CALIFORNIA BLACK BOTTOM PIE RECIPE

This black bottom pie is a must-try! It's made with layers of cream, chocolate, and rum on top of a crisp graham cracker and walnut crust for a tasty treat.

1 cup finely chopped Walnuts
1 cup graham cracker crumbs
¼ cup white sugar
5 tbsp melted butter
¼ cup cold water
1 tbsp unflavored gelatin
¾ cup white sugar
2 tbsp cornstarch
¼ tsp salt
2 cups milk
4 beaten egg yolks
1 cup semisweet chocolate chips
2 tsp instant coffee granules
4 egg whites
1 dash cream of tartar
½ cup white sugar
2 tbsp rum
½ cup heavy cream
8 walnut halves

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, combine the chopped walnuts, graham cracker crumbs, ¼ cup of sugar, and melted butter. Mix thoroughly, then press firmly into a 9-inch deep-dish pie pan.
  • Bake in the oven for 8 minutes. Remove and cool.
  • Chocolate Layer:
  • Place the water in a small bowl and sprinkle gelatin over top. Set aside to soften.
  • In a medium saucepan, mix together ¾ cup of sugar, cornstarch, and salt. Whisk in the milk and cook over low heat, stirring constantly. When the mixture comes to a boil, remove from heat.
  • Place the beaten egg yolks in a small bowl and gradually add half a cup of hot milk mixture, whisking constantly. Whisk the egg yolk mixture back into the hot milk mixture.
  • Return the pan to heat and allow to boil for 3 minutes, stirring constantly. Remove from heat and place 1 cup of mixture in a small bowl.
  • Place the chocolate pieces in a glass bowl and microwave at 30 second intervals, stirring at each interval, until the chocolate is melted and smooth. Stir the chocolate and coffee granules into separated custard.
  • Allow this mixture to cool, then spread into bottom of crust. Place in refrigerator.
  • Rum Layer:
  • Stir the softened gelatin into remaining custard. Place a piece of plastic wrap directly on surface of custard and chill until firm.
  • In a large glass or metal mixing bowl, beat the egg whites with cream of tartar until foamy. Gradually add half a cup sugar, continuing to beat until whites form stiff peaks.
  • Whisk the rum into chilled gelatin mixture, then fold in beaten egg whites. Spread mixture on top of chocolate layer.
  • Chill pie for at least 2 hours, until filling is set.
  • Immediately before serving, whip the cream until soft peaks form. Place the whipped cream in a piping bag with a star tip and make 8 decorative swirls around edges of pie.
  • Place a walnut half in the middle of each swirl. Serve and enjoy!

1 (9 inch) refrigerated pie crusts
1/2 cup semi-sweet chocolate chips
1 1/2 cups walnut pieces
19 ounces butterscotch topping
3 large eggs or 3/4 cup egg substitute
1/4 cup Kahlua or 1/4 cup coffee-flavored liqueur
1/2 cup dark brown sugar
1 teaspoon vanilla extract

Steps:

  • Line a 9 inch pan with pie crust.
  • Scatter chocolate chips across the crust.
  • Scatter walnut pieces over chocolate chips.
  • In a bowl combine butterscotch topping, eggs, coffee liqueur, brown sugar, and vanilla extract until well blended.
  • Pour into crust.
  • Bake for 45-50 minutes, until top is set and browned and filling is still soft in center.
  • Cool on rack for at least 30 minutes before slicing.
  • Serve warm or at room temperature.

1/2 c sugar
1 Tbsp sugar
1 Tbsp all purpose flour
1 pkg 9 inch unbaked pastry shell
1 c light corn syrup
1/2 c brown sugar, firmly packed
3 Tbsp margarine
3 large eggs, lightly beaten
1 c chopped black walnuts

Steps:

  • 1. Combine 1 tablespoon sugar and flour, sprinkle over bottom of pie shell and set aside. In a medium saucepan, bring corn syrup, brown sugar and remaining sugar just to a boil. Remove from the heat, Stir in margarine until melted. Let cool for 3 minutes. Gradually stir in eggs into hot mixture. add walnuts and mix well. Pour into pie shell. Preheat oven to 350 degrees. Place pie in oven, immediately reduce heat to 325 degrees . Bake for 55 minutes or until top is browned or center comes out clean with a toothpick.

1 c cream filled chocolate sandwich cookie crumbs
2 Tbsp butter, melted
24 large marshmallows, or 3 cups, mini
11/2 c cold milk
1/8 tsp salt
1/3 c kahlua
1 c whipped cream or 8 oz. thawed cool whip
semi-sweet mini chocolate chips or chocolate curls

Steps:

  • 1. To make crust, combine cookie crumbs and butter. Press firmly over bottom and sides of a 9-inch pie pan. Freeze until firm. Melt marshmallows with milk and salt over hot water. Cool until mixture mounds on a spoon. Stir in Kahlua. Whip cream if using until stiff peaks form; fold into mixture. Chill until mixture ripples when lightly stirred (about 35 minutes). Turn into chilled cookie crust. Refreeze until firm. Garnish with chips or chocolate curls.Or spread with chocolate Cool whip swirl in center and chocolate curls around edge.
