3 oz. BAKER'S Bittersweet Chocolate
1 Tbsp. oil
1 can (15.5 oz.) black beans, rinsed
3 eggs, divided
1/2 cup maple syrup
1 tsp. baking powder
1 tsp. vanilla
1/3 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 350°F.
  • Melt bittersweet chocolate in small microwaveable bowl as directed on package. Stir in oil.
  • Process beans and 1 egg in food processor until smooth. Add syrup, baking powder, vanilla, melted chocolate mixture and remaining eggs; process until well blended.
  • Spoon into 12 paper-lined muffin cups; sprinkle with chocolate chips.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove muffins from pan to wire rack; cool completely.

4 tablespoons pasteurized liquid egg-whites
1 (15 ounce) can black beans
3 tablespoons canola oil
3 tablespoons Dutch-processed cocoa powder
3/4 cup Splenda sugar substitute
1/3 cup semi-sweet chocolate chips
1 teaspoon vanilla extract
1/2 teaspoon cinnamon

Steps:

  • Puree all ingredients in a food processor. Divide into 8 muffin cups (about 2/3 full). Sprinkle chocolate chips on top of muffins. Bake for 15 minutes at 350 degrees or until a toothpick comes out clean. Do not overbake.
