My mother gave me this recipe. It makes a great lunch or dinner. Full of flavor and simple to make. I haven't had anything better even in a restaurant. I usually make a double batch and freeze leftovers or share it with my neighbors.

1 1/2 lbs boneless skinless chicken breasts, cooked and shredded
3 (14 ounce) cans chicken broth
3 (16 ounce) cans great northern beans, with liquid
2 cups chopped white onions
2 tablespoons minced garlic, in a jars
1 (4 ounce) can chopped green chilies, with liquid
2 teaspoons ground cumin
2 teaspoons oregano leaves
1/4 teaspoon cayenne pepper
hot sauce (to taste)

Steps:

  • In a large pot, saute onions about 5 minutes in olive oil.
  • Add garlic, chilies, broth and beans. Stir.
  • Add chicken, stir in remaining spices and hot sauce.
  • Heat to a boil and simmer 1 hour before serving.
  • Can be made on the stove or in a crockpot.

2 tablespoons olive oil
1 pounds chicken breasts
1 units onion
4 cloves garlic
1 units red pepper
1 units green pepper
1 units green chili pepper
2 tablespoons chili powder
2 tablespoons cumin
2 tablespoons salt
2 tablespoons pepper
14 ounces tomatoes
30 ounces white beans
2 cups yellow corn
14 ounces chicken broth
3 cups tortilla chips
3 cups mexican cheese

Steps:

  • Heat olive oil in a large pot over medium heat. Sauté the chicken until mostly cooked. Cook onions and garlic until soft. Add chopped red, green, and chili peppers. Sprinkle with half measurements of the above-mentioned seasonings.
  • Gently stir in the diced tomatoes, white beans, and frozen corn until well mixed. Sprinkle with remaining seasoning. Cover and cook on medium heat for five minutes. Pour in the chicken broth. Cover and simmer for 15 minutes, stirring every few minutes.
  • After 15 minutes, stir in the crushed tortilla chips, cover and let simmer for 10 minutes. Lastly, fold in the shredded Mexican cheese. Have a taste, and add as much spice as desired.
  • Serve with tortilla chips and sour cream.
