Steps:
- Mix pudding and Bisquick.
- Add oil and beaten egg.
- Shape in balls and place on ungreased cookie sheet.
- Push thumb into centre and add a dab of sugar-free jam OR criss cross with a fork.
- Bake 350 5-8 minutes.
PUDDING SPARKLE COOKIES
Ever wonder what to do with that one box of instant pudding that's been sitting in your pantry for months? Try this easy and yummy recipe! The picture shows vanilla with clear sugar sparkles. I have used chocolate flavor as well, but the one I've had the most compliments on is pistachio. You can get really creative with using different colors of sugar, too!

- In mixing bowl, add pudding mix, bisquick, vegetable oil, and egg. Mix well.
- Chill dough in fridge for 5-10 minutes.
- Spoon out dough and roll into balls. Roll each ball in sparkling sugar. Place on cookie sheet.
- Bake at 350 for 8 - 10 minutes.

- 1. Combine pudding mix dry and Bisquick. Cut in butter until mixture resembles coarse meal. Stir in egg and milk. Blend well. Drop from teaspoon onto greased baking sheets. Bake at 375^ for 10-12 minutes or until lightly brown. --- Note: Pineapple nut prepare cookies as above using vanilla instant pudding, reducing milk to 1 Tablespoon; add 1/2 c. drained crushed pineapple and 1/2 cup chopped nuts. --- Chocolate peanut cookies Use chocolate instant pudding and add 1/2 cup chopped peanuts. --- Chipper cookies- Use vanilla instant pudding and 1/2 cup chocolate chips. --- Butterscotch peanut- Use butterscotch instant pudding, 1/4 cup peanuts and 1/4 c. butterscotch chips. --- You might want to try some with peanut butter- and coconut. mmmm
BISQUICK CHOCOLATE CHIP COOKIES
I found these on the Betty Crocker web site and changed it a little after reading the reviews on that site. Came out awesome!

- Heat oven to 375°F.
- In large bowl, mix butter, both sugars, vanilla and egg.
- Stir in Bisquick mix, chocolate chips and nuts.
- Onto ungreased cookie sheet, drop dough by rounded teaspoonfuls about 2 inches apart; flatten slightly.
- Bake 8-10 minutes or until golden brown. Remove from cookie sheet to cooling rack.
