Steps:
- Saute onion in oil until tender.
- Add beef and garlic and cook until beef is no longer pink.
- Drain.
- Add chili powder, cumin & other seasonings.
- Stir in tomato sauce and simmer 5 minutes.
- Add refried beans and cook and stir until well blended.
- Set aside to cool completely.
- Divide meat mixture into 12 portions.
- Soften tortillas, according to package instructions, and place a portion of meat on each.
- Roll up, burrito style.
- Bake at 375 degrees for 15-20 minutes.
- These may be frozen as follows.
- Place seam side down on a cookie sheet and freeze until frozen.
- Wrap each individually and return to freezer.

- Preheat oven to 400°. In a large skillet, cook beef over medium heat 8-10 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco sauce, Worcestershire sauce, onion powder, paprika, garlic powder, 1/4 teaspoon salt and pepper. Add lemon juice and, if desired, olives., In an electric skillet, heat 1 in. of oil to 375°. Working in batches, fry potatoes 3-4 minutes or until golden brown, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Sprinkle with remaining salt., Stir potatoes into meat mixture. Place 2/3 cup mixture in the center of each tortilla; top with 1/2 cup cheese. Fold bottom and sides of tortilla over filling and roll up., Wrap each burrito in foil; place on a baking sheet. Bake 15-18 minutes or until heated through. Freeze option: Cool filling before making burritos. After wrapping burritos in foil, freeze in a freezer container. To use, partially thaw overnight in refrigerator. Reheat foil-wrapped burritos on a baking sheet in a preheated 350° oven 25-30 minutes or until heated through. Or, to reheat 1 burrito, remove foil and rewrap burrito in paper towel; place on a microwave-safe plate. Microwave on high for 3-4 minutes or until heated through, turning once. Let stand 20 seconds.

THE BIG BURRITO
Expecting a hungry crowd? Do I have a recipe for you! It takes little prep time, cooks on its own, serves a large group and tastes great! This comes from a Texan friend, Audra, and is a popular fund raiser in her little town. This can be made in the oven but I like to double or triple the recipe and cook it in my 18 QT electric cooker. Plan ahead because it takes 12 - 16 hours of cooking time to cook this wonderful burrito filling!

- Preheat the oven to 250°F.
- Based on input from a friend here at Recipezaar (thanks Gingernut), I am recommending that you put your beans in a large kettle, cover them with water and bring them to a boil. Remove them from the heat and drain and rinse the beans and put them in a roasting pan with the meat. (The original recipe does not par-boil the beans but it is recommended for health/safety reasons. If you do not par-boil your beans you should be prepared to cook the meat/bean mixture for 16-18 hours).
- In a mixing bowl combine the picante sauce, cream of mushroom soup, onion, salt, pepper and water or beef broth ( I use beef broth for extra flavor).
- Pour the mixture over the beans and meat.
- Cover and cook slowly (250F) for 12-16 hours, stirring occasionally.
- Just before serving, break meat into pieces with a large spoon and stir to combine meat, beans and pan juices.
- Serve with flour tortillas and a variety of condiments including cheese, onions, jalapenos, olives, sour cream, lettuce, tomatoes and salsa.
- Can be frozen for OAMC.

EASY BEEFY BURRITOS
These are so easy and very tasty. They're great to make ahead and bake when ready. Works great if you are taking a meal to someone (new mom's), they just have to pop it in the oven.

Steps:
- Brown ground beef with onion and drain.
- Add chili powder and mix well.
- Spoon 1/4-1/2 cup beef mix and 1/4 cup cheese in center of a tortilla.
- Roll up and arrange in a greased 9X13 pan.
- In a bowl, combine soup, salsa, milk, green chiles and mix well.
- Pour mix over burritos.
- Top with remaining cheese.
- Bake at 350 degrees for 40 minutes.

BEEF & BEAN BURRITOS
Years ago I lived in Baton Rouge, La and frequented a restaurant called La Fonda's. They had a unique burrito that I loved. I have tried to recreate it with this recipe and it is very close. A difference is, I think, that they deep fried the tortilla shell where mine is baked.

Steps:
- Brown beef (and chorizo if desired)in olive oil. Add the onions, garlic, cumin, white pepper, red pepper flakes, black pepper, and salt. Add chipotle powder if used. When the beef (and chorizo if used)has browned, add thee taco seasoning and water and stir in well. Now add the refried beans and chili beans and mix in well. Do not drain the chili beans. (Additional water may be used if the mixture is too dry). Simmer for 10 minutes to allow the beans to heat and the flavors to blend.
- Soften tortillas with steam, hot oil, or warm water. Coat 8 large ramekins or a muffin pan with large cups with cooking spray (Pam). Shape the tortillas into cups in the ramekins or muffin pan. If water was used to soften tortillas, lightly coat them with oil.
- Place the shaped tortillas in an oven pre-heated to 400 deg. F. Bake for 7 to 10 minutes until tortillas are browned.
- Remove shaped tortillas from oven and fill with the hot beef/bean mixture. Top each with shredded cheese. Return to oven for 3 to 5 minutes to melt the cheese. Cool for about 3 minutes then remove them from the ramekins or muffin pan. Place them on serving dishes and enjoy.
- This dish has a moderate zing so the faint of heart may not enjoy it.
- Makes 8 hearty servings.
- May be served with Pico de Gallo or a lettuce & tomato salad or Spanish rice.
- Also, these could be topped with a zesty red or green salsa if desired.
