If you don't want to turn the oven on, put a lid on your pan and turn the heat to low after adding the cheese. It will cook through but will not brown on top. Enjoy!

1 cup vegetables, sauteed, such as onions, spinach, zucchini, broccoli (great way to use leftovers) or 1 cup tomatoes, chopped or sliced
1 egg
2 -3 egg whites
salt and pepper
1 tablespoon parmesan cheese or 1 tablespoon feta, crumbled, grated

Steps:

  • Preheat the oven to 350 degrees. Spray a smaill nonstick pan with an ovenproof handle with cooking spray. Over medium heat, saute the vegetables.
  • In a small bowl, whisk together the egg and egg whites with a little salt and pepper. Pour the egg mixture into the pan and move it around with a spatula until slightly solidified. Transfer the pan to the oven.
  • Bake until the frittata is almost firm to the touch (approximately 15-20 minutes). Sprinkle with the cheese and bake until firm. Serve immediately.

2 tablespoons olive oil (I used butter)
1/2 onion, sliced
salt, to taste
pepper, to taste
4 -6 cups broccoli, cauliflower, spinach, etc (any chopped or sliced or raw or barely cooked vegetable)
1 teaspoon mint leaves or 1 teaspoon any other herbs
2 -3 eggs
1/2 cup freshley grated paresman cheese

Steps:

  • Put olive oil in a skillet and turn heat to medium. When fat is hot, add onion and cook. Sprinkle with salt and pepper and cook 3 to 5 minutes.
  • Add vegetables, raise heat and cook, stirring occasionally until they soften, from a couple minutes for greens to 15 minutes for sliced potatoes. Adjust heat so vegetables brown a little without scorching. If vegetables are precooked just add to onions and stir before proceeding.
  • When vegetables are nearly done, turn heat to low and add herb. Cook, stirring occasionally, until vegetables are tender.
  • Meanwhile, beat eggs with some salt and pepper, along with cheese if using.
  • Pour over vegetables distributing them evenly. Cook, undisturbed, until eggs are barely set, 10 minutes or so.
  • Run pan under broiler for a minute or 2 if top does not set. Cut frittata into wedges and serve hot, warm, or at room temperature.

This is a very simple, easy recipe my mom used to make for us frequently. There were never any leftovers.

1 egg
1 cup milk
1 cup flour
1 cup shredded cheese
1 cup frozen mixed vegetables or 1 cup drained canned vegetables
oil, to cover bottom of pan

Steps:

  • Pour enough oil into 9" x 9" (to double recipe use a 9" x 13") pan to cover the bottom with a thin layer.
  • Preheat oven to 375°F with oiled pan inside the oven.
  • Mix the egg and milk together, then add the flour, cheese, and vegetables in order. Vegetables last.
  • Mix well.
  • Once the oil in the pan is hot, pour the batter in, and bake at 375°F for 35-40 minutes.
  • It may need some more time depending on your oven, check for a crispy golden brown color across the top.
  • Enjoy.

This is from the Kraft Food & Family catalog. I doubled the recipe and baked it in a 9x13 dish. I have also substituted spinach for the basil, excellent both ways.

4 egg whites
2 tablespoons water
1/2 cup chopped seeded tomatoes
1 cup shredded reduced-fat mozzarella cheese, divided
2 slices bacon, crisply cooked and crumbled
1/4 cup chopped fresh basil

Steps:

  • Preheat oven to 350.
  • Beat eggs, egg whites and water in a medium bowl with a wire whisk until well blended.
  • Stir in tomatoes, 1/2 cup of the cheese, the bacon and basil.
  • Pour into greased 9-inch pie plate.
