Grilled Skirt Steak with Sweet Roasted Tomato Sauce and Roasted Shrimp, Black Bean and Orzo Salad image

1 skirt steak (about 2 pounds)
Salt and ground black pepper
1 cup fresh orange juice
1/4 cup extra-virgin olive oil
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
1/2 teaspoon ground cumin
1 clove garlic
1 pint sweet grape tomatoes
2 cloves garlic
1 serrano chile pepper, halved
2 tablespoons extra-virgin olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground cumin
1/4 cup chicken stock
1 teaspoon agave nectar
1 1/2 pounds shrimp, 31/40 size, peeled and deveined
1/4 cup extra-virgin olive oil
Salt and ground black pepper
2 cups canned black beans, drained and rinsed
2 cups chopped cucumber
2 cups chopped red onion
2 cups chopped red bell pepper
8 ounces crumbled feta
1 cup chopped fresh parsley
1 cup chopped fresh cilantro
1 cup fresh squeezed lime juice
1/2 cup chopped poblano chile pepper
1 serrano chile pepper, minced with seeds
2 cloves garlic, minced
8 ounces orzo, cooked to al dente

Steps:

  • For the steak: Sprinkle the skirt steak with salt and pepper.
  • In a blender, add the orange juice, oil, cilantro, parsley, cumin and garlic and puree until smooth. Transfer the marinade to a large re-sealable plastic bag and add the steak. Seal the bag and shake gently to coat the steak. Marinate the steak in the fridge for 1 hour. Bring the steak to room temp before grilling.
  • For the tomato sauce: Preheat the oven to 400 degrees F. On a baking sheet, toss the tomatoes, garlic and serrano with 1 tablespoon olive oil, salt, pepper and cumin. Roast in the oven for 10 minutes. Transfer to a blender and blend with the chicken stock.
  • Heat the remaining 1 tablespoon olive oil in a saucepan over low heat and add the sauce from the blender. Add the agave and simmer for 5 minutes. Remove from the heat and set aside.
  • For the salad: Spread the shrimp out on a baking sheet and drizzle with 2 tablespoons olive oil and sprinkle with salt and pepper. Roast the shrimp in the oven until cooked through, 10 to 12 minutes. Set aside and let cool.
  • Combine the beans, cucumber, onions, bell pepper, feta, parsley, cilantro, lime juice, poblano, serrano and garlic in a large bowl and toss to combine. Add the shrimp, orzo and the remaining 2 tablespoons olive oil. Stir together, taste and season with salt and pepper.
  • To finish: Preheat a grill or grill pan to medium-high heat and grill the steak 4 to 5 minutes on each side for medium/medium-rare. Let rest, and then slice the steak and serve on top of the salad topped with tomato sauce.
  • Cook's Note: If making this dish for children, you can limit the heat by substituting diced carrots for serrano chile peppers in the tomato sauce and the salad.

8 ounces orzo pasta
1 (15 ounce) can black beans, drained and rinsed
1 cup frozen corn, thawed and drained
1/2 medium green bell pepper, diced
1 cup salsa, mild to medium-hot
1/2 cup chopped cilantro (or to taste)
3 scallions, thinly sliced
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice, fresh
salt, to taste
pepper, to taste

Steps:

  • Cook orzo according to package directions.
  • Drain and rinse well.
  • Combine all ingredients.
  • Toss to mix well.

8 ounces whole onion or 7 ounces chopped ready-cut (1 2/3 cups)
1 clove garlic
3 teaspoons olive oil
16 ounces whole red, green and yellow peppers or 14 ounces chopped ready-cut (4 cups)
1/2 cup dry sherry
1/2 cup frozen corn
1 cup uncooked pasta, preferably orzo
1 15-ounce can no-salt-added black beans
2 tablespoons red wine vinegar
1 teaspoon cumin
1/4 teaspoon hot red pepper flakes
1/2 teaspoon turmeric
9 ounces smoked turkey breast

Steps:

  • Bring water for pasta to a boil.
  • Chop whole onion and garlic, and saute in one teaspoon of very hot oil in nonstick pan.
  • Wash, trim, seed and chop whole peppers; add to onions as they cook, and when onion begins to soften, add the sherry, reduce heat and continue cooking until peppers are soft. About two minutes before the peppers are ready, stir in the corn and cook just to heat through.
  • Meanwhile, drain the beans and rinse thoroughly.
  • Cook the pasta according to package directions.
  • Whisk the rest of the oil and the vinegar with the cumin, hot red pepper flakes and turmeric in a bowl large enough to hold all the ingredients.
  • Cut the turkey into small pieces, and add to the bowl along with the vegetables and beans.
  • When the pasta is cooked, drain and add to the bowl.

1 ripe olives, sliced, drained
2 medium tomatoes, seeded & chopped

1 cup orzo (rice-shaped pasta)
One 15-to 16-ounce can black beans, drained and rinsed
1 cup frozen or fresh corn kernels, cooked
1/2 medium green or red bell pepper, finely diced
1 cup prepared salsa, any interesting flavor (try chipotle or cilantro-garlic)
1/4 to 1/2 chopped fresh cilantro
2 to 3 scallions, green parts only, thinly sliced
2 tablespoons extra virgin olive oil
1 teaspoon ground cumin
2 tablespoons lemon or lime juice, or more to taste
Salt and freshly ground pepper to taste

Steps:

  • Cook the orzo in plenty of rapidly simmering water until al dente. Drain and rinse until cool, then drain well again.
  • Meanwhile, combine the remaining ingredients in a serving bowl. Add the cooked orzo and toss together. Check the seasoning and serve.

Dressing:
3 tbsp fresh lime juice
1 1/2 tbsp white wine vinegar
2 large garlic cloves, minced and mished to a paste with 1/2 tsp salt
1 - 2 fresh jalapeno chilis, seeded, chopped, OR tabasco sauce to taste
1 1/2 tsp ground cumin, or to taste
2/3 c olive oil
Salad:
1/2 lb (about 1 1/4 c) orzo
half a whole poached turkey, skin and bone discarded and the meat cut into bite size pieces (about 4 c)
1 red bell pepper, chopped fine
1 yellow bell pepper, chopped fine
1 red onion, quartered lengthwise and sliced thin crosswise (about 1 1/2 c)
2 15 oz cans black beans, rinsed, drained
1/3 c finely chopped fresh coriander
shredded romaine for lining the platter
2 avocados (preferably California)

Steps:

  • Make the Dressing: In a blender or small food processor blend together the lime juice, vinegar, garlic paste, jalapenos, cumin, and salt and pepper to taste until the mixture is smooth. With the motor running add the oil in a stream and blend the dressing until it is emulsified. In a large saucepan of boiling salted water, cook the orzo until it is al dente. Drain it in a colander and rinse it under cold water. Let the orzo cool and in a large bowl toss it together with the next 6 ingredients and the dressing. Arrange the romaine on a large platter, spoon the turkey salad over it and scatter the avocadoes, diced, on top.
