I've never been a fan of instant mashed potatoes and didn't think I'd ever taste any that are better than homemade---until I made these! Save yourself the time and try them!

2 cups chicken broth
3 tablespoons butter
3/4 cup heavy whipping cream
2 cups instant potato flakes

Steps:

  • In saucepan, combine chicken broth and butter.
  • Heat to a boil; remove from heat.
  • Add heavy whipping cream and then gently stir in potato flakes. That's it!

Few dishes are as soul-satisfying and luxurious as a buttery-rich potato puree or mashed potatoes. I love mashed potatoes, but I know that they're not particularly good for me. Cauliflower puree makes a truly superb substitute.

Nonstick cooking spray
2 1/2 cups roughly chopped cauliflower
Salt and freshly ground black pepper
1/2 cup Greek yogurt

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with foil and spray it with cooking spray.
  • Spread the cauliflower out on the prepared baking sheet. Season with salt and pepper to taste. Top the cauliflower with another sheet of foil, and roll up the edges to form a sealed package.
  • Roast the cauliflower for about 20 minutes. Remove the top foil, being careful of the steam, and continue roasting the cauliflower until it is tender, another 15 to 20 minutes.
  • In the bowl of a food processor, combine the cauliflower with the yogurt. Puree until the mixture is smooth. Season with salt and pepper to taste, serve.

A High protein substitue for mashed potatoes, and tastes just like them....but better!!

2 c peeled and diced jerusalem artichokes
1 c dried pinto beans
1 c almound milk
1 c water
4 Tbsp earth balance
3/4 Tbsp adobo
5 chives, finely chopped
salt and pepper to taste

Steps:

  • 1. Boil the Jerusalem artichokes and beans for 20 mins. Drain both. Place in food processor.
  • 2. Add all ingredients except chives. Blend till puree is formed. Add more water and almound milk for thinner mash. Mix in diced chives by hand. Place in serving bowl. Bon Appetit!

Cheese and chives add a rich flavor to this fluffy and delicious mashed cauliflower dish - a perfect side that's ready in 30 minutes.

1 medium head cauliflower (2 lb), broken into 1-inch florets
2 cloves garlic, finely chopped
3 tablespoons grated Parmesan cheese
2 tablespoons reduced-fat sour cream
1 tablespoon sugar
1 tablespoon butter or margarine, softened
1 teaspoon chicken bouillon granules
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons chopped fresh chives

Steps:

  • In 4-quart Dutch oven, heat 1 inch water to boiling. Add cauliflower and garlic; return to boiling. Reduce heat; cover and simmer 10 to 15 minutes or until cauliflower is very soft and tender. Drain well; return to Dutch oven.
  • Stir remaining ingredients into cauliflower. Place cauliflower mixture in food processor. Cover; process until smooth. Garnish with additional chopped fresh chives if desired.
