My friend Naomi gave me this recipe some years a go. I love it and think it is the prettiest color for a Thanksgiving or Christmas dinner table. I've never added the pecans because my father will not eat nuts but I think they would be very good in it.( Cooking time includes refrigeration time)

1 (12 ounce) can cola
1 (16 ounce) can pitted bing cherries
1 (20 ounce) can crushed pineapple
1 (3 ounce) box black cherry gelatin
1 cup chopped pecans (optional)

Steps:

  • Drain pineapple, drain cherries and save the cherry juice.
  • In a saucepan combine the cherry juice with the cola. Heat until boiling, then stir in the gelatin. Mix until gelatin is dissolved.
  • Remove from heat and stir in the drained pineapple, drained cherries and pecans if you are using them.
  • Spray gelatin mold with cooking spray and pour in the gelatin mixture.
  • Refrigerate at least 24 hours before unmolding.

1 (15 ounce) can pitted dark sweet cherries in juice
1 (3 ounce) package cherry gelatin
1 cup boiling water
2 tablespoons lemon juice
1/4 cup walnuts

Steps:

  • Drain the can of cherries and reserve the juice. Dissolve gelatin in the boiling water. Combine reserved cherry juice, lemon juice and enough cold water to equal one cup and add to gelatin. Refrigerate until slightly set. Add cherries and walnuts and pour into a 4 cup mold. Chill until firm.

This delightful salad is another from my younger years. It is slightly different from the others posted. It can be served as a salad or as a light dessert.

1 (16 ounce) can pitted bing cherries, drained with juice reserved
1 cup Coke
1 (3 ounce) package cream cheese
1 (3 ounce) package cherry gelatin
2 tablespoons lemon juice
1 cup pecan pieces, toasted

Steps:

  • Bring cherry juice to boiling point and add to gelatin powder in mixing bowl.
  • Stir until dissolved and add Coke and lemon juice.
  • Chill until partially set.
  • Cut cheese into small dice or roll into small balls, and fold along with toasted nuts and cherries into chilled gelatin.
  • Pour into mold or serving dish and chill until firm.
  • NOTE: Cooking time refers to chilling time.

CHERRY-WALNUT GELATIN MOLD

1 pound pitted bing cherries (frozen or canned), thawed if frozen
1 1/4 cups walnut halves
1 6-ounce package cherry Jell-O
1 cup sherry
1/2 cup orange juice
Cooking spray

Steps:

  • Drain the cherries and pat dry. Break the walnuts into pieces, then stuff each cherry with a nut.
  • Combine the Jell-O and 2 cups boiling water in a bowl and stir until dissolved. Stir in the sherry and orange juice.
  • Lightly spray a 6-cup gelatin mold or glass bowl with cooking spray. Pour in the gelatin mixture and scatter the stuffed cherries and remaining walnuts evenly in the mold. Cover and refrigerate until set, about 8 hours or overnight.
  • Before serving, place the mold in a bowl of hot water to loosen the gelatin, about 5 minutes. Gently invert over a platter to release.

1 (16.5 ounce) can pitted Bing cherries, drained, juice reserved
1 (15 ounce) can crushed pineapple, drained with juice reserved
1 (6 ounce) package cherry Jell-O®
1 (3 ounce) package cream cheese
6 fluid ounces cola-flavored carbonated beverage
1 cup chopped pecans

Steps:

  • In a sauce pan, combine reserved cherry juice and pineapple juice to equal 1 cup. Bring to boil, add gelatin and whisk together. Remove from heat and add cream cheese and blend together until smooth.
  • Add cola and beat until mixture becomes fluffy. Fold in cherries, pineapple, and nuts. Pour into molded container, chill 6 to 8 hours or until firm.

1 (6 ounce) package cherry-flavored gelatin (such as JELL-O®)
2 cups hot water
1 (8 ounce) can crushed pineapple, juice drained and reserved
3 bananas, sliced
1 ½ cups cold water
1 cup miniature marshmallows, or as needed
¾ cup white sugar
2 tablespoons all-purpose flour
1 egg
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.
  • Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes. Mix cream cheese into sauce, transfer to a large bowl, and cool to room temperature. Stir whipped topping into cream cheese mixture. Spread over gelatin. Chill thoroughly before serving.

This is a salad my great grandma use to make and is one of my favorites to eat during the holiday season. Most people make this creamy by melting the cream cheese or dissolving it in the juice. We actually add small chunks of the cheese after the mix has cooled. So you have a clear gelatin with little white chunks in it. So good!

1 (20 ounce) can crushed pineapple with juice
1 (15 ounce) can pitted Bing cherries in water
1 (3 ounce) package cream cheese, cut into pieces
1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage, or as needed.
1 (3 ounce) package cherry Jell-O®

Steps:

  • Drain the pineapple juice and cherry water into a 2-cup measuring cup. Pour enough color to make 2 cups; discard the remaining soda. Pour the cola mixture into a saucepan.
  • Bring the cola mixture to a boil over medium-high heat. Remove from heat, then stir in the pineapple, cherries, cream cheese, and cherry gelatin until gelatin dissolves, about 5 minutes. Pour mixture into a mold or glass baking dish. Refrigerate until set, about 3 hours.
