1 & 3/4 (210g) cups all-purpose flour
3/4 (150g) cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (122g) plain or vanilla yogurt
1/4 cup (56g) unsalted butter, melted and slightly cooled
2 large eggs, lightly beaten
1/2 teaspoon vanilla (You can omit if using vanilla yogurt.)
2 tablespoons (10g) cocoa powder
1/3 cup (40g) all-purpose flour
1/4 (50g) cup packed light brown sugar
1 tablespoon (5g) unsweetened cocoa powder
1/8 teaspoon ground cinnamon
pinch of salt
2 tablespoons (28g) unsalted butter, cold and cut into small cubes

Steps:

  • Combine the flour, brown sugar, cocoa powder, cinnamon and salt.
  • Add the butter, and mix with a fork, a pastry blender, or your fingers until the mixture forms crumbs. Set aside. (Refrigerate if you have a warm kitchen.)
  • Preheat oven to 375°F. Grease or line a standard 12-cup muffin pan.
  • Combine the flour, sugar, baking powder, baking soda, and salt. Make a well in the center of the mixture.
  • In a separate bowl, combine the yogurt, butter, eggs, and vanilla (if using). Add to the well in the flour mixture, and mix just until combined.
  • Transfer half of the batter to a separate bowl. Add the cocoa powder to one half of the batter, and mix until combined.
  • Alternate dropping the two doughs by teaspoonfuls into the prepared muffin cups. (Each will be about 2/3 full when you're done.) Top with crumb topping.
  • Bake the muffins 18 to 20 minutes, or until a pick inserted into the center comes out clean. Cool in the pan 10 minutes before transferring the muffins to a wire rack to cool completely.

1 ½ cups white chocolate chips
½ cup white sugar

⅓ cup vegetable oil
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tray with paper liners.
  • Mix flour, white chocolate chips, sugar, baking powder, and salt together in a large bowl.
  • Mix milk, oil, egg, and vanilla extract together in a medium-sized bowl. Add to flour mixture and mix well.

1 egg
⅓ cup white sugar
⅛ teaspoon salt
1 cup miniature semisweet chocolate chips
1 ½ cups all-purpose flour
1 cup white sugar
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup water
⅓ cup vegetable oil
1 tablespoon cider vinegar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper cups or lightly spray with non-stick cooking spray.
  • In a medium bowl, beat the cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt until light and fluffy. Stir in the chocolate chips and set aside.

2 cups flour
1/2 cup granulated sugar
1/4 cup cocoa, sifted if lumpy
2 teaspoons baking powder
1/2 teaspoon baking soda

1 large egg
1 cup milk
1/2 cup margarine, melted

Steps:

  • Beat cream cheese and first amount of sugar in small bowl until smooth. Set aside.
  • Measure next 6 ingredients into large bowl. Stir. Make a well in centre.
  • Combine remaining 3 ingredients in separate small bowl. Add to well. Stir until just moistened. Fill 12 greased muffin cups 1/2 full.
  • Make small dent in batter with back of spoon. Spoon about 2 1/2 teaspoons (12 mL) cream cheese mixture into each dent. Spoon remaining batter over top. I found this recipe in Joyofbaking.com. This is the first time trying my hand on muffins as I'm a novice baker. It turned out very good - soft, moist and chocolatey. So, I think I should share this delicious muffin's recipe with all. * I didn't follow the exact amount of sugar for the muffins as I do not want it to be too sweet. So, I reduced it to 160g. ** You can add in some chopped nuts into the muffins too if you like it. *** I blended my white sugar into powdery form so that it will mix well with all the ingredients.

1/3 cup granulated white sugar, blended or 1/3 cup castor sugar
1 large egg

  • In a large bowl sift together the flour, sugar, cocoa powder, baking soda, and salt.
  • In a separate bowl mix the water, oil, vinegar, and vanilla extract.
  • Make a well in the center of the dry ingredients and STIR (with a whisk) in the wet ingredients until nice and smooth.
  • Evenly divide the batter among the 12 muffin cups.
  • Then spoon a few tablespoons of the cream cheese filling into the center of each cupcake.
  • Bake in the preheated oven for about 25 minutes, or until the cream cheese filling is a little brown and the cupcakes feel springy to the touch (a toothpick inserted into the chocolate part of the cupcake will come out clean).
  • Remove from oven and place on a wire rack to cool.
  • The cupcakes can be stored in the refrigerator for about 3 - 4 days.
