I have been making these Southern black-eyed peas for years and years, and they are always a big hit for family dinners! Don't skip the cumin, which is the "secret" ingredient.

1 pound dried black-eyed peas
1 tablespoon vegetable oil
1 medium onion, chopped
5 cloves garlic, minced
1 pound smoked ham hocks
6 cups water
1 tablespoon seasoned salt
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper
3 leaf (blank)s bay leaves

Steps:

  • Soak black-eyed peas in a bowl of water for at least 2 hours, or overnight.
  • Heat oil in a large, heavy saucepan over medium heat. Saute onion and garlic in the hot oil until onion is translucent, about 5 minutes. Add smoked ham hocks and water. Bring to a boil. Cover, lower heat to a simmer, and cook for 1 hour.
  • Drain peas and add to the pot along with seasoned salt, onion powder, cumin, black pepper, red pepper, and bay leaves. Bring to a boil. Cover, lower heat to a simmer, and cook for 1 hour. Uncover the pot and cook until beans are tender, about 30 minutes more. Remove bay leaves and ham hocks before serving.

1 pound dried black-eyed peas, sorted and rinsed
1 onion, diced

1 red bell pepper, stemmed, seeded, and diced
1 jalapeno chile, seeded and minced

4 slices bacon, chopped
½ teaspoon cayenne pepper
1 ½ teaspoons cumin
salt, to taste

Steps:

  • Pour the water into a slow cooker, add the bouillon cube, and stir to dissolve. 2 slices thick-cut bacon, sliced
5 cloves garlic, peeled
5 dried red chiles, broken up
2 bay leaves
1 pound dried black-eyed peas
1 quart low-sodium chicken stock
2 tomatoes, quartered
1/4 bunch fresh thyme, leaves removed
Kosher salt and freshly ground black pepper
1 lemon, juiced
4 green onions, chopped
1/4 cup chopped fresh cilantro leaves

Steps:

  • In a large pot over medium heat, add bacon and render until crisp. Remove the bacon to the paper towel-lined plate. To the same pot with rendered bacon fat, add the garlic, chiles, bay leaves, and dried peas and stir to combine. Pour in the chicken stock and add the tomatoes. Simmer over medium-low heat for 1 hour until peas are tender.
  • Transfer about 1 to 2 cups of the peas to a blender and puree until smooth. Place the blended peas back into the pot and stir to incorporate. Add the thyme leaves and season with salt and pepper, to taste. Continue to cook for another 15 minutes. Place in a serving dish and dress the peas with the lemon juice, green onions, cilantro and bacon before serving

4 slices bacon
1 medium onion, chopped
1 (16 ounce) package dried black-eyed peas, washed
1 (12 ounce) can diced tomatoes with green chilies, undrained (Rotel works well)
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon black pepper
3 cups water

Steps:

  • In a large saucepan, cook the bacon slices, until crisp.
  • Remove the bacon, crumble and set aside to use as a topping for the finished peas.
  • Saute the onion in the bacon drippings until tender.
  • Add the peas, diced tomatoes with green chiles, salt, chili powder, pepper, and water.
  • Cover and cook over medium heat for 45 min to an hour, or until the peas are tender.
  • Add additional water, if necessary.

1 tablespoon balsamic vinegar
1 cup chopped orange bell pepper
1 cup chopped celery
1 cup chopped carrot
1 cup chopped onion
1 teaspoon minced garlic
2 (16 ounce) packages dry black-eyed peas
4 cups water
4 teaspoons vegetable bouillon base (such as Better Than Bouillon® Vegetable Base)
1 (7 ounce) can chipotle peppers in adobo sauce, chopped, sauce reserved
2 teaspoons liquid mesquite smoke flavoring
2 teaspoons ground cumin
½ teaspoon ground black pepper

Steps:

  • Heat the olive oil and balsamic vinegar in a skillet; cook and stir the orange bell pepper, celery, carrot, onion, and garlic in the hot oil until the onion is translucent, 5 to 8 minutes. Transfer the mixture to a slow cooker; mix in the black-eyed peas, water, and vegetable base, stirring to dissolve the vegetable base. Stir in the chipotle peppers, about 1 tablespoon of the reserved adobo sauce (or to taste), liquid smoke, cumin, and black pepper.

1 medium onion, chopped
1 (16 ounce) package dried black-eyed peas, washed

Steps:

1 can Rotel Tomatoes with Green Chiles
1-pound dried black-eyed peas, sorted and rinsed (no need to soak)
1 onion, diced
2 cloves garlic, diced
1 red bell pepper, stemmed, seeded, and diced
1 jalapeno chile, seeded and minced
1 1/2 cups ham, diced
4 slices bacon, chopped
1/2 teaspoon cayenne pepper
1 1/2 teaspoons cumin
1 teaspoon ground black pepper
1 tablespoon honey
2 cups kale or spinach, roughly chopped

Steps:

  • Pour the water or broth into a slow-cooker, add the bouillon, and stir to dissolve. Combine the black-eyed peas, Better Than Bouillon Chicken Base, Rotel Tomatoes with Green Chiles, onion, garlic, red bell pepper, jalapeno, ham, bacon, cayenne, cumin, black pepper, and honey; stir to blend. 2 tablespoons canola oil
1 small yellow onion, minced
1 teaspoon ground coriander
1/2 teaspoon garlic, finely grated
1/2 teaspoon ginger, finely grated
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne
1/2 teaspoon ground cumin
1/4 cup tomatoes, minced
1 cup hot water (2 c if using dried peas)
1/2 teaspoon salt, to taste
1/2 teaspoon sugar
1 cup coconut milk
2 tablespoons cilantro, minced
1 tablespoon lemon juice

Steps:

  • in large saucepan, heat oil over medium-low heat and saute the onion until it turns dark brown, about 8 minute add coriander, garlic, ginger, turmeric, cayenne, and cumin and stir for 2 minute add tomato and stir over low heat until it disintegrates.
  • add peas and mix well. pour in the water, add salt and sugar, and bring to a boil. turn heat down to low, cover, and simmer until peas are cooked through, about 10 minute (20 minutes if using dried peas). stir in coconut milk and simmer uncovered for another 8-10 min., again allowing the flavors to come together.
  • add cilantro and lemon juice, simmer for 1 minute more, and remove from heat. serve hot.

1 lb ground beef (or vegetarian meat alternative, see note above)
3 medium onions, chopped
1 green bell pepper, chopped
2 (16 ounce) cans spicy black-eyed peas, drained (I prefer the Ranch Style brand, but use Trappey's if I can't get them)
1 (14 1/2 ounce) can whole tomatoes, undrained and coarsely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a large skillet, cook ground beef, onion and bell pepper until beef is brown and vegetables are tender.
  • Drain off excess fat.
  • Add drained black-eyed peas, tomatoes and their liquid, salt and pepper.
  • Mix well.
  • Bring to a boil.
  • Reduce heat to low and simmer 20 minutes, stirring occasionally.
  • I serve with corn muffins and cold spiced peaches for an easy one dish supper.
  • NOTE- If you don't have the spicy black-eyed peas, you could add chopped jalapenos to suit your taste along with plain black-eyed peas.
