Number Of Ingredients 12

1 3/4 cups (250 grams or 8.8 ounces) all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup (135 grams or 4.7 ounces) granulated sugar
2 large eggs
3/4 cup yogurt
6 tablespoons (85 grams) butter, melted
zest and juice of one lemon ((mine yielded about 1 tablespoon zest and 1/4 cup juice))
1/2 teaspoon vanilla extract ((optional))
1 cup powdered sugar
2-3 tablespoons lemon juice

Steps:

  • Preheat oven to 220C/425F degrees. Butter 12 muffin cups or line them with liner papers.
  • In a large bowl sift together flour, baking powder, baking soda and salt and mix in the sugar and lemon zest.
  • In a medium bowl, whisk the eggs with the yogurt, melted butter, lemon juice and vanilla extract just until combined. Pour the wet ingredients into the dry ingredients and stir with a wooden spoon or a rubber spatula just until combined. Do not over mix. The batter should be thick and lumpy. Divide the batter evenly between the muffin cups (almost all the way to the top). Bake for 3 minutes and then reduce the oven temperature to 180C/350F and continue to bake for an additional 12-17 minutes until a toothpick inserted into the center of the muffin comes out clean. Cool for 10 minutes and then move to a wire rack to cool completely.
  • In a small bowl sift the powdered sugar. Add lemon juice until you achieve desired consistency (pourable consistency).
  • When the muffins are cooled, pour the drizzle over the muffins.
  • Muffins are best the same day they are made, but can be stored in an airtight container in the fridge for up to 3 days, or they can be frozen for up to 2 months.

100g unsalted butter , softened
100g caster sugar
2 eggs , beaten
115g self-raising flour
¼ tsp baking powder
2 lemons , zested and juiced
100g yogurt
150g icing sugar
1 lemon , juiced

Steps:

  • Line a muffin tin with large muffin cases. Heat the oven to 180C/160C fan/gas 4. Tip all the ingredients in a large bowl and mix until smooth using a wooden spoon or an electric whisk. Spoon tablespoons of the batter into the muffin cases until they're three-quarters full (you can make up to 8, depending on the case size). Bake for 30 mins or until a skewer comes out clean. Leave on a cooling rack to cool completely.
  • Meanwhile, make the icing. Sieve the icing sugar into a bowl and gradually add lemon juice until you have a thick but pourable icing - you may not need all of the juice. Drizzle over the cooled muffins and serve.

3/4 cup vegetable oil
2-1/2 cups sugar
4 eggs
9 cups dry breakfast cereal
5 cups flour
2 teaspoon s salt
5 teaspoon s baking soda
4 cups buttermilk (or equivalent substitute, see cook's note)

Steps:

  • Mix oil, sugar, eggs and cereal. In a separate bowl, mix the flour, salt and baking soda. Alternate adding these to the cereal mixture with the buttermilk. Mix to incorporate well.
  • Pour batter into greased muffin tins (or line with cupcake papers) until about 2/3 full. If batter seems too thin, let it rest for a few minutes and it will thicken.
  • Bake at 400°F for 20 to 25 minutes.

1 1/2 teaspoons cream of tartar
1 tablespoon baking powder
1/4 teaspoon sea salt
1/4 teaspoon nutmeg ground
1 1/2 cups whole wheat flour
1/2 cup wheat germ
10 1/2 ounces soft silken tofu, drained
1/4 cup lemon juice
2 tablespoons egg replacer
1/2 cup water
1/2 cup applesauce
1 cup brown sugar
1/2 cup light corn syrup
1/2 cup non-alcoholic sparkling white grape juice (frozen thawed)
1 teaspoon vanilla extract
1 teaspoon lemon peel grated
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 400 F. Oil and lightly flour muffin pans. Sift all-purpose flour, cream of tartar, baking powder, salt and nutmeg into a large bowl. Stir in whole wheat flour and wheat germ. Set aside. Place tofu and 2 tablespoons lemon juice in a food processor and blend until smooth. Set aside. In a small bowl, whisk egg replacer with water until foamy. In a medium-size bowl, mix applesauce, brown sugar, corn syrup and juice concentrate. Stir in egg replacer, vanilla, lemon peel and remaining 2 tablespoons lemon juice. Add applesauce mixture to dry ingredients alternately with tofu mixture, stirring after each addition. Fill muffin cups 2/3 full with batter and lighty dust surface of each with cinnamon. Bake until muffins are light brown and toothpick inserted into center of muffin comes out clean, about 18 minutes. Turn out to cool on a wire rack. Serve warm or wrap and store at room temperature when cool.
