1/4 cup butter, cubed
1 ounce unsweetened chocolate, chopped
1/2 cup sugar
1 large egg, lightly beaten
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1/4 cup all-purpose flour
1/2 cup miniature marshmallows
1/3 cup miniature semisweet chocolate chips
1/3 cup chopped pecans

Steps:

  • In a small heavy saucepan, melt butter and chocolate; stir until smooth. Remove from the heat; stir in sugar. Stir in the egg, vanilla and salt until well blended. Stir in flour just until blended. Fold in the marshmallows, chips and pecans., Spread into a greased 8x4-in. loaf pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1 cup butter, cut up
8 ounces unsweetened chocolate, chopped
5 large eggs
3 cups sugar
2 teaspoons instant espresso powder
1 tablespoon vanilla extract
1-2/3 cups all-purpose flour
1/2 teaspoon salt
1 cup chopped walnuts
1/2 cup semisweet chocolate chips
TOPPING:
2 cups miniature marshmallows
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth. Cool slightly. In a large bowl, beat the eggs, sugar and espresso powder until thickened, about 5 minutes. Stir in vanilla and chocolate mixture. Combine flour and salt; gradually add to chocolate mixture. Fold in walnuts and chocolate chips., Transfer to a greased 13x9-in. baking pan . Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs (do not overbake)., For topping, in a large bowl, combine the marshmallows, walnuts and chocolate chips. Sprinkle over top. Bake 4-6 minutes longer or until marshmallows are lightly browned. Cool on a wire rack. Cut into bars.
