still some coarser pieces.
  • Add the black pepper to a saucepan with the cider vinegar, white vinegar, sugar, red pepper flakes, salt and garlic. Bring to a slow simmer over medium-low heat and cook until the sauce thickens slightly, about 20 minutes. Use immediately, or refrigerate in a nonreactive container for up to 2 days.

1/4 cup ground black pepper
1/2 cup salt
1/2 cup ketchup
2 tablespoons dark brown sugar
1 crushed garlic, glove (optional)

Steps:

  • In a saucepan, stir together the vinegar, red pepper flakes, pepper and salt. Bring to a boil.
  • Stir in the ketchup and brown sugar.
  • Reduce heat to low, and simmer for 30 minutes.
