BISQUICK LEMON SQUARES

This is a bisquick recipe. The squares are sweet and tangy, chewy with a delicate little crunch. Lemon glaze is one of my favourites!

Number Of Ingredients 11

1 cup Bisquick
2 tablespoons powdered sugar
2 tablespoons firm butter or 2 tablespoons margarine
3/4 cup sugar
1/3 cup flaked coconut (optional)
1 tablespoon Bisquick (additional)
2 eggs, lightly beaten
2 tablespoons lemon juice
2 teaspoons lemon rind, grated (optional)
1/2 cup powdered sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven 350 degrees fahrenheith.
  • Mix the 1 cup Bisquick and 2 tablespoons powdered sugar, cut in the margarine.
  • Press in an ungreased 8-inch square pan, and bake for 10 minutes until light brown.
  • Mix together the 3/4 cup sugar, coconut, 1 tablespoon bisquick, eggs, 2 tablespoons lemon juice, lemon rind.
  • Pour mixture over slightly cooled baked bisquick layer.
  • Return to oven and bake another 25 minutes until set.
  • Loosen edges from pan while warm. Cool completely.
  • In a small mixing bowl, beat together 1/2 cup powdered sugar and 1 tablespoon lemon juice until smooth.
  • Spread over baked mixture and allow to harden.
  • Cut into 1 1/2 inch squares.

A buttery, crumbly Bisquick® Gluten Free mix shortbread base is topped with a luscious, tangy-sweet lemon filling in this light and refreshing dessert bar.

1 cup Bisquick™ Gluten Free mix
1/2 cup butter, softened
1/4 cup powdered sugar
1 cup granulated sugar
2 teaspoons grated lemon peel
3 tablespoons fresh lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
2 tablespoons butter, melted
Powdered sugar

Steps:

  • Heat oven to 350°F. In medium bowl, mix Bisquick mix, 1/2 cup butter and 1/4 cup powdered sugar until blended. (Mixture will be crumbly.) Press in bottom of ungreased 8-inch square pan. Bake 20 minutes or until lightly browned.
  • In medium bowl, mix granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs with electric mixer on medium speed 3 minutes or until light and fluffy. Beat in melted butter. Pour over hot crust.
  • Bake 25 to 26 minutes or until no indentation remains when touched lightly in center. Cool completely in pan on cooling rack, about 1 hour. Refrigerate 2 hours or until well chilled. Sprinkle with powdered sugar. Cut into 4 rows by 4 rows. Store covered in refrigerator.

BISQUICK PUDDING COOKIES

Convenient food cookies. Instant pudding and Bisquick what could be easier? I've used butterscotch and chocolate pudding mixes with good results. When I do that I usually add 1 cup butterscotch chips or semi-sweet morsels.

1 (3 1/2 ounce) package instant vanilla pudding, i have also used butterscotch and chocolate with good results
1 cup Bisquick
1/4 cup vegetable oil
1 large egg
1 cup semisweet chocolate morsel (optional)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl mix Bisquick and pudding mix.
  • Stir in vegetable oil and egg with a wooden spoon until dough forms a ball.
  • Shape dough into 1/2-inch balls.
  • Place onto ungreased cookie sheets.
  • Flatten with bottom of a drinking glass.
  • Sprinkle with sugar, can use colored sugar for the holidays.
  • Bake for 5-8 minutes.

BISQUICK LEMON COOKIES WITH ALMOND ICING



Bisquick Lemon Cookies with Almond Icing image

I like cooking with bisquick! It makes things easier. Now there is gluten free bisquick that I can use. This is easy and good.

4 cup(s) bisquick
1 cup(s) sugar
6 medium eggs, beaten (save a little to brush on cookies before baking)
- juice from 2 lemons
2 cup(s) confectioners sugar
2 teaspoon(s) butter, softened
- a few drops of almond extract (other)
- a few drops of hot milk

Steps:

  • Cookies: Mix first 4 ingredients. Roll out to 1/4 inch thickness and cut with a biscuit cutter (or your favorite cutter). Bake 400-425 for 8 minutes. When cool, ice with almond icing. Makes approximately 30 to 34 servings
  • Icing: Mix last 4 ingredients, beat thoroughly and spread lightly on cookies. If you don't want to ice cookies be sure to smear on beaten eggs to make it look shiney. Sprinkle with sugar. If you don't like almond extract use vanilla, pepperment etc - your choice.
