Summer Sweet Grape Salad image

This is a great salad or dessert, especially for a summer BBQ. I chill a large glass bowl and line with curly red and green lettuce then add the beautiful grapes. Sprinkle with a little brown sugar and pecan pieces. I am always asked for the recipe or asked to bring it to the next party. Give it a try - Great when grapes are on sale and easy to make.

2 lbs grapes, I use 1/2 green and 1/2 red
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package sour cream
1/2 cup white sugar
1 teaspoon vanilla
2 tablespoons brown sugar
2 tablespoons pecans

Steps:

  • Mix first 5 ingredients.
  • Sprinkle with brown sugar and pecan pieces.
  • Refrigerate overnight.
  • Toss and serve very cold.

1 cup sour cream
1/3 cup sugar
2 teaspoons vanilla extract
2 pounds seedless red grapes
2 pounds seedless green grapes
3 tablespoons brown sugar

  • In a large bowl, beat the cream cheese, sour cream, sugar and vanilla until blended. Add grapes and toss to coat. , Transfer to a serving bowl. Cover and refrigerate until serving. Sprinkle with brown sugar and pecans just before serving.

Betty's Salad is a regional, Midwest salad created by Betty Timko and featured as a menu item at her restaurant, Timko's Soup and Such, in Toledo, Ohio. The restaurant was located in a brick building at the Northwest corner of Sylvania and Douglas Roads of the Devaux Village strip mall in West Toledo. After Betty died, the restaurant closed, and her signature salad dressing is still produced and distributed at regional grocery stores.

1 (12 ounce) package spinach
6 hard-boiled eggs, sliced
1 (6 ounce) can bean sprouts, drained
1 (6 ounce) can water chestnuts, drained and sliced (a second can is optional, depending on the recipe you follow )
1 lb fried bacon, crumbled
1 cup salad oil
3/4 cup sugar
1/4 teaspoon salt or 1/4 teaspoon salt, to taste
1/3 cup catsup
1/4 cup white vinegar
1 tablespoon Worcestershire sauce
1 small-to-medium onion

Dress up salad greens with earthy roasted beets, tangy oranges, creamy goat cheese and a homemade vinaigrette.

1 1/2 lb small beets (1 1/2 to 2 inches in diameter)
1 tablespoon olive or vegetable oil
4 cups bite-size pieces mixed salad greens
1 medium orange, peeled, sliced
1/2 cup walnut halves, toasted, coarsely chopped
1/4 cup crumbled chèvre (goat) cheese (1 oz)
1/2 cup Fresh Herb Vinaigrette Dressing

Steps:

  • Heat oven to 425°F. Remove greens from beets, leaving about 1/2 inch of stem. Wash beets well; leave whole with root ends attached. Place beets in ungreased 13x9-înch pan; drizzle with oil. Bake uncovered about 40 minutes or until tender.
  • Remove skins from beets under running water. Let beets cool until easy to handle, about 30 minutes. Peel beets and cut off root ends; cut beets into slices. Cut each slice in half.
  • On 4 salad plates, arrange salad greens. Top with beets, orange slices, walnuts and cheese. Serve with dressing.

2 lb (1 kilo) seedles green grapes
2 lb (1 kilo) red "crimson" grapes
1 cup sour cream
8 ounces (250g) cream cheese, softened
3 tablespoons brown sugar
1 teaspoon vanilla
1 cup toasted pecans - chopped ***optional

Steps:

  • 1. Well wash and dry your grapes, set them aside to dry.
  • 2. In a large bowl, beat the sour cream, creamed cheese, sugar and vanilla until thin and ribbony.
  • 3. Cut each grape in half (I like length ways). This will take some time. I luse a serrated knife.
  • 4. Add the grapes to the creamy dressing and carefully stir through.
  • 5. Cover and pop in the fridge for at least a few hours or over night.
  • 6. Just before serving, add the optional pecans if using.
