Bill Granger's Lemongrass and Lime Chicken Burgers W/ Spicy Slaw image

I really enjoy the recipes of Australian chef Bill Granger. He always comes up with dishes that somehow sound indulgent and healthy at the same time. This sounds like the kind of fusion food I have always thought I would experience if I ever got to go to Sydney. Cooking time includes chilling time for the burgers.

21 ounces ground chicken
1 onion, finely grated
3 ounces fresh white breadcrumbs
1 garlic clove, crushed
1 stalk lemongrass, white part only, finely chopped
2 tablespoons fresh cilantro, chopped
2 teaspoons lime zest, finely grated
1 tablespoon fish sauce
2 teaspoons caster sugar
light-flavoured oil, such as canola, for brushing
2 tablespoons caster sugar
2 tablespoons mirin or 2 tablespoons white vinegar
2 large carrots, cut into thin matchsticks
2 cups white cabbage, shredded
2 cups red cabbage, shredded
4 celery ribs, trimmed, cut into thin matchsticks
1 large red onion, thinly sliced
1 cup fresh mint leaves
1 cup cilantro leaf
1 tablespoon mirin or 1 tablespoon white vinegar
1 tablespoon caster sugar
1 1/2 tablespoons lime juice
2 tablespoons fish sauce
2 long red chilies, deseeded and finely chopped
1/2 teaspoon salt

Steps:

  • Put the ground chicken, onion, breadcrumbs, garlic, lemon grass, coriander, lime zest, fish sauce and sugar in a large bowl and mix together well with your hands.
  • Shape into six patties, then cover and refrigerate for 30 minutes.
  • For the slaw: mix together the sugar and rice vinegar, then add the carrot and leave to marinate for 20 minutes.
  • For the dressing: mix together all the ingredients, stirring until the sugar has dissolved.
  • Heat a barbecue or grill pan and brush with a little oil. Cook the patties for 4 minutes each side or until cooked through.
  • While the patties are cooking, put the white and red cabbage in a large mixing bowl.
  • Drain the carrot and add to the cabbage with the celery, onion, mint and coriander.
  • Add the dressing to the salad and toss together.
  • Serve the patties on soft rolls with lettuce, mint and coriander leaves and chilli sauce together with a helping of slaw.

These burgers are easy, different, and deee-licious. Ground round is mixed with tuna, onion and sweet relish to form a burger that is sure to delight your senses. These can also be fried in a non-stick skillet without any oil.

1 ½ pounds ground round
1 (5 ounce) can tuna, drained
1 large sweet onion, finely chopped
3 tablespoons sweet pickle relish
seasoning salt and pepper to taste
6 hamburger buns, split

Steps:

  • Preheat an outdoor grill for medium-high heat. When grill is hot, lightly oil the grate.
  • In a large bowl, mix together the ground beef, tuna, onion, and relish. Season with seasoning salt and pepper to your liking. Form the meat mixture into 6 patties.
  • Place patties on the hot grill, and cook for 6 to 9 minutes on each side, or until cooked through. Serve on buns with the usual toppings.

Three pounds of Ground Beef
1 tablespoon of Soy Sauce
1 tablespoon of Beefer Upper Sauce
1 pound of Apple Wood Chips

Steps:

  • To three pounds of ground beef, add a tablespoon of soy sauce, and a tablespoon of Beefer-Upper sauce. Form into hamburger patties, cook over indirect heat in a smoker fueled with Apple Wood chips. Indirect heat preserves the moisture in the meat and prevents flareups. Apple Wood is the ideal smoking agent for hamburgers. Cooking time is about 15 minutes.

Number Of Ingredients 6

1 1/2 pound(s) ground beef
1 cup(s) merlot wine
2-3 clove(s) garlic, minced
4 slice(s) smoked gouda cheese
a few pinch(es) salt and pepper to taste
2 slice(s) green onions, sliced thin

Steps:

  • In pan bring wine to a boil and reduce to about 1/2 cup. cool.
  • Mix the hamburger with the green onon, garlic, salt, pepper, and merlot wine. form into 8 thin patties, top 4 patties with the gouda slices and place other patty on top seal ends well. BBQ on grill med. heat until desired doneness, about 10 minutes or so.
  • Pass the fixings and enjoy :)
