DINER MEATLOAF
Dig into meatloaf like you find in your local diner, homemade and partnered with mashed potatoes and gravy.

Steps:
- Heat the oven to 350°F. In a large bowl, break up the beef into small pieces, using a fork or spoon.
- Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
- Tear the bread into small pieces and add to beef mixture.
- Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
- Place the beef mixture in an ungreased baking pan. Shape the mixture into an 8x4-inch loaf in the pan, then spread the ketchup over the top.
- Bake uncovered 50 to 60 minutes until meat and juices are no longer pink or until a meat thermometer inserted in the center of the loaf reads 160°F and center of loaf is no longer pink*. Let the loaf stand 5 minutes so it will be easier to remove from the pan. Remove loaf from pan and cut into slices.

Steps:
- Heat oven to 350°F.
- Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.
- Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 180°F.
- Let stand 5 minutes; remove from pan.

- Heat oven to 350°F. Into food processor or blender, tear toasted bread into pieces. Cover; process with on-and-off pulses until bread is crumbly and evenly chopped.
- In large bowl, mix bread crumbs and remaining ingredients except ketchup and bell pepper slices. Spread mixture in ungreased 8x4- or 9x5-inch loaf pan. Spread ketchup over top.
- Baked 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 165°F.
- Let meatloaf stand 5 minutes; drain. Remove from pan. Top with bell pepper slices. To serve, cut meatloaf into 6 slices.

MOM'S FAVORITE: BETTY CROCKER'S CLASSIC FLUFFY MEATLOAF
My mom has been using this recipe since she was married in the 50's and it's as good now as then. She still makes it for me when I visit. :) It's wonderful when first served, but is even better chilled... cold meatloaf sandwiches, mmm! A versatile recipe, you can easily alter it to your own tastes. Experiment and enjoy! :)

Steps:
- Mix ingredients thoroughly.
- Pack into greased 9x5x3" loaf pan.
- Bake in 350 degree oven for 1 1/2 hours.
- Serve hot or let cool and chill and serve cold.
- Other suggestions: add 3 cloves minced garlic; spread bacon slices over the top before cooking and/or 3 Tbsp catsup or barbecue sauce; substitute 1 Tbsp horseradish and 1 Tbsp for the mustard and sage; substitute 1 cup sauerkraut for 1 cup breadcrumbs and add 1/2 tsp dill weed to taste; try it with other herbs/spices or combinations added such as curry powder, cayenne and cumin, or oregano and basil.
