Created this one today. Wanted a spicy, yet still tender, meatloaf. Since I don't eat beef, bison was used instead. Very tender and flavorful.

1 ½ pounds ground bison
1 cup milk
½ cup Italian seasoned bread crumbs
½ cup chopped green chile peppers
½ cup bacon bits
1 large egg, beaten
1 ½ teaspoons liquid smoke flavoring
1 teaspoon onion powder
½ teaspoon dry mustard
¼ teaspoon garlic powder
¼ teaspoon ground sage
¾ cup barbeque sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine ground bison, milk, bread crumbs, green chile peppers, bacon bits, egg, liquid smoke, onion powder, dry mustard, garlic powder, and ground sage in a bowl. Mix by hand.
  • Transfer mixture to a 9x5-inch loaf pan. Spread barbeque sauce over the top.
  • Bake in the preheated oven until bison is no longer pink, about 1 hour 45 minutes.

Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

1 ½ pounds hamburger
1 (14.5 ounce) can diced tomatoes
1 (6 ounce) can diced green chiles
¾ cup chopped onion
½ cup milk, or as needed
2 eggs
15 crushed crackers
½ teaspoon salt, or more to taste
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
  • Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Let cool in the pan for 10 minutes before transferring to a serving dish.

Whenever possible, I buy grass fed Bison instead of ground beef. The flavor is much sweeter and because of the higher protein content, smaller portions are more satisfying. No antibiotics, no pesticides in the feed, no preservatives and no growth hormones. Even better, less fat, cholesterol and calories PLUS more iron, protein and B-12 than ground beef! A richer flavor and completely HEALTHY! I hope you enjoy this yummy recipe as much as we do.

2 lbs ground buffalo meat (Bison)
3 garlic cloves (pressed or finely minced)
2 eggs, beaten
1/4 medium sweet onion, finely minced
1/2 teaspoon pepper
1/2 cup seasoned bread crumbs
1/2 cup parmesan cheese, grated
1/2 teaspoon salt
2 teaspoons Worcestershire sauce
1/4 teaspoon ground thyme
1 teaspoon oregano
1 teaspoon basil
1 teaspoon sage

Steps:

  • Preheat oven to 350°F
  • Mix all ingredients together in a large bowl. Using your hands works best.
  • Spray a shallow, oval casserole dish or small roasting pan with Pam.
  • Pat meat mixture into dish/pan.
  • Lightly spray top of loaf with Pam.
  • Bake for 1-1/4 to 1-1/2 hours.
  • Can be served as is or with Italian-style sauce.
