1 pound ground beef
1 small onion, chopped
1/2 teaspoon garlic salt
2 tubes (7-1/2 ounces each) refrigerated biscuits
1 can (15 ounces) pizza sauce
1/4 cup grated Parmesan cheese, divided
1 can (4 ounces) mushroom stems and pieces, drained
1 cup shredded mozzarella cheese

Steps:

  • In a skillet, cook beef, onion and garlic salt over medium heat until meat is no longer pink; drain. Separate biscuits. Place 3 in. apart on greased baking sheets; flatten into 3-in. circles. Spread each with pizza sauce. Sprinkle with half of the Parmesan cheese. Top with meat mixture and mushrooms. Sprinkle with mozzarella and remaining Parmesan cheese. Bake at 400° for 10-12 minutes or until cheese is melted.

3 red green, or yellow bell peppers, cut into thin strips
1 onion, sliced thin
1 1/2 tablespoons unsalted butter
1 cup finely diced cooked ham (about 1/2 pound)
For the biscuit dough
2 cups all-purpose flour
2 teaspoons double-acting baking powder
1 teaspoon salt
1 stick (1/2 cup) cold unsalted butter, cut into bits
1/2 cup plus 2 tablespoons milk
2 cups grated Münster or Monterey Jack (about 6 ounces)
6 large eggs
watercress sprigs for garnish

Steps:

  • In a large skillet cook the bell peppers and the onion in the butter over moderate heat, stirring, until the vegetables are softened, stir in the ham, and remove the skillet from the heat. The bell pepper mixture may be made 1 day in advance and kept covered and chilled.
  • Make the biscuit dough:
  • In a bowl whisk together the flour, the baking powder, and the salt, add the butter, and blend the mixture until it resembles coarse meal. Add the milk and stir the mixture until it just forms a dough. Gather the dough into a ball, on a lightly floured surface knead it gently 6 times, and cut it into 6 equal pieces. Roll each piece of dough into a 7-inch round, for a 1/2-inch-high rim on each round by turning in the edge of the dough and pinching it until the shell measures 5 inches, and transfer the shells to a buttered large baking sheet.
  • Divide the Münster among the shells and top it with the bell pepper mixture, making a well in the center. Crack and drop an egg carefully into the well of each shell. Bake the pizzas in the middle of a preheated 425°F. oven for 12 to 15 minutes, or until the egg yolks are just set, and garnish them with the watercress.

1/2 lb ground beef
1 (16 1/3 ounce) can Pillsbury Grands refrigerated buttermilk biscuits
1 egg yolk
1/4 teaspoon water
1 (14 ounce) jar pizza sauce
1/8 teaspoon Worcestershire sauce
1/8 teaspoon hot pepper sauce
salt
pepper
1 cup pizza cheese

Steps:

  • Heat oven to 375. Spray large cookie sheet with nonstick cooking spray or use a pizza stone.
  • Brown ground beef; drain.
  • Place biscuits 2 1/2 inches apart on baking surface. Flatten each biscuit to 3 1/2 inches round with 1/4 inch rim around outside edge.
  • In a small bowl, combine egg yolk and water; beat well. Brush tops and sides of biscuits. Sprinkle each with sesame seeds.
  • Add all remaining ingredients, except pizza cheese blend, to ground beef; cook about 1 minute, stirring constantly.
  • Spoon about 1/4 cup ground beef mixture onto each biscuit round. Sprinkle each with cheese.
  • Bake at 375 for 12 to 17 minutes or until biscuits are golden and cheese is bubbly.

Rather than making pizza dough from scratch, patting out biscuit dough for mini pizzas is a quick, fun shortcut that older kids, like our eleven-year-old niece Lauren, will enjoy joining in on. And the kids can top their own pizzas, too, if they like, piling on the cheese and pepperoni or, if you've got a strange kid who likes them like Bobby always did, with sliced olives.

One 12-ounce can refrigerated buttermilk biscuits
1/2 cup prepared tomato sauce
1/2 teaspoon dried oregano
2 cups shredded mozzarella (8 ounces)
4 ounces thinly sliced pepperoni rounds (optional)
1/4 cup grated Parmesan cheese (1 ounce)

Steps:

  • Preheat the oven to 400°F. Lightly grease a baking sheet.
  • Place the biscuits on the prepared baking sheet and use the palm of your hand to flatten the dough to 1/4 inch in thickness. Divide the sauce evenly among the biscuits, top with a pinch of the oregano, then layer the mozzarella, pepperoni (if using), and Parmesan cheese.
  • Bake until the biscuits are golden and the cheese is melted, about 15 minutes. Allow the pizzas to cool slightly and serve warm.
  • Buy the pepperoni presliced in packages (found in your supermarket's deli section) to make assembly even easier.

1 tube (16.3 ounces) large refrigerated flaky biscuits
3 tablespoons pizza sauce
16 slices pepperoni
1/4 cup pineapple tidbits, drained
1/4 cup sliced ripe olives, drained
1/2 cup shredded pizza cheese blend
1 large egg yolk, beaten
Assorted food coloring

Steps:

  • On a lightly floured surface, roll each biscuit into a 4-in. circle. Transfer four biscuits to an ungreased baking sheet; spread pizza sauce to 1/2 in. of edges. Top each with pepperoni, pineapple, olives and cheese., With Halloween cookie cutters, lightly press a different design into each of the remaining biscuits. Place over filling; pinch seams to seal. , Divide egg yolk among three custard cups; tint each portion with a different color. Brush over Halloween shapes.
