3 cups zucchini
1 small onion
1 cup biscuit mix
4 large eggs
1/2 cup vegetable oil
1/2 cup parmesan cheese
1 teaspoon parsley flakes
1/4 teaspoon salt (optional)
1/8 teaspoon pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Slice thin and dice the zucchini and the onion.
  • Mix together the zucchini, onion, biscuit mix, eggs, oil, cheese, parsley, salt and pepper until zucchini is evenly coated.
  • Pour mixture into a buttered pie plate or casserole dish and bake for 30 minutes.
  • Serve warm and enjoy!

1/2 cup canola oil
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/4 teaspoon salt

1 small onion, chopped

Steps:

  • In a large bowl, whisk the first seven ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish pie plate. Bake at 350° for 25-35 minutes or until lightly browned.

1/2 teaspoon salt

Steps:

  • Heat oven to 400°F. Lightly grease bottom and side of pie plate, 9x1 1/4 inches.

1 cup buttermilk baking mix
½ cup vegetable oil

½ teaspoon dried marjoram
1 teaspoon chopped parsley, or to taste
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x6-inch pan or a 12-inch pie plate.
