1 cup organic no-salt-added marinara sauce
1/4 cup amy's organic tomato and basil pasta sauce
1/4 cup artichoke heart, drained
4 tablespoons sliced black olives, drained
1 1/2 cups organic pasta

Steps:

  • Mix the marinara with the pasta sauce in a medium sized pot. Let the sauce boil. Add the artichoke hearts and olives. Stir once and let simmer for 5 minutes.
  • In a separate pot, boil water and cook 1.5 cups of favorite pasta according to packaged directions.
  • Serve.

400 g pasta (such as penne, fusilli or pipe rigate)
500 g fresh pumpkin (chopped into small cubes)
250 ml tomato passata
5 tablespoons olive oil
3 shallots (chopped finely)
1 garlic clove (chopped fine)
100 g smoked bacon or 100 g cubed pancetta
150 g black olives
1/2 cup white wine
1 tablespoon fresh rosemary
1 tablespoon fresh basil

Steps:

  • Heat oil in pan, add the shallots and garlic and cook till soft. Add the cubed bacon and pumpkin and cook for 5 more minutes.
  • when the pumpkin is softened add the basil and rosemary then add the tomato passata.
  • Season with salt and pepper and add the wine. Simmer for 20 minutes.
  • Add the olives to the sauce when it is cooked.
  • When the pasta is cooked, toss in the pan with the sauce to make sure that the pasta is well coated with the sauce.

2 garlic cloves (crushed and chopped)
1 teaspoon fresh chili pepper (deseeded and chopped)
125 ml oil
225 g plum tomatoes (fresh chopped roughly)
1 pinch salt and pepper
1 tablespoon capers (drained and chopped)
100 g black olives (stoned and halved)
1 tablespoon parsley (chopped)

Steps:

  • Heat the oil in a deep pan, and add the garlic and chili and cook over a medium heat until they are a golden colour.
  • Peel the tomatoes and chop roughly, add these to the pan, and season with the salt and pepper, cook over a low heat for about 20 minutes or until the sauce thickens.
  • Before serving add the capers, olives and parsley.
  • Serve with cooked pasta.

5 tablespoons extra-virgin olive oil
1 small white onion, finely chopped
5 garlic cloves, finely chopped
7 oil-packed anchovy fillets, drained and chopped
2 carrots, peeled and cut into 1/4-inch dice
2 celery ribs, cut into 1/4-inch dice
2 zucchini, cut into 1/4-inch dice
1 eggplant, cut into 1/4-inch dice
1 summer squash, cut into 1/4-inch dice
3/4 teaspoon crushed red pepper
Kosher salt
Freshly ground pepper
1/2 cup dry white wine
5 plum tomatoes, cut into 1/4-inch dice
1/2 cup pitted black olives, coarsely chopped
10 fresh basil leaves
1 pound strozzapreti or other pasta
Freshly shaved Parmigiano-Reggiano cheese, for serving

Steps:

  • In a large pot, heat 2 tablespoons of the olive oil. Add the onion, garlic and anchovies and cook over moderate heat, stirring occasionally, until starting to soften, 5 minutes. Stir in the carrots and celery and cook, stirring occasionally, until softened, 7 to 8 minutes. Add the zucchini, eggplant, summer squash, crushed red pepper and the remaining 3 tablespoons of olive oil and season with salt and pepper. Cook, stirring occasionally, until the vegetables are softened, 15 minutes. Add the wine and simmer for 2 minutes. Add the tomatoes, olives and basil and cook, stirring, for 10 minutes. Season with salt and pepper. Meanwhile, in a large pot of salted boiling water, cook the pasta until al dente. Drain, reserving 1/2 cup of the pasta cooking water. Add the pasta and cooking water to the vegetables, season with salt and pepper and cook over moderate heat, tossing, until saucy. Transfer to a bowl, garnish with Parmigiano and serve
