This recipe for mustard slaw -- the Memphis version of this classic side dish -- is served at Big Bob Gibson Bar-B-Q in Decatur, Alabama. Like most slaws, this one tastes even better the next day. Choose a cabbage with crisp, firmly packed leaves; the head should be heavy for its size.

2 medium heads green cabbage (about 4 pounds each), cored and shredded
1 large white onion, shredded
1 green bell pepper, seeded, deveined, and shredded
1 large carrot, peeled and shredded
1 large rib celery, shredded
3/4 cup apple-cider vinegar
3/4 cup prepared yellow mustard
1/2 cup ketchup
1/2 cup sour cream
1/4 cup mayonnaise
1 tablespoon coarse salt
1/2 teaspoon cayenne pepper
1 1/4 cups sugar, or to taste

Steps:

  • In a large bowl, place cabbage, onion, bell pepper, carrot, and celery. Mix to combine.
  • In a small saucepan, combine vinegar, mustard, ketchup, sour cream, mayonnaise, salt, and cayenne pepper. Bring to a boil, whisking frequently. Pour over cabbage mixture. Add sugar, and stir to combine. Cover with plastic wrap, and chill.

2 slabs ribs
3/4 cup your favorite dry rub (recommended: Big Bob Gibson Seasoning and Dry Rub)
1 cup apple juice
1 cup grape juice
3/4 cup your favorite BBQ sauce (recommended: Big Bob Gibson Championship Red Sauce)
1/4 cup honey

Steps:

  • Preheat a grill or the oven to 250 degrees F.
  • Pull membrane off of the back of the ribs. Sprinkle 1/4 cup of rub over each slab, front and back. Place ribs, meat side up, on the grill or in the oven for 2 hours. Remove and place each slab on a doubled aluminum foil square, meat side down. Combine the marinade ingredients. Pour 1 cup of marinade over each slab while wrapping tightly in foil. Cook for 1 more hour at 250 degrees F. Remove slabs from foil and sprinkle with remaining 1/4 cup of rub. Cook an additional 1 hour, uncovered, until ribs are tender.
  • Mix together the BBQ sauce and honey. Remove ribs from the oven and paint with finishing glaze, and cook for another 15 minutes. Cut and serve.

CRISP SPICY SOUTHERN MUSTARD COLESLAW

When it comes to side dishes, Big Bob felt keeping it simple was the way to go. Consequently you won't find a long list of accompaniments to choose from on our menu, just potato salad, slaw, baked beans, and potato chips. His original vinegar-based coleslaw (see page 176), made from only four ingredients, was the only slaw that was ever used in the restaurant. In 2003, Martha Stewart wanted to feature some of our favorite Southern-style sides on her television show and requested both baked bean and slaw recipes. We happily sent her recipes for half the side dishes on our menu. The next day we learned the show preferred we give them a "customary" mustard-based slaw typical of the Memphis Barbecue Region. I'd never heard of such a slaw, but who can argue with Martha Stewart? Thus was Crisp Spicy Southern Mustard Coleslaw born. The recipe has since been served to raves at the James Beard Foundation in New York City and at the South Beach Wine and Food Festival.

8 cups shredded green cabbage
1 3/4 cups shredded white onion
1 cup shredded green bell pepper
1/3 cup shredded carrot
1/4 cup shredded celery
2/3 cup sugar
6 tablespoon apple cider vinegar

1/4 cup ketchup
1/4 cup sour cream
2 tablespoons mayonnaise
1/2 tablespoon salt

  • Shred cabbage finely in food processor.

1 medium green bell pepper, seeded, deveined, and cut into 1/4-inch dice
