This is a grilling recipe, and one that easily transfers to the campfire when camping. You can make it up ahead of time, put it into a cooler of ice and skip the mess at the campsite. A great dish from Marlboro.

1 lb smoked sausage, cut into chunks
3 jalapeno peppers, sliced
1 green bell pepper, de-seeded and cut into chunks
1 sweet onion, peeled and cut into chunks
1/4 cup Tabasco sauce
10 ounces sweet and sour sauce

Steps:

  • Make an aluminum foil bag. Use 2 12" x 18" sheets of heavy-duty foil (or double regular foil) and, (after the ingredients are in the bottom half), crimp the top half on.
  • Put the sausage, green pepper and onions in the bottom half of the foil bag.
  • Mix the Tabasco up with the sweet and sour sauce and pour it over the sausage mix. Seal the foil bag with the top half. Make sure it is "leak-proof".
  • Place on the grill (gas or charcoal) and cook for a total of 45 minutes, turning after each 15 minutes.
  • You can slit the bag open when done and serve from it at the campsite.
  • If you are cooking this in the hot coals of a campfire, reduce the total cooking time by about 15 minutes and turn every 5 minutes.

These are AWESOME foil packets absolutely packed FULL of addicting sweet and spicey goodness. The pic is of one "big ol mess" .. but I like to make individual ones..they are more fun! You'll have everyone huddling near the grill just waiting for their chance to pull one off!

1 lb smoke sausage or polish keilbassa
3 jalapeno peppers
1 green bell pepper
1 sweet onion
1/4 c tobasco sauce
10 oz bottled sweet & sour sauce
heavy foil

Steps:

  • 1. Slice jalapenos and chunk sausage and other vegies into bite sized pieces.
  • 2. Divide ingredients evenly into foil packets
  • 3. Combine tobasco and sweet & sour sauces. Then add to foil packets with sausage and vegies.
  • 4. Seal tightly. Place on grill. Cook 45 min. turning every 15 min. Be very careful when opening the foil packets..they will be steam filled.

This is a recipe out of a Marlboro cook book my son received in the mail several years ago(thank the lord he has quit smoking now). It is sweet and spicy and one of our favorites when we have cook outs.

1 lb smoke sausage, cut into chunks
3 jalapenos, sliced
1 bell pepper, cut into bite size chunks
1 onion, cut into bite size chunks
1/4 c tabasco sauce
10 oz jar sweet and sour sauce

Steps:

  • 1. Mix all ingredients together. Tear a piece of foil 12"x18" and place the ingredients on the foil cover with a second sheet of foil and fold and crimp the edges tightly together so the ingredients cannot fall out. Place on grill and cook 45 minutes turning every 15 minutes. We serve this on soft tortillas. I have also baked it in the oven. If you don't want it real spicy cut down on the jalapenos.

1 grren bell pepper, cut into chunks
1 sweet onion, cut into chunks
1/4 c tabasco sauce
1-10 oz sweet and sour sauce
skewers, optional
crusted bread, such as, italian, baguette, or pita bread, optional

Steps:

  • 1. Place sausage, peppers, and onion in heavy aluminum foil. You can also place items onto skewers randomly.
  • 2. Mix hot sauce and sweet and sour sauce in a small bowl and pour over the mixture or over skewers. seal edges of alum. foil.
  • 3. Place onto grill for 45 min, turning every 15 min. Or bake at 350 for 30-45 min.
  • 4. Eat by itself, on skewer, or on a good crusted bread.

One 10 oz jar of sweet and sour sauce

  • 1. Place sausage, peppers, and onion in foil bag. Mix Tabasco sauce with sweet-and-sour sauce in a small bowl and pour over the mixtue in foil bag; seal edge tightly. Place foil bag on grill; cook for about 45 minutes, turning every 5 minutes. Slit open and serve right out of the bag.
  • 2. My husband and I have never followed this recipe exactly. We have always cooked it in a Nesco roaster. Instead of just sausage we also add boneless, skinless chicken breasts cut into chunks, as well as a tender cut of beef cut into chunks. We also use red and yellow bell peppers. The sauce we just mix with the Tabaso and sweet-and-sour until we get the taste we like. First we brown the meat in the roaster and then add the rest of the ingredients and cook it on low until the meats are cooked through and tender. As far as the jalapenos, leaving the seeds in or out is your choice, depending upon the level of heat you want.
