Traditional zucchini bread using some healthy alternatives but still moist and delicious. If loaves get too dark when cooking, cover the loaf pans with aluminum foil.

3 cups all-purpose flour
½ cup ground flax seed
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup white sugar
½ cup vegetable oil
½ cup applesauce
½ cup brown sugar
3 eggs
1 tablespoon vanilla extract
3 cups grated zucchini, or more to taste
½ cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 8x4-inch loaf pans.
  • Whisk flour, flax, cinnamon, baking soda, baking powder, and salt together in a large bowl. Beat white sugar, vegetable oil, applesauce, brown sugar, eggs, and vanilla extract together in another bowl. Stir flour mixture into egg mixture until batter is well-mixed. Fold zucchini and chocolate chips into batter; pour batter into prepared loaf pans.
  • Bake in the preheated oven until a knife inserted into the center of a loaf comes out clean, about 60 minutes. Cool in the pans for 10 minutes before removing loaves from pans.

3 cups all-purpose flour
2 cups sugar
3 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
3 large eggs
1 cup canola oil
3 teaspoons vanilla extract
2 cups shredded zucchini
1-1/2 cups semisweet chocolate chips
1 can (8 ounces) unsweetened crushed pineapple, drained

Steps:

  • In a large bowl, combine the flour, sugar, cinnamon, baking soda, salt and baking powder. In a small bowl, whisk the eggs, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the remaining ingredients., Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
pinch of nutmeg
1 egg
1/2 cup canola oil
1/2 cup light brown sugar (packed)
1/2 cup granulated sugar
1/2 cup plain greek yogurt or sour cream
1 teaspoon vanilla extract
1 cup zucchini (shredded)
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 5 loaf pan with non stick cooking spray and set aside. In a large bowl mix together the flour, baking soda, baking powder, salt, cinnamon and nutmeg.
  • In a separate bowl, whisk together the egg, oil, both sugars, greek yogurt and vanilla extract until combined.
  • Add the wet ingredients to the dry ingredients and fold gently. Do not over mix.
  • Fold in the zucchini and chocolate chips.
  • Pour the batter into the prepared pan and bake for 40-50 minutes or until a toothpick comes out clean.
  • Remove from the oven and let cool in the pan for 20 minutes. Take the loaf out of the pan and allow it to cool completely on a wire rack. Slice bread and serve!

1 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 cups shredded peeled zucchini

Steps:

  • In a large bowl, beat the sugar, eggs, applesauce, oil and vanilla until well blended. Combine the flours, cocoa, salt, baking soda, cinnamon and baking powder; gradually beat into sugar mixture until blended. Stir in zucchini. Transfer to two 8x4-in. loaf pans coated with cooking spray., Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean.
